The What's For Dinner Thread - May '09(recipe index in OP)

My previous post did miss important things!

I had bad news from Greg last night....Yesterday his Mom was called in for an additional test before her knee replacement this Thursday, after the additional testing they have found a "mass" in her lung. She is back in the hospital today for some invasive testing and we are all praying & hoping for the best.
I had actually called Greg to him about my "incident" that happened in my surgeon's office yesterday morning & tell him that I wouldn't be going to Boston & he just blurted out "my Mom has a mass in her lung". Hopefully we will know something by the end of the day:sad2:

Oh Maria, I'm so sorry. I will be praying for her! You've probably mentioned it, but what is her 1st name?

What incident???!!! :confused: I must have missed that too. What's going on with you? I'm worried now!

The dentist wasn't awful, but unfortunatly she has done all she can do. She barely did anything, once she got a closer look there really was no point. It's most likely arthritus in my jaw, so I'm going to be vigelant about trying glucosomene. I'm certainly not rushing into having the joint replaced, I'm not even brave enough to ask how it's done. But at the end of the day, it's just discomfort and I'm very healthy, as is my daughter, and my husband is still here with us- I really can't complain.

I hope everyone who is not feeling well is better soon.

Oh, dinner is a chicken from BJ's, (that I had to smell for the 1/2 hour ride home, I'm suprised there's any left) a starch, and a veggie.

Oh I spoke to soon about the work your dentist was going to do! I'm so sorry! I would definitely stick with the chondroitin/glucosomine stuff. Have you seen a rheumatologist for this?

The tuna was frozen when I wrapped it in the nori and fried it. As I said earlier, I would have preferred it a little rarer, but when I took it out the first time John said it was not cooked enough. You have to let it sit and rest a bit to finish off the cooking and I did not wait long enough, so when I sliced into it to check the center was still frozen. It got a little overdone when I had to put it back in the oil. I'll just have to make it again to get it right. ;)

The seaweed salad is very good. It is dressed with sesame oil and has a nice nutty flavor.

Merle ~ I have to share a cute story. Last year we were at the Flame Tree BBQ in AK having lunch, when Ethan (my GS) then 3, asked me if we could please go to "Apricot" (Epcot) now. Everyone around us burst out chuckling and ahhhhing. It was so cute.

Ugh, nothing like having a termite crawling on you, while you are sitting in the dark watching tv. :eek:

Many nights after sitting out at the ballpark I'd come home and undress and see them all fly off my body..:scared:

I just stopped in to see what everyone is making for dinner tonight. I'm cooking chicken tortilla soup right now. We will also have beef soft tacos with chips and salsa. I would've rather had taco salad, but DS begged for tacos.

I didn't post my incident yesterday...when I was at the surgeon yesterday I went to leave and I passed out cold, they couldn't get me around as quick as they would have liked so they sent me in the ambulance to the ER. They watched my heart & pressure & gave me oxygen. They think I had a severe reaction to all the medication they shot up my nose after sinus surgery.

My poor Mom, she started her new job yesterday.....they called her as they were putting me in the ambulance (because Greg was on the train to Boston) & she appeared in the ER...stayed with me to drive me home then put a face on, dressed & went back to the ER until 1am this morning!
Her bos was very supportive being she was 3 hours late her first day. Her new boss took out my IV when I was discharged, what a day:sick:

Yeah I hate termite season! I live pretty close to woods & swamp, I'm really just outside of Jean Lafitte Natl park, so I guess that's why I have so much trouble with them.

I would never have thought of doing it frozen! :thumbsup2 It looks stunning to me. Were do you buy seaweed? Oriental market? How does it come?

Kat, I don't know why they get in my house when they are swarming?:confused3 I turned out the lights, so it wouldn't attract them.

We went to a party last year, just down the road at that Cajun place in Crownpoint, at dusk they were everywhere! It was almost frightening, we were knocking them off of each other, drinks, chairs, we stopped eating because you couldn't keep them off of the food! It was gross.

I bet they are bad out at the ballparks! :scared:

I'm glad you mentioned termites Sheryl, I would have forgotten to renew my policy. They sent the bill months in advance I completly forgot. I know when the chickadees are swooping the termites are swarming. I live near a National Park too, but ours provides greenheads instead of termites.
 
I used to take a bus trip with my Sis IL twice a year and we would usually hang in the 1/2 price ticket line to see whatever had the best seats available. We did not care what we saw, we just enjoyed the shows. I never explored anywhere but the theater district because I get lost too easily. Our furthest trek away was to the Met. Picture two chubby women walking miles and miles through artwork...one starving and the other trying to find seats :lmao:

I never go to stay over until Buddy came. He refuses to do this in one day YAY!!!!!!!!!!!!

