What's Your Favorite Cake?

Lately, my husband has had a complete obsession with cake. His favorite is chocolate with whipped chocolate icing, and he's been bringing one home every other week. This past Friday, he brought home some vanilla bean ice cream, too. It's so hard to resist when I'm home all day alone with it! :crazy2:

I love carrot cake or spice cake with cream cheese icing, or German chocolate cake. Don't get to have them often anymore, but I do enjoy a very small piece from time to time.

What's your favorite?

My favorites are the same as yours. :)

I rarely make them though, don't need them in the house.

I do make DH a German Chocolate every year for his birthday though.
 

Just whipped up a batch of our favorite! It's kind of cake/kind of not - sticky toffee pudding (from Rose and Crown!). The date cake is delicious all by itself, so I don't feel too bad calling it cake! Then when you add in the cream and rum sauces ...... wonderful!!!!

Originally from a '60's Pillsbury Bake Off -- ". . . a winner in the Pillsbury's 16th Grand National Bake-Off of 1964."

MIAMI BEACH BIRTHDAY CAKE
6-ounce package (1 cup) semi-sweet chocolate morsels
1/2 cup graham-cracker crumbs (See note)
1/3 cup butter, melted
1/2 cup chopped walnuts
2 cups flour (regular or instant blending, such as Wondra)
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter
1-1/2 cups plus 2 tablespoons sugar
2 eggs
1 teaspoon vanilla extract
1-1/4 cups buttermilk or sour milk
1 cup heavy cream
Preheat oven to 375 degrees. Melt 1/3 cup of chocolate morsels. Grease and flour bottoms of two 9-inch layer pans. Combine graham-cracker crumbs and melted butter. Stir in walnuts and 2/3 cup chocolate morsels; set aside. Combine flour with soda and salt.

Cream butter in large mixing bowl. Gradually add 1-1/2 cups sugar; cream until light and fluffy. Add eggs, one at a time, beating well after each. Blend in melted chocolate and vanilla extract. At low speed, add dry ingredients, alternately with buttermilk, beginning and ending with dry ingredients. Mix well after each addition. Pour into pans. Sprinkle with reserved crumb mixture.

Bake at 375 degrees for 30 to 40 minutes until cake springs back when touched lightly in center. Cool.

Beat cream with 2 tablespoons sugar until stiff. Fill and frost sides with whipped cream, keeping layers top-side up. Refrigerate.

Note: If desired, 1 cup flaked coconut may be substituted for graham-cracker crumbs.
 
I have two. The first is a raspberry cake with Cool Whip mixed with raspberry frosting. The second one is a chocolate chip cake. Both are very easy to make.

But then theres vanilla cake with fudge frosting and chocolate cake with fudge frosting filled with strawberries.......

See what I'm saying????

My favorite is a Coconut Cream Cake.

Cook a white cake mix according to directions. When you remove from oven stab it with a fork all over. Pour a can of Coco Lopez (or any brand Cream of Coconut). Let cool. Cover pan with foil and chill. To serve- cover with cool whip and shredded coconut. Keep leftovers in fridge

Delicious!

To pick a fav is to hard. I have a fav that I perfer to have in the winter time - spiced cake. But perfer to have a lemon or carrot cake in the summer. And I don't say no to chocolate cake - EVER!!! About the only cake I would perfer not to see served, is an Angle Food cake. I just can't get into that.

Oh my goodness, I have never heard about this recipe but I know I would love it! (I love coconut)
Other than that, carrot cake with cream cheese frosting gets my vote.
But I really do like just about any kind of cake. :rotfl2:
 
Miami beach birthday cake is my favorite but since I am too lazy to make it (my mother is the one who made it) I like yellow cake with chocolate frosting.
 
I haven't made this in forever, but it's very good. ::yes::

Chocolate Chip Cake
1 3/4 cups boiling water
1 cup quick oats
3/4 cup brown sugar (packed)
3/4 cup sugar
1/2 cup butter or margarine - softened
2 eggs, beaten
1/2 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking soda
1 Tablespoon cocoa powder (heaping)
1/2 teaspoon salt (I usually only use 1/4 teaspoon)
16oz bag milk chocolate chips, divided

Preheat oven to 350F. Grease or spray a 13x9 pan.

Put oatmeal in a large bowl. Pour boiling water over it and let it stand 10 minutes. Add sugars and margarine or butter and mix well. Stir in eggs and vanilla. Add in all dry ingredients except chocolate chips - mix well. Fold in 12oz chocolate chips until well-combined.

Pour batter into prepared pan. Top with remaining chocolate chips (I usually use extra on top if I have more on hand). Bake in preheated oven for 40 minutes.

Allow to cool completely, then cut into squares.

Raspberry Cake

1 pkg white cake mix (18 ¼ oz) 1 pkg raspberry gelatin (3 oz)
4 eggs ½ cup veg oil
1 pkg frozen sweetened raspberries ¼ cup hot water
(thawed and undrained) 10 oz

Frosting:
1 carton Cool Whip (12 oz) 1 pkg frozen sweetened raspberries
(thawed and undrained) 10oz

In a large bowl, combine dry cake mix & gelatin powder. Add raspberries with juice, eggs, oil and water. Beat until well blended. Pour into a greased 9x13 pan. Bake at 350 for 35-40 min or until done. Cool. For frosting, fold Cool Whip into raspberries. Spread over cake. Refrigerate at least 2 hours before serving.


I've also made it by substituting strawberry jello and strawberries.

Another good one is No Bake Banana Split Cake. You didn't ask, but here's the recipe for that one as well. ;)

No-Bake Banana Split Cake

Crust: 1 ½ sticks butter or margarine melted 3 cups graham cracker crumbs

Filling: 2 sticks butter/margarine(softened) 2 eggs
2 cups powdered sugar

Beat butter and eggs together in a BLENDER. Slowly add the powdered sugar. Beat for 20 minutes. Spread over crust. Drain one large can of crushed pineapple. Slice 5 bananas in 1/3rds lengthwise and in ½ . Dip banana pieces in pineapple juice to keep from turning brown. Spread pineapple over filling. Line bananas up on top of pineapple. Spread one large container of thawed Cool whip over bananas. Sprinkle with chopped cherries and nuts. Refrigerate for at least 4 hours or over night. Before serving, drizzle with Hershey’s Chocolate Syrup.



This is our favorite Chocolate Chip Cake Recipe

1 box Duncan Hines Yellow Cake Mix
4 Eggs
1 Small Box Instant Vanilla Pudding
1/2 Cup Milk
1/2 Cup Oil
8 oz Sour Cream
1 Bag of Mini Chocolate Chips

Pre-heat oven to 350
Mix first 6 ingredients together in a large bowl.
Batter will be very thick.
Fold-in chocolate chips.
Pour batter into a greased 9x13 pan.
Bake at 350 for 40 minutes
