I am a very nervous flyer - so wanting to book our fights with the carrier that has great reviews 

Every airline will have good & bad points. Every airline has their fans and their haters. I prefer Delta, others like Southwest, still others like United or US Air. Others simply like the cheapest. No question, Singapore Air.
Another thing to look for are direct flights (only 1 takeoff and 1 landing). If necessary, don't forget you can ask your doctor for an anti-anxiety med like Xanax.

A non-stop flight has one take off and one landing. A direct flight can have one, or more, stops but doesn't require changing planes. A connecting flight not only has a stop but you change planes, hence a second flight number.

JetBlue seems to have the highest score of airlines which offers reasonable service to MCO passengers.
