I would not try to fly stand by, but if the 200.00 was doable, I would see if I could change the flight to the morning flight. Even if you get there mid-day and chill out and do some pool time and an early bed time, to us it would be worth it to get the kids to bed early, and hit the parks at rope drop the next day. Just calculate your arrival time to the resort room if you do the PM flight and decide if that late is worth 200.00 or not, if that would be a choice. Flights often fill up later with internet specials and people booking later with the hopes of getting a good deal.
Gotta know your kids too. Some would do better with getting up super early and getting there and stayed charged all day..others would be grumpy and tired by 10:00 am. How long is your flight?
 
The only way that I would change plans was if i booked the earlier flight to be sure that I had a seat. $160 is a lot of money, so I would have to figure out how much time I would really gain from the change, and what I would do.

A 3 hour flight would put you in Orlando at 10:30 AM...

What resort are you staying at? Are you renting a car?

With Magical Express, for example, you might not get to your hotel until noon.
 

I am in the minority, and I would do it! If your bags don't make the first flight, they will make the 2nd and if they have DME tags, you are going to get them eventually!
I would watch the flight on line, keep an eye on the number of available seats, try booking 8 people on the flight, and if by the day before there are still at least 8 seats, I'd go for it! The only risk would be ability to sit together if that is a concern!
