I would still use it, but then again, I thaw on the counter all the time!

I always thaw meat at room temp and so has everyone in my family and NONE of us has ever gotten food poisining. I would cook it very well though if i had left it out that long.

eggs that are 3 months out of date also

OT here, but fresh eggs are good up to 4 months as long as you keep them in a cool, dark place (refrigerator matches that description).

thanks everyone for your input! I was on the fence but leaning towards cooking it really well, trying a bit and seeing what happened.

But DH is no go! He says he just isn't going to risk it. If it was back in our struggling grad school days maybe--when we had no money and beef was a luxury--but he says he isn't risking illness for $20 at this point in our lives!

So, anyone have any suggestions on what to have for dinner now

I'll probably be the unpopular vote here, but I think I'd tend to keep it. I know you shouldn't leave things like that out but I wonder how super fast can they possibly spoil?

Bacteria starts growing pretty much as soon as something is removed from heat or cold. It starts becoming enough to make you sick after a couple of hours. If you took the servsafe certification class I took in culinary school, you'd never take that chance again! I've seen what spoiled meat can do to someone.