That's all I have done as well - go to the half price TKTS booth in Time Square and get seats to something that is showing. Have yet to be disappointed!

Good morning ladies. I'll try to check back in after my medication kicks in. I'm having a wonderful time with vertigo this morning. On the up side, it kind of feels like having a serious buzz. On the down side, it makes me nauseous to turn my head or look down unless I do it really slowly. Scrolling through the posts kind of made me queasy too. After my antivert kicks in (and a nap maybe) I'll be back.

Last night I made Lemon Chicken, orzo and roasted butternut squash. Tomorrow night I think I will have Cinco De Mayo food, tacos or fajitas.

I love PF Changs and have never heard of this. Is it very expensive? Does it have to be a large group to order this?

You can tell the waiter how much you each want to spend, what kinds of foods you like, etc. They will usually ask if there are allergies, vegetarians, people who like spice, etc. Now that we've been several times, we request the lettuce wraps and wok seared lamb and the rest we leave up to our waiter. A waiter or two in the past have said it's fun for them to get to showcase some of the lesser known dishes. Since they just charge you for the dishes they bring out, it usually isn't too pricey and you get a good variety. Last night, it was only $13 a piece which I don't think is bad for that much food to share :confused3 I would assume you can do it for as many people as you want as long as you're willing to pay for it :)

I would have never ordered the lamb dish before a waiter brought it out for us one time. Now it's my favorite dish on the menu!

Aimee~ do you know anyone that has a Husky rescue or any suggestions I could give my girlfriend? She has promised her kids a dog & the entire family have their heart set on a husky. Thanks:)

I would have her start with Petfinder... she can see which rescues/shelters in her area have Huskies and likely get some names of Husky rescues nearby. There are over 2000 Huskies on Petfinder right now - there is a Husky rescue near me, actually. Husky rescues, esp, will get puppies if they want a puppy (never again for me!) - if they are open to Husky mix dogs, there will be an endless supply. I'm not sure where you are located or I would track down some specific rescues for you. I'm fairly anti breeder unless it's a hard to find rare breed (which Huskies are not) - I just have a hard time with people producing pets when perfectly good purebreds are being killed BUT there are ways to find reputable breeders if she really is bent on finding one. Let her know that a good breeder will likely not have a puppy right now, they wait to make sure every potential puppy has a home before breeding, and she'll go through an application process. The breeder consider the dog to be her baby and wants to make sure they will be well cared for. I can send you some links on good breeders for reference if it's helpful, too. In the end, a rescue pup is cheaper, it saves a life, it supports a non profit, and if you get an older pup, you will already know their temperment and have a good idea of health issues. HTH!


I finally got home from my conference out of town - had to be out the door by 7am, which if you know me at all you know that is NOT an hour I see often. I am really tired. DH made noises about hitting up Taco Tuesday instead of cooking tonight. I'm game for that...

Afternoon, everyone! Well, the good news is I have my computer back. The bad news is that they weren't able to fix it, yet. Alan has to take it back in tomorrow. So, I most likely won't be on tomorrow. It's taken me a while to catch up. Sounds like I missed a lot in the 24 hours I didn't post!

Those chickens from Sam's Club and BJ's are pretty darn good in a pinch!

I have not tried the Lime Chicken Nachos yet you all talk about...I wish I was coming to yur house for dinner.

Here is the recipe for the chimi's

1 lb. ground beef
1/2 cup finely chopped onions
2 cloves garlic, minced
1 tsp. dried oregano leaves
1 tsp. crushed red pepper
8 Flour Tortillas
6 oz. VELVEETA , cut into 8 slices ( I used sliced cheddar)
2 cups oil
1/4 cup Sour Cream
1/4 cup finely chopped fresh cilantro

BROWN meat in large skillet on medium-high heat; drain. Add onions, garlic, oregano and pepper; mix well. Cook until onions are tender, stirring occasionally; drain. (added taco seasoning)

PLACE 1/4 cup meat mixture onto center of each tortilla; top with VELVEETA. Fold in all sides of tortillas to completely enclose filling; secure with wooden toothpicks. Place in single layer on baking sheet; cover. Refrigerate 20 min.

HEAT oil in large saucepan on medium-high heat. Add tortilla pouches, 2 at a time; cook 5 min. or until golden brown. Drain. Remove toothpicks. Serve topped with sour cream and cilantro.


I put the pouches in a baking dish sprayed with pam and then sprayed again over the top and baked them in a 400 oven till crispy about 10 minutes
