What's for dinner? Was it "budget"?

All of these budget meals are awesome. I have seen several I will try and several more that I would try if I wasn't the only one in the house who would like it.

I am like some people in that I try to watch my grocery bill as much as I can, use coupons when I can, and also try to get my meat discounted on the day before or day of date on package and throw it into the freezer. But, at the same time, with my picky family, I find that I throw away a lot less food when I am concious of what I cook and who will eat what.

I will eat anything. I love all types of food and all veggies. But, my DH won't eat rice or many veggies. My kids aren't big potato fans but love rice. I was banded last May so I don't fix something just for me very often because it would take me a week to eat it all, if it doesn't spoil 1st.

We are making a real effort to eat healthy in my family right now. My ds battles his weight and my dd is starting to do the same. My dh gained 20lbs last year after he started his business.

This past week we have had homemade BBQ (homemade low sugar sauce) sandwiches on wheat buns, and fresh broccoli. Approx 14.00 for the whole meal, but my kids cleaned their plate it was healthy, my DH had a lunch for the next day and so did I. I hate that fresh food is more expensive.

We also had broiled boneless pork loin chops (on sale and marked down, 5.00 for 9 good size chops) with baked potatoes, rice for kids, and steamed corn (butter buds, no real butter), and green beans (cooked in beef broth for flavor). My ds won't eat green bean. I don't do well with corn. But again, everyone ate well, My Dh had two lunches off of the meal also, and leftover rice went with the next nights meal for the kids.

My ds and dd were gone last night so I sorta splurged. At Sam's I got 1 lb of fresh shrimp that I marinated in ff italian and skewered and put on George. I did sliced potatoes with an onion and butter buds in the oven, and a great salad with lots of veggies. We ate for about 10.00. I could even go down to 3/4lb shrimp for next time. I have left over shrimp that would be great on a salad too. I might do that for tomorrow.

I am getting ready to throw a turkey breast in the oven (I use a oven bag) and do some mashed taters and peas. Again for about 8.00-9.00 a meal we will eat off of tonight and several lunches.

When we do splurge I love to do homemade pizza's also, or nacho's with baked chips, ground turkey breast, and light cheese.

We really just started our healthy eating initiative in our family last week (monday to be exact!) and I have lost another 4lbs, my dh has lost 6lbs and as long as my kids eat healthy and try to exercise, I don't care to much what they weigh. I grew up with being scale concious, and it has lead me to a life of yo yo dieting. My son I know about 133lbs ( 5'3" 11yo, size 12 1/2 shoe). He isn't that much overweight, but all weight that is extra goes straight to his belly. He also loves his xbox 360, so I am really pushing daily exercise. He made the archery team at school, so he did not do bball. But, baseball is in march, so he will get out more then. My DD does gymnastics 4hrs per week, but is also really starting to fight her genetics. She is really active though. I am pushing healthy eating to get strong, not weight loss for them. If it happens great, but if not I figure as long as I push the healthy eating, they will grow up, and not out so much.

So sorry I went on and on. I tend to ramble.

I have been a lurker for a couple years now. I feel I know many of you already. Hopefully you will get to know me too!
 
Don't be afraid to have your kids try somethings that they did not like in the past. Last night was the first time DD11 ate my Turkey Tacos. After giving them a try she ate two. I told her if she didn't like them then she could have Joe's O's ( cheerios) and splenda for dinner because this was what I was making for dinner. She opted for the tacos ;) .
 
I don't know if this is going to be budget friendly or not. I am making green chili enchilada casserole for the first time.

4 chicken breast halves simmered in 2 c. salsa $3.50
1 16oz. container low fat sour cream $1
1 lowfat cream of chicken soup .90 cents
1 c. ragu double cheese sauce .75 cents
12 corn tortillas .90 cents
1/2 c. shredded cheddar .80 cents
2 4 oz. cans green chilis $2
total $9.85

Serve with mexican rice .25 cents and refried beans $1, plus extra sour cream and salsa .50 = $1.75

So about $11.60 total. I'm sure we will get at least dinner plus 2 lunches out of it. So, not too bad. I hope it's good!
 
Tonight we are having pulled pork sandwiches on whole grain buns, oven baked potato wedges w/garlic and seasoning, and green beans.

Pulled pork (2.5lbs porkloin) $3.50
Bottle bbq sauce $1.50
1/2 package red potatoes $1.00
rolls $1.75
Green Beans 50cents

Total $8.25. I will have leftover for DH and one other person to have lunch.

I am going to have to watch for pork to go on sale....we don't eat it a lot because of some nasty memories...but some of these recipes sound scrumptious!!!

Tonight is:

1/2 Costco rot. chicken ($2.50)
mashed potatoes & gravy (about $1.50)
fresh steamed broccoli (less than a $1)
fresh pineapple (whole one cost us $3....I would guess we will eat about 1/2)
mandarin oranges(33 cents for kiddo who doesn't like pineapple)

so for under $7 we have a scrumptious meal.:goodvibes
 
Definatly cheap and easy, but not very healthy at all, tonight's dinner for me was half a box of Wheat Thins - 75 cents.
 
Tonight we're having meatloaf, company corn (recipe from Taste Of Home), and fresh bread machine bread. DH will take leftovers to work on Tuesday as his Monday lunch is left over Beef Manhatten.

FYI Taste Of Home has a "cheap" meal in every issue. And on their website has tons of recipes.

