Rog, if I saw that first pic before I ate pork, I'd have to pass. It's hard to believe something that looks that bad in the first pic, can look and taste so good after it's cooked.
 
Did you know that when you buy a pork butt from the store (to roast)
that it isn't from the piggs butt ,,it's actually a meat from the shoulder area of the pig.

I'm glad to hear that! Does that mean a pork shoulder is really the butt?
 
Todays Pork Butt Lesson :

Despite the name, pork butt does not come from the rear end of the hog--it is cut from the shoulder.

The pork shoulder weighs 12-18 pounds and consists of two portions: the butt, which is the upper portion of the shoulder, and the picnic, which is the lower portion.

The whole pork butt is a rectangular roast weighing 6-10 pounds and containing a portion of the shoulder blade bone. It is sold bone-in or boneless; if boneless, a whole roast may be cut into half portions.

The whole picnic weighs 6-9 pounds. It contains a portion of the foreleg and is usually sold with some skin attached. The picnic is sometimes cut into an upper arm portion (the meatier portion, usually sold skinless) and the lower foreleg portion (containing more bone, skin, and connective tissue).


Pork butt is also know by the following names, or some combination thereof:

Boston shoulder roast
Boston roast
Boston butt
Shoulder butt
Shoulder blade roast

Interesting Frank...Why is it then that I can buy a Pork Shoulder and a Pork Butt in the same meat case? Is this a case of they don't know their head(or shoulder) from their ... Oh nevermind.;)
 
Because if they they called it pigs *** they wouldn't sell as much.:lmao:
But really, the pork butt is not from the rear of a pig, but it is from the front leg. actually the shoulder. When you remove the front legs from a pig, you also take the shoulder muscle with it. What we call the pork butt is that shoulder muscle, which is at the end, or the "butt" of the piece of meat.
It can also be referred to as a blade roast.
