Chicken Fajitas

Yummy! Dinner conversations here always make me hungry. Tonight I’m keeping it simple, but I really enjoy seeing the creative meals people share. It also gives me ideas for trying new things instead of falling into the same routine. Honestly, it feels a little like browsing through royal prestige cookware catalogs, where everything looks like it could make your meals a bit more exciting.

Working on Chile verde for over our tamales
First roasting tomatillos, jalapenos, poblanos, green tomatoes, garlic

Then into the food processor, then combine with browned pork and into crock pot for the afternoon

I'll post the finish tamales later, we made them a couple weeks ago for the freezer

Chili w/ beans. I'm specifying, because of a previous thread here. We actually call what we're having chili. Without beans, we call it chili sauce. The only thing they really have in common is meat.

Tonight we had tortellini with homemade Alfredo sauce with salad and garlic bread.

I also made apple crumb muffins today. The apples look good at the farmers market and I bought a few more than we could eat.

Drove home from NH today so I picked up a rotisserie chicken and served it with summer squash and broccoli.

choices to be had-bbq drumsticks 3 types (sticky honey bbq, buffalo, garlic parmesan) or you can have chicken/vegg tiki masala. I went to defrost a couple dozen drumsticks for dh to bbq and realized I had some produce in the fridge that needed to used sooner vs. later so I pulled out a couple of pounds of chicken breast to defrost as well-thanks to some jarred Indian sauces in the pantry we'll be good to go for several days (both are also good to freeze for future leftovers).

Finished product (I had 2) tamales were poblano and white cheddar

My young granddaughter has decided she wants to start cooking for us. Tonight will be her first time. We bought all the ingredients and will set her free in my kitchen. Not sure I am ready for this, but so long as she doesn't set the house on fire, we're good.

tonight will be shrimp tacos. I pan sear the shrimp using a southwest spicy dry rub, use carb balance wraps, add shredded lettuce, chopped red onion, spicy guac and a chipolte aioli sauce. My son will likely pass on these (good, because I hate sharing them ) and have leftovers (either steak or sheapards pie).
