Here it is folks, direct from the "Pennsylvania Dutch Cookbook"
Chicken Pot Pie
4 to 5 lb. chicken, disjointed
4 or 5 large potatotes, whashed, pared, and cut in thick slices
3 large onions, cut in 1/2 inch slices
Salt
Pepper
Pastry (recipe below)
Water
Place a layer of chicken in the bottom of a large heavy kettle, cover with a layer of potatoes and then with slices of onion; season with a mixture of salt and pepper. Roll pastry out rather thick (about 1/4 in.) and cut into 2 in. squares; place on top of onions. COntinue layers ending with a layer of pastry squares on top. Add water to cover contents halfway; cover kettle tightly and cook over high heat just until boiling. REduce heat to low and cook until chicken is tender, 1/12 to 2 hours. 8 to 10 servings.
Pastry:
3 cups sifted flour
1 teasponn salt
1 cup lard or other shortening
5 tablespoons cold water
Mix with fork and roll out on floured surface and cut into squares.
I have not tried this in a crock pot but will this weekend. Last weekend I wimped out and baked one of those frozen imitation potpies with a pie crust on top. Good, but not pot pie.
It is cold and rainy here and we need some good comfort food.
