Here's the recipe. I find it easy to make, and I usually don't roll out cookies. We just love the taste of this recipe. And many soccer teams seem to agree.Let me know if you have any questions. Happy baking!
Basic Gingerbread Cookies
6 C. flour
1 tsp. baking soda
½ tsp. baking powder
2 sticks (1 cup) unsalted butter, soften
1 C. brown sugar, packed
4 tsp. ground ginger
4 tsp. cinnamon
1 ½ tsp. ground cloves
1 tsp. pepper
1 ½ tsp. salt
2 large eggs
1 C. molasses
** Icing optional (Buttercream icing from cake/cookie store)
Directions:
- Sift together flour, baking soda, and baking powder. Set aside.
- Cream butter and sugar until fluffy.
- Add spices and salt.
- Add eggs and molasses.
- Add flour mixture. Combine.
- Divide dough into thirds; wrap in plastic.
- Chill for at least 1 hour.
- Preheat oven 350°
- On a floured work surface, roll dough 1/8 inch thick. Cut into shapes. (Use a floured pastry cloth and pastry sock for the rolling pin. Season them with lots of flour on the first use.)
- Place shapes on parchment paper lined cookie sheets.
- Bake for 8 -10 min.
- Add icing, if desired.
** Recipe makes a lot!
