Do you know if you would be able to see and hear wishes after the luau? And from where at the poly?

I watched wishes from ohanas. When it starts they turn down the lights and I am pretty sure they pipe the music in.
 
I've never done the luau but I understand that it does let out early enough for guest to see the fireworks. Just walk out onto the beach - grab a hammock and then relax and enjoy the show.
It is VERY romantic!

The time for Wishes to start depends on what the Calendar says. Obviously, it will be after dark. Check the Official Walt Disney World Calendar for parade and fireworks times.

Just off the NW corner of the Hawaii building (nearest the Volcano Pool) , there is a green, mushroom-shaped speaker in the grass. It is very close to the sidewalk that is adjacent to the beach.

Park yourself right next to it. The sound is very soft, so you have to be close - but you can hear the score for Wishes.

Now, I've given away one of my few remaining "secrets."

What do you know, there's a picture of the location right here on the DIS - See Photo on this Page The speaker is just outside of the frame of this photo, at the very bottom right-hand corner. Had there been 1/8 of an inch more photo, you'd see it.
 
The view from the Poly beach is very good. I was surprised. At first when I saw how small the castle looked, I thought I would be disappointed in the fireworks. Although I couldn't hear the music from where we were seated, the fireworks were fantastic! So if you can find a way to hear the music, you should have a wonderful time.
