We have our hotel all booked, so are fixed on the dates that we must fly in and out of Manchester. We fly out 27th July and fly back 10th August.
Do I book the flights as soon as they are released (in 3 or 4 days time) or do I wait a while.

This is what concerns me about waiting:

There are 5 of us and its during the summer holidays, so are likely to get booked up quicker.

How late could I leave buying, get a cheap price and feel confident that there would be 5 seats left that I could book seats close together?

We can go indirect (as long as its only 1 stop), but prefer direct.

Is you hotel booking not flexible. I only book hotel first of I can move dates after getting flights as I did last year, a day or 2 either way can make a massive difference. I just booked next easter, 2 days later than we wanted but over £600 saving.

I would never worry about shortage of flights, especially if you are willing to go indirect. The airlines like youto think they sell out to get you to book early at inflated prices, in reality there is always availabilty.

See what prices are like on release but in recent years release prices have been overpriced IMO. Sometimes I wait for January/Feb to book, found better prices in the new year.

Good luck.

Also awaiting on prices for July. Just missed the iberia low prices from Glasgow as awaiting on DW getting ok from her work.
