Age for Palos

Just curious,
How strict is DCL on the minimum age for Palos?
My son is 17 and wants to study the culinary arts after High School so I think it would be great if he can have a chance to see and eat at Palos.

Age 18 and up for entry to Palo, the Spa (except for teen special), adult pool areas, adult nightclub entry. Drinking age is 21 and up on board.