I love this and it makes enough for 6 adults.

1 bag frozen cheese tortillini
1 bag frozen peppers and onions( birdseye)
1 ring of smoked sausage or a package of brats sliced in 1 inch pieces fried a little
1 jar of alfredo

prepare all and combine
serve with garlic toast

It all is in the cupboard or freezer for an emergency meal!

My family loves this. I sometimes make the sauce and use frozen broc. etc..

I also get the Gyro meal in the freezer section. Usually about $7.00. You add lettuce and tomatoes. Makes enough for 4 adults. Great emergency meal too. Have to have a couple in the freezer so I don't think of going through the drive through and bringing it home. It is just as easy to make one of these and alot cheaper. Love this thread.

DH is cooking tonight, cause I just got home from work. He put a potroast in the oven. Seasoned it with packaged Au Jus and organic beef broth and minced garlic. He put sliced carrots and mushrooms in with it as well. We will make some mashed potatoes to go with it. :) Yummy medium rare beef, with mashed potatoes and gravy, and carrots and mushrooms! :woohoo:

Tonight is the finale of Amazing Race! I am so excited! :goodvibes I get to eat a yummy dinner and watch fun TV!

I suppose leftover spaghetti and meatballs, leftover beef stew, leftover italian bread, and the end of a large jar of apple sauce would qualify as "budget"!! And DD packed the last of the leftover spaghetti for her school lunch on Tuesday. .................P
 
When I went to the grocery store today, they had large bags of rolls at the bakery on sale, so I bought one and divided it into packages for the freezer. I kept out some poppy-seed onion rolls, and for supper we had:

Poppy-seed onion rolls filled with meatless "beef strips" (seitan) and sauteed onions and barbecue sauce

Mixed baby greens salad

Steamed broccoli

Dessert was a vegan bread pudding made with stale whole wheat bread, apples, raisins and bananas - first time I made it and it is very good! I plan to have the leftovers for breakfast.

Wow, I love that site. I've always wanted to visit Monticello - maybe this summer...

If you have kids (or even if you don't), I would highly recommend it. This is one of the places that we visited when i was a child that really stands out in my memory. The inventions that he had in his house were really fasinating. I am hoping to take my son at some point. We are going to Williamsburg this summer (another childhood favorite of mine). I think Monticello is near W.Virginia on the other side of the state so I don't think i can really combine the trips but now you have me thinking....
 
Last night we had Baked Potato Soup, and we had the leftovers tonight. It's a fairly cheap meal, and can be lower in fat if you use low fat or fat free ingredients. Just needed baking potatoes, 1 lb. of 2% milk Velveeta, 8 oz. sour cream, chicken boullion, shredded cheddar and crumbled bacon. YUMMY....Really good on a cold night!!

Tomorrow I'm making Pepsi Pot Roast, with either egg noodles or mashed potatoes and cooked baby carrotts. The roast will last two nights. I bought it a few months ago during a B1G1 sale.
 
Just jumping in...I live in Richmond, VA and went to UVA in Charlottesville. Monticello is great. Took my kids ages 6 and 8 and they really liked it. Also if you go eat lunch at Michie Tavern..right down the road. They have a buffet where the food is southern and really good! Monticello is 45 minutes west of me. Williamsburg is 1 hour east. It's about 1:45 apart...not too long for me but I like to drive!
 
well, 2 weeks in the world= not budget meals:lmao:
so today it's a big pot of chili simmering for the day....plus breadmaker bread and lemonade -my gang likes food for breakfast too instead of the usual breakfast stuff,I know,weird:laughing:
 
We had chicken parmesan - 4 frozen chicken breasts (from a Sam's Club value pack), one jar of 4 cheese spaghetti sauce (Food Lion brand), parmesan cheese (2-3 TBS) and mozzarella cheese (about 8 oz.).

I poured the sauce into the bottom of a 9x13 pan, and added the chicken breasts (frozen). I spooned some of the sauce over the chicken, covered it tightly with foil and baked at 350 for 45 minutes. Then uncovered and sprinkled the chicken breasts with shredded mozzarella and parmesan cheese, and baked about 10 minutes more. We served it over angel hair pasta and it was delicious!
 
Just DH and I tonight for dinner and we had a big spaghetti lunch at church. So I just opened two cans of vegetable stew and heated them. I served the stew over rice. Not gourmet by any stretch and not REALLY healthy since I'm sure the sodium content was high. But it was easy and not expensive. :thumbsup2
 
Tonight we had NY Strip Steaks, broccoli and tater tots. I was planning on making mashed or baked potatos, but it got late and DH wanted the tots. This meal was budget because my dad bought us a bunch of steaks last time he came to visit. So the meal was virtually free :D

Tomorrow night, I'm making breaded baked cube steak, pasta salad and green beans.
 
I have a very stupid question (crockpots aren't so common here, so we are not used to crockpot recipes):

When you say you take chicken breasts and add a can of cream of mushroom (or whatever) is it like the Campbell's one? Where you have one can of cream of mushroom and you are supposed to add a can of water before you heat it and eat it as a soup? Or is it something completely different?

Yup! Campbell's it is! Or the store brand... but still condensed cream-of-whatever soup. And depending on the recipe, I sometimes mix it with a can of water, and sometimes don't. If my sauce needs to be thicker, maybe only half a can; thinner, maybe a little more. Sometimes milk instead of water, or (quite often) chicken or beef broth.
