Zucchini recipes help

Saute with onion and bell peppers in butter. Add corn (fresh cut off the cob or frozen). Continue to saute until starting to carmelize. You can add a little milk as it is cooking. Mix well and top with cheese shreds. Let the cheese melt and serve. You can also use poblano peppers instead of bell or even canned green chili peppers.

It's that time of the year for my garden to produce tons. Other than zucchini bread, how do you cook with them?

I make zucchini fritters! Super easy.
Take 4 c. grated zucchini (or zoodles, if you like); salt and drain. Rinse, and squeeze as dry as you can (I do it in a salad spinner, and then squeeze in cheesecloth). Mix in 1/3 c sliced scallions. Mix in 2/3 c. flour, 2 beaten eggs, a bit of salt and pepper, and some Tsardust seasoning from Penzey's (or whatever seasoning you prefer...I just really like the Tzardust in these). Fry in a little olive until until brown on one side; flip and cook on the other side until brown.
I serve them with sour cream that's been mixed with a little fresh dill.
 
I made zucchini fritters on Saturday night. The only thing different from what @Bianca and Bernard did is that I added shredded mozzarella to the mix. I also used Italian seasoning, garlic powder and onion powder in them.

I often times just saute them in butter with onions and a little adobo seasoning. When I want to do something different, I turn this mix into Zucchini stuffing by adding Italian bread crumbs to it. It makes a nice side dish.

My Mom taught me to make baked zucchini and tomatoes when I was growing up. Slice tomatoes and zucchini and layer them in a baking dish with onions. Add salt and pepper and put shredded mozzarella cheese on top and bake at 350 until the veggies are cooked through. It's delicious!

Same situation....zucchini coming out of our ears. We tried this last night, very good:

Slice a few zucchinis into semi-thin slices and spread out over a baking sheet. (We used aluminum foil and sprayed some Pam)
Then sprinkle with a little salt, pepper and garlic powder
Finally, sprinkle on some shredded parmesan cheese and shredded mild cheddar
Bake for 25 min at 425 degrees

Good stuff.
