Zucchini recipes help

I make zoodles (zucchini spaghetti). I tried one device but it was unsatisfactory, so I use a mandolin.

Or just dice or cut into discs and sauté with onions and/or tomatoes.

Great for veggie chili and in stir frys too.
 

I used to make stuffed zucchini. (I'm outside right now, but will check later to see if I still have the recipe.)

And I've been meaning to try slicing it lengthwise and grilling it this summer.

I’ve given a bunch away already. So far I’ve made zucchini cakes, zucchini pizzas (had a huge one yesterday so sliced it in rounds), and zucchini lasagna is year round here (have one with celiac, but even my gluten eaters prefer it with zucchini over noodles). I think bread is next.
 
we have a bumper crop of zucchini, yellow squash,tomatoes, jalapeños, and cucumbers.

we have made pickles, pickles, and more pickles.

I have plenty plenty of tomato sauce and frozen tomatoes purée.

we made relish with squash And lots of frozen squash/zucchini.

pickled jalapeños and hot pepper sauce.

zucchini bread, roasted zucchini, zucchini/squash cornbread, and plenty make shift dinners with them.

10 gallons of blueberries-frozen in quart bags and made a few jars of jams.

we have given so much away to neighbors, coworkers and family.

this year has been an awesome harvest Despite the heat and lack of rain.

It's that time of the year for my garden to produce tons. Other than zucchini bread, how do you cook with them?
;) And the time of year when every gardener I know is trying to "gift" me with their surplus. Just exactly why do you all grow so many? It's not even as if it's a really delightful treat or that anybody waits around anxious for them to come into season. :confused3

As for recipes, there are TONS out there, savory and sweet. I usually take what I'm given, bake them up into some confection where the actual goal is to NOT be able to tell zucchini is in there, and give it back to the original gardener in that form. :goodvibes This was a real pleaser last year:

thanks for all the recipes, for the lasagna how thick do you make the slices and do you leave the skin on?
 
Besides the ones mentioned,

We make Zucchini balls - just like meatballs - substitute the meat for shredded zucchini (place in cloth first to absorb any liquid). We also add some shredded mozarella. We bake them (meatballs too).

I also cut them up in chunks. Place in pot with some cut up onions (whatever shape you want). Add cut up bacon (raw). Cover, cook/simmer on low. Keep stirring and add some grated cheese half way through. We don't like the zucchini too soft. Sorry - don't measure or time :guilty:

Grill on bbq - marinate or not
Bread and bake or fry

dh and i still refer to them as 'doorbell dash veggies' b/c it got to the point when we lived in california that neighbors would just leave unsolicited/unannounced bags on your door step:teeth: where we live now it's the case with eggs-people get a 'few' (4 or 5) chickens thinking they will either consume the weekly production of eggs or have friends, family and co-workers beating down their door to buy. NOPE-inevitably the newbies end up with an overabundance and can't give them away...but i digress.

we use them for noodles (i have a little finger spiralizer-works great), my mom used to make a bomb stuffed zucchini, i've put it into pasta sauce (which if you can works well), i've had them home pickled (again canned) but probably the most common way we use them is on the bbq. i cut them into about 1" chunks and kabob them. they grill up nicely.

OMG I used a mandolin, once, and I almost cut the tip of my finger off. Bled forever. Now I just use the spiralizer!!!
