Wild Mushroom Soup Recipe...

We just got back from our Eastern Cruise. I forget what night it was, but I had the best mushroom soup I have ever had before. Does anyone have the recipe? I would love to make it at home...maybe for Thanksgiving!
 
Wild mushroom soup is a Christmas tradition at our house. I will try to get you the recipe of what my mom makes. Not sure if it is the same as DCL but hers is yummy too! :cool1:
 

I have the recipe but I'll have to tear the house apart for it. I'll do my best. There is one problem with it though, it's the ship's recipe. I mean, it said something like, add 10 lbs mushrooms, 2 gallons cream, etc. I never pursued making it because the measurements were so ridiculous, but I promise I'll look for you!

Thanks guys! BuzzBoyMom, I would love to try your family recipe! I think I might be able to figure out the portions on the ships recipe too.... :cool1:

If you have the recipe, I can cut it down for you. Just post the ships recipe and I'll modify it for you and re-post.
 
Now that my mom gave it to me and I see how simple it is, I have to wonder why I never made it before.

Mushroom Soup
1 lb. fresh Mushrooms
1 finely chopped onion
1 clove garlic finely chopped
2 tablespoon Butter
1 teaspoon Flour
Sauerkraut juice, to taste
Sale and pepper to taste

Wash mushrooms and cook in 1 quart of water until tender. Strain (save the water). Coarsely chop mushroooms. Add sauerkraut juice to mushroom water. Salt and pepper and bring to boil. In large saucepan, saute onion and garlic in butter. Add flour and stir until lightly brown. Add 1/4 cup water and bring to a boil and stir. Strain. Add to contents along with mushrooms and simmer for a couple of minutes.
Add 3/4 cup of cooked rice.

No luck yet on finding the official recipe but we leave next Friday for our cruise on the Magic (12/3 departure). :boat: If I don't find it before then, I'll ask while I'm on board next week.

How I envy you sailing away soon. Please if you can get any of the soup recipes would be so grateful. The onion one was so good also and I believe the butternut squash. Oh how I wish I was sailing today.
