Which parks, which days?

The family and I are traveling to WDW this Friday and have 2 day park hopper passes. We were thinking of going to AK on Saturday but are worried about crowds since it is an early open day. Are other option is to go to Epcot on Saturday but because of the food and wine festival we are thinking it may be too busy. If we go to Epcot on Monday, which is an early open day, will we have to endure large crowds? Does anyone have any advice on which is a better plan? We are going to Mickey's Halloween party Sunday night so that takes care of visiting MK. I would appreciate any information from recent attendees.

Personally, I would go to Epcot Saturday over EMH day. The weekend F&W Fest crowds are a bit heavier but no overwhelming. If you don't plan on using EMH, I'd avoid a park on their EMH day if at all possible.
