Zucchini recipes help

I used to make stuffed zucchini. (I'm outside right now, but will check later to see if I still have the recipe.)

And I've been meaning to try slicing it lengthwise and grilling it this summer
I slice it and grill it all the time. I brush it with EVOO and usually Mrs Dash seasoning. Really tasty!
 
if you have a dehydrator you can spiralize it into pasta, dehydrate it and if appropriately stored it supposedly will be fine for at least a year (i've done dehydrated chips but never tried spiralizing-the chips turned out fine).
 
OMG I used a mandolin, once, and I almost cut the tip of my finger off. Bled forever. Now I just use the spiralizer!!!
Yeah, you gotta be very careful with the mandolin. I had a few small cuts over the years but nothing serious.
 
;) And the time of year when every gardener I know is trying to "gift" me with their surplus. Just exactly why do you all grow so many? It's not even as if it's a really delightful treat or that anybody waits around anxious for them to come into season. :confused3

As for recipes, there are TONS out there, savory and sweet. I usually take what I'm given, bake them up into some confection where the actual goal is to NOT be able to tell zucchini is in there, and give it back to the original gardener in that form. :goodvibes This was a real pleaser last year:

Well, one little plant gets gigantic and produces lots of zucchini. I don’t think there are mini varieties.

Size does matter for presentation. If it's too wide it may not look right. About an inch thick is perfect.

The flowers are delicious stuffed with seasoned ricotta and then fried, a very expensive delicacy.

Can make them into boats too, scoop out a little, saute and mix with breadcrumbs & bake with breadcrumbs on top.

I make zoodles (zucchini spaghetti). I tried one device but it was unsatisfactory, so I use a mandolin.

Or just dice or cut into discs and sauté with onions and/or tomatoes.

Great for veggie chili and in stir frys too.

My mandolin slicer has several different blades. I use one that slices into thin julienne strips, like linguine width. It gets about 95% of the zucchini. The rest I cut with a knife.

So you slice length wise, I assume? I will have to give that a try. I love zucchini and wanted to try noodles but not enough to buy yet another kitchen contraption.

:idea: EXCELLENT suggestion because consuming the blossom before it produces a squash also prevents having too many zucchini that you then have to struggle to find a use for.
 
I make double chocolate zucchini muffins, then freeze them. Takes 30 seconds to defrost in the microwave and the kids get some extra veggies.
 
Jealous, our Kroger can’t seem to keep zucchini in stock.

Easy side - slice and bake at 350 degrees for 20-25 min with salt, pepper, EVOO or avocado oil, sprinkled with Parmesan cheese.
 
Zucchini parmesan is one of our favorite meals. You make it the same way you make chicken or eggplant parm, but lately we’ve been baking it instead of frying. Just layer with some olive oil and panko bread crumbs along with sauce, mozzarella and seasonings. So good. We also grill it year round with salt, pepper and garlic powder for a health side dish.

Ah, yes-I remmeber having a garden full of zucchini. With 2 little boys, this is a recipe they liked:

ZUCCHINI PANCAKES
1 large zucchini, grated and squeeze out excess moisture
1 ripe banana, mashed
1 cup flour
1/3 cup light brown sugar
1 egg
1 Tblspn baking powder
1/2 tsp salt
1tsp cinnamon (if you want, add a little nutmeg too, or just substitute pumpkin pie spice for it)

Prepare zucchini in one bowl.
Mix dry ingredients in a second bowl. When mixed, add the banana (already mashed), milk, and egg.

Make on a griddle, like any other pancake; then serve with syrup and butter.
