If I can get reservations (right now I can), I will be going to Tokyo Disney mid March. I was going to get the VP where I can pick three rides to "fast pass". Now I'm thinking of getting the one with unlimited rides but I have to buy Premeir Passes when I get to the park. If I do the first VP, I would do a 2 night stay for 3 days in the park. The unlimited package is only 2 days in the parking day I wouldn't have a package or I would have to buy 2 packages. What would you do?

I am doing the unlinited package. 2 days of unlimited rides. 1 day at each park. We are planning to book an extra night in a disney hotel the day before. You could do a 3rd day after check in with early entry and Premier access but with the unlimited VP you won't need it. You can just walk up to any ride and skip the line. If you feel like you want more time for shops, parades etc then just buy an extra park ticket for check out day.
The only drawback I see of the Unlimited rides package is cost.

It's not "any ride". Just the rides with priority lines. Disneyland has quite a few attractions without priority lines that get waits over 30 minutes mid-day. Toontown, Jungle Cruise and many in Fantasyland for example.
 
Also going mid-March. It's our first time at Tokyo Disney so we booked two back-to-back of the unlimited VP (Enjoy Attractions Even More). Chose the exact same hotel and room category for both VPs to keep things simple. On the 3rd day (no park included) of the 1st package, it'll be the 1st day of our 2nd package, so we'll just pick up the materials for VP #2 after breakfast (from VP #1) and head back into Tokyo Disneyland.
 
I think that Im going to do the 3 day unlimited package and on day 3, buy a ticket to disney seas ( I think that's the park that Illness more time in).

You are correct. I misspoke. But it appears to cover all the E-ticket attractions and the most popular secondary attractions. It definitely does not cover “any ride”. I do wish it covered characters and shows. But it still seems like an amazing package. I did TDS in 2021 and we go through some rides with Premier Access and rope dropping but this will be way easier.
 
I just booked for early March - 2 nights at MiraCosta, 3 park days with the Fantasy Springs passport, "fast pass" bookings x 3 on each of the park days (2 at Disney Sea, 1 at DL). It was the "enjoy attractions - 3 days" option.
I was honestly on the fence about spending the extra $$ for the VP vs just trying to book hotel/tickets separately, and then hope to be able to see everything but I have been waiting for YEARS to go to TDR so I want to make sure I do it right! If I don't get on every single ride, that's OK - I've got guaranteed access to the "big ones" and I will just wait in line for other stuff (or not).
I went on this afternoon just to see if VP's were even open for early March and they were...and I just went for it!
 
I wish the Even More package had been announced when I booked my November packages. It really doesn’t cost much more than the other packages. They did end up offering it for November, but the hotels and room types I wanted were already sold out so I stuck with what I had originally.

From what I read, this is a busy time so I am going to do the 2 day unlimited and on the third day, I will just get a Disney Seas ticket. I may but a premier pass for one or two rides, but this day will be for the parades and anything that I didn't do the day before. I think I can book the package around Nov 2or 3 and hopefully will not have any problems.

This is our exact strategy. You can use early entry I believe for your third day but you should be mostly done with most eticket attraction and instead focus on walking around and seeing all the little details.
