Do you mean the Sheraton Safari? I've never stayed there. But, given the choice, I'd take the Dolphin every time because of the location. You can walk to Epcot and MGM, or take a short boat ride. You have full use of Disney transportation. The Sheraton Safari is pretty close to Disney property, but you have to rely on their shuttle, or provide your own transportation. Believe me, it makes a HUGE difference.
Like Lynne said, if you are referring to the Sheraton Safari hotel... well the Dolphin wins hands down. The biggest thing being the location. The Dolphin is located right on WDW property, in one of the best locations at that. The Safari is located just outside the property... kind of like close, but no cigar... hehehe!
If though you are referring to the difference between the Dolphin and the Swan, they are sister resorts and there is not much difference between the two. The Dolphin is larger, the Dolphin supposedly has double beds (although I never noticed a difference between their beds and my queen bed at home). The Swan has queen beds, and some like it better because it isn't as big as the Dolphin. They are both in a great location.
I am refering to the Sheraton Safari. I was originally booked at the Swan but due to renovations they bumped me to the Dolphin. I have a Starwood discount and all 3 hotels came out the same price so thats why I was asking.

Dolphin = onsite = pretty much all the same perks as any Disney-owned resort.
Safari = not onsite = no such perks (except use of Disney transportation systems).
