What's this on the menu?

On my next planned trip to WDW, I'm gonna continue to visit restaurants I haven't eaten at in any previous trip. One of the new ones (to me), will be a meal at the Nine Dragons (China) in Epcot.

In looking at the menu for this restaurant, I noticed something called "XO sauce." What the heck is XO sauce?

We also enjoy Nine Dragons, always get the Honey Sesame Chicken and Kung Pao chicken (very spicy)

Thanks for the Info. Now I'll have to determine if the XO sauce might be too spicy for my taste.
