What's for dinner? Was it "budget"?

Thanks for all the great recipes!

Tonight we had turkey meatballs in Trader Joe's cheese spaghetti sauce, peas, and water.

We had Rachael Ray's Pretzel Crusted Chicken with cheesy mustard sauce, Barilla Plus pasta and broccoli. It came out really well (dh was very impressed ). I already had everything to make the meal and I have lots of leftovers.


cariassanboys, care to share the recipe? I am intrigued. :)
 
Springtime Crustless Quiche: 6 eggs (.75), asparagus (1.00), mushrooms (.50), 1/2 tomato (.25), 1/2 onion (.25), seasonings

Turkey Bacon: 1.50

Fruit Salad: can of mandarin oranges (.50), pint of strawberries (2.00), grapes (1.00), bananas (.50)

Total: 8.25
 

New recipe -- 2 nights of eating & fun too

Pizza fondue (got to use my funky 1960s electric fondue pot - -bonus)
2 cans cheddar cheese soup : (can't remember cost- but under $3)
8 oz pizza sauce (store brand 97 cents - plus 6 oz leftover)
1 1/2 cups pizza blend shredded cheese: 1.49
1/2 cup pepperoni (3.09 for the package - over 2/3 of package left)

2 loaves of italian bread to dip 3,00
salad 1.49

total for 2 nights : less than $13.00
 
Anybody have any good recipes that are low carb/low sugar. My DH is a diabetic.

love2travel I want to know the same thing! DH and I are LCing and we actually spend a lot less on groceries now.

Here are a few of my recipes:

Soup:
1 lb ground beef browned and fat drained off
add a can of stewed tomatoes, a can (16oz) tomato sauce, and a can of mixed veggies, a little water to thin it out, salt, pepper, and heat and eat!
DH likes to add some macaroni noodles (LC no no).
It's actually a very good & very cheap meal. It might cost me $4 to make and no time at all, 30 min! It's great with cornbread, but once again, it's on the long list of things I can't eat.
Tacos:
1 lb ground beef, season with taco seasoning (Old El Paso makes a can of it that has enough for about 10 uses for about $1.50 rather than buying the individual packets)
Mix that with some refried beans if you like
Fill a soft tortilla with it and add some shredded cheese
brown on both sides in some butter
add whatever you like to it (hot sauce, lettuce, sour cream) I like them plain!
I use Mission LC tortillas they are the big expense at $2.99 for 10, but worth it.
total cost is about - $6.40 and I usually have some leftover for lunch!

Sausage from the freezer (from aWHILE ago)

So yummy!
 
Tonight we used up all the leftover taco supplies.. Only non-budgeted cost

We had taco's, rice, and leftover applesauce...
 
does anybody have any good breakfast recipes to share??

It's upside down night again and while the girls aren't tiring of the selection I am:

french toast, sausage and I am hoping there is fruit on sale

(we have been doing good eating out of the pantry/freezer but there isn't any breakfast meats or fruit of any kind so I am going to make a quick stop at the grocery store after work)

How about making some crepes? They're cheap and easy to make. You can put lots of different things in them for fillings. I've done brown sugar, applesauce, or syrup. You can also do more savory ones with chicken and cheese.

There's always the corned beef hash casserole like at Chef Mickey's :thumbsup2 Not very healthy, but I love it (and pretty cheap - a can of hash and a box of Jiffy corn mix or you can whip up your own). Serve that with some eggs.

I'll share my favorite breakfast item but most people will think I'm nuts. My grandfather "invented" it many years ago. It's very healthy for you and I think it's very tasty. It's also very filling.

You break up two large shredded wheat biscuits into a skillet (after you've sprayed it) and then crack two eggs on top. Then mix it all together and flatten like a pancake. Cook for a few minutes on each side until it no longer looks wet. Serve with some ketchup on top.

How about omelets with lots of add in's on the side and everyone gets to choose what they put in their omelet?

I like the crepes idea. We've done omelettes....eggs are so expensive right now that that ended up being not so budget:scared1: But I am definitely looking into crepes....peanut butter and jelly as a filling sounds good right now:goodvibes

Yeah, and a dozen eggs really doesn't go very far, does it?
 
Tonight my son Dan made dinner and he made aloo gobi (I hope I'm spelling that correctly) - an Indian curry with cauliflower, peas, potatoes and tofu over brown rice. It smelled wonderful when I walked into the kitchen and tasted delicious. It is SO nice when your kids grow up and cook for you!!

Barley stuffed peppers


Experimented to get a recipe close to the one at Prime Time -- and they turned out pretty close
 
Care to share? I love barely and I love stuffed peppers! :)

Not at all -- but be mindful that I just made this up - and most things I had in the house

5 green peppers, tops cut off and scaped out
1 can tomatoes w/ peppers & onions (Hunt's)
1 can tomatoes w/ garlic (Hunts)
1/2 yellow onion sliced
1 small can mushrooms
1 zucchini sliced in bite sized pieces
3 cups cooked barley


Boil pot of water and place peppers in for 5 minutes (I would probably go a little longer - my peppers were a little too crunchy) -- set aside

In skillet, heat some olive oil (I just eyeball) -- sautee onions & zucchini until onions are transparent. Add tomatoes, mushrooms and barley

Oven to 375. Place peppers in baking dish. Stuff peppers with barley mixture (I had a little bit of the mixture left over - so I just dumped it over the top). I then dumped another can of tomatoes over the top. Baked for 20 minutes. Like I said before - my peppers were a tad to crunchy and green tasting than they should for stuffed peppers - I'll adjust a little next time.

To serve - one pepper and I sprinkled with a bit of grated romano. I didn't season anything and it was fine for my taste. I never salt so I am used to it -- you may have to add salt/pepper/garlic salt - to your own taste.
