I have an AP, Magic Band, and an RFID AP card. Since I have the MB I am able to prebook my FP+ up to 60 days out. Can I still use my RFID card to scan into the FP line at attractions? Since we don't stay on-site and can't use t for charging to the room, wearing the bands don't provide much value to us and we'd prefer to just use our RFID card for everything. Will I still be able to use my pre-booked FP+ if I do this?

If you're asking if you can use your RFID enabled AP to access your FP+ and park entry, the answer is yes, you should be able to. I'd bring your band just in case though.

Yes, that's what I'm asking. My 4yo son doesn't like wearing the band, so he always takes it off and asks me to hold it. A card is a lot less bulky to hold in my pocket than a band. Plus we have to take the cards anyway for the parking/discounts! The reason I'm questioning this is because once when going through an FP+ line a CM asked me "do you have the fast pass on your card or your band?" and I always thought they were interchangeable! She confused me.

same - I thought we had a choice. And since we have to use our park passes for part of our stay, I was going to go with the cards on those days. :confused3

Well often CMs are misinformed. If your AP has been linked to MDE and you already have bands from a prior on site stay, you should be able to use the AP just as a band.
