Which day is best for Epcot--12/3, 12/4 or 12/5 and why?

Every book and guide I've looked at says to avoid the Monday EMH at Epcot--I am assuming this is because that the morning EMH attracts more people that otherwise would not have been there. We are trying to choose between Epcot on Saturday, Sunday or Monday the first weekend in December and I am wondering if Monday wouldn't be the best option even with the EMH because more locals will be there on the weekend with the CP and other holiday attractions. Which of these three days would you choose and why? Monday fits best with our itinerary--would it be a horrible choice? Our plan for Epcot is quite tame...we mostly want to explore the World Showcase, do the passports and Kidcot activities with the girls and see the Holiday decorations. We aren't doing the CP but would be staying for Illuminations (with a break at the resort during the afternoon). Any help would be greatly appreciated!

We'll be there the same time and plan on Monday as our Epcot day. I find morning EMH a great way to get things done, especially at Epcot. Just over a month ago I was able to ride Soarin' twice, TT twice, SE and a few other things before wait times jumped way up. Plan to do this again on Dec. 5.

We've always gone during pretty low attendance times (Jan, March, May, Nov, Dec) but we've never found a day that Epcot wasn't "doable". We always get fast passes for the biggies in futureworld and then do the "littles" while waiting for the fast pass times. Then we move on to the World Showcase in the early afternoon. Its just never been that crowded. We probably don't even really "need" fastpasses. The lines aren't ususally over 30 mins, but we just don't like to wait. This was before Soarin though. That ride sounds like it may be different

We've decided to do Saturday 12/3. SIL & BIL will be with us that day and we thought they would like to see EPCOT. We will be at MK on Monday.

Any thoughts on Saturday?

My family and I are going the week of 12/4-12/10. We Park Hop and like to end many of our days in Epcot. This strategy allows us to take advantage of Epcot's size (dilutes the crowd), evening dining options (love to try a new world showcase place each time I go), and the later closing time (9-9:30) on most nights. We arrive durinig the day on Sunday 12/4 and plan on having dinner at Epcot.

To get to the BIG attractions, we will do the Epcot opening one day that week to hit the big 3 (Test Track, Mission Space, Soarin). We have been lucky enough to hit them at least twice by visiting right away and fast passing the rest of the day. If anyone else is there that week, look for my daughter, wife and I - we usually close out each visit to Epcot with some nice beer in England, watching Off Kilter, then finding a spot near England or Canada for Illuminations (there is a nice coffee stand there if the evenings are chilly) - See you there.
 
We will be there at that time, too. We will probably go to Epcot on Monday regardless of crowd predicitions, but it will be in the afternoon. We have an ADR for CP in MK for 8:30 so we will start out there, but I'd say it won't be long before DFi won't be able to last long without riding MS. We will probably spend the evening in Epcot to watch Illuminations as well.
