What's for dinner? Was it "budget"?

Grendalynn, if I come across the recipe I'll post it for you. :)

Tonight we're having ham, broccoli, and cheese quiche, squash with sauteed onions and bacon (reminds me of my grandmother), and for dessert pineapple upside down (that I made yesterday). Dinner will be great! :)

Hope everyone had a wonderful Mother's Day! I know I did! :flower3:
Yesterday for dinner, DH cooked a turkey. His mom won it in a promotion at work, but neither of his parents care for turkey, so they gave it to us. So we had roasted turkey, potatoes and gravy, peas, and a relish tray - pickles, olives, pickled beets, etc. It was an awesome meal!

Tonight for dinner we are having steak, sliced thin, over egg noodles with mushroom au jus gravy. I have some fresh broccoli to go with it, and I picked up a loaf of French bread when I stopped at the store for milk this morning. Yum!

Yesterday Sam's had 5.5lb packages of 10% lean ground beef on sale for 1.98lb. I bought two packages and made the following to feed the freezer.

6 - 5oz hamburgers, split into 2 packages (1 burger for me, 2 for DH)
3 1lb packages of browned ground beef with onions and peppers
3 1 quart bags of chili
1 1 quart bag of spaghetti sauce (plus the sauce I used for the penne)
14 meatballs, cooked
2 pans of baked penne, 1 for us, 1 for the neighbor
1 - 2lb meatloaf

We went to the beach for the weekend, so NOT budget at all~ I woke up yesterday with the stomach virus, and had to endure a 3 1/2 hour car ride home from the beach (it wasn't pretty!). We came home to no food in the fridge (not that I particularly cared at that point!) so DH went to the store and bought a pack of hot dogs 1.50 and a bag of chips 1.50 and we had the rolls in the freezer. So the three of them ate for 3.00...but they didn't eat all of the hot dogs OR the chips...

Tonight isn't looking very exciting either. I've managed to keep down (and in..) a bowl of rice krispies today, so I'm making progress. I'm not sure what the guys will have...
 

Black Bean & Rice Burritos

Black Beans - .50 (cooked a bag of dry and used it for Taco Soup too)
Canned Tomatoes - .33 - on sale
Cumin, Garlic Powder, Salt - .25 (I'm sure it was less, but how the heck do you count spices?)
Tortillas - .25 (.79 for a package of ten, we used 3)
Cheese - .50
Sour Cream - .25
Rice - .50 ($1.99 for a 5lb bag on sale)

So, about $2.58 with lots of leftovers.
 
Leftovers tonight.. So $0.0... And since I paid $15.00 for an ice cream cake for myself for Mother's Day (no one would go get it, had to do it myself;))

Pulled pork from the freezer
One cheeseburger from last night
One hamburger from last night..

Rolls left-over from yesterday, rice left over in the fridge, one ear corn on the cob, leftover macaroni/potato salad...

And to top it off... One cleaned out refrigerator... Oh by the way no dessert tonight, we ate the whole cake:confused3:rotfl2:...

Thanks!:hug: My DH thinks I might have had a touch of food poisoning...we all ate the same crabs and shrimp, but I had a couple of bites of the cole slaw. :confused3 I don't know, but I'm feeling much better today. A little weak, but I'm staying out of the bathroom so far!
 
It's only 8 more dinners until our WDW trip so still cleaning out the pantry and freezer this week. Here is my menu:

Monday: Beef Roast w/mushroom gravy (free meat), left over mashed potatoes (free), carrots and celery = $1 maybe for gravy and veggies;

Tuesday: Left-over pork roast (from mother's day, my mom didn't make it and I made a bunch), left-over corn and stuffing = Free;

Wednesday: Bake ziti (noodles, ricotta, mozzarella and ragu)
Frozen broccoli = $4.50 total

Thursday: Chicken Tetterazine (chicken was free, spaghetti, cream of chicken, cheddar, parmasan, cooking sherry and peas) $5.50 total

Friday: Frozen Pizza for kids $3.33 and chicken/stuffing skillet for DH and I (chicken was free, stuffing was free, cream of celery and seasoning) = $4 total for both

Saturday: Grilled pork chops and sausages, buns, rice and peas. $5 total

Sunday: Chicken Divan (chicken was free, cream of chicken, broccoli and cheese) and rice = $4.50 total

Monday: Taco skillet (ground turkey, tomato soup, flour tortillas, salsa and cheese) and corn = $4 total

$28.50 total for the week and no grocery shopping, had all on hand. Not bad!
 
I went grocery shopping today so we have food! LOL!

I made dinner last night in the crockpot but my mom sent us home with a bunch of leftovers so we will just have what I made tonight. I did some pork chops with BBQ grillin beans on top. I think the chops were about $4 and the beans were 25 cents with my coupon.:woohoo:

Tomorrow is white beans with one porkchop that I saved. Half a bag of beans and some rice = about $1.00 or so.

Tacos and rice - meat 1.00(I am only using about 1/2 a lb), refried beans - in the pantry so I dont know, maybe 1.00), lettuce, cheese, sour cream - maybe another 1.00, rice - 1.00 and I'll do oranges for dessert. They were 50 cents at the market.

Hamburger steaks, potatoes and peas - about $4 total

Crockpot beef and gravy with green beans - $7 total. I take a piece of steak (sirlion, round steak) put it in the crockpot with 1 can cream of mushroom soup and one pack of onion soup mix. Cook all day and the meat falls apart and makes its own gravy. I serve over egg noodles or rice. You can also add sour cream right before serving for a stroganoff taste.

Chicken alfredo and salad - $6.50 total. Those salads in the bag are outta sight expensive!! Got to stop buying those.....:rolleyes1

I used to buy those, and stopped. 1 bag only fed my family of four for one night. Instead, I buy the romaine hearts. The come three in a package and are around 2.50/3.00 a bag. I usually use one heart per salad for the four of us. So, just around three meals worth. I like them because there is virtually no waste to them. Just wash them and tear them up. The regular head of romaine has so much waste, I end up throwing out the outer leaves to get to the "good stuff"...waste of money!!

Aside from my own homemade sauce, I like the store brand the best too! Giant's smooth marinara is better than any of those name brands!:thumbsup2
 
I've been sick with bronchitis for about ten days now, so meals have been pretty plain. Sunday for Mother's Day I had my whole family over but I was still feeling not good, so everyone else cooked! We had vegetable-barley soup, salad, and black bean enchiladas for the meal, and then people could pick between chocolate-peanut butter cupcakes and (soy) ice cream sandwiches (with chocolate digestive cookies as the outsides of the sandwich) for dessert. The soup and the enchiladas are both favourites of my grandkids, so they were happy! The best part was that I had enough food left over to have the soup for lunch yesterday and I'll serve enchiladas for lunch today.

Yesterday I just made pizza: whole wheat pizza dough in the bread maker, topped with some spicy garlic spaghetti sauce (store brand), green peppers, yellow peppers, onions, vegan "pepperoni" and vegan parmesan. Pears for dessert. Quick and easy when you're feeling sick!

Today I'm thinking lentils and brown rice with steamed broccoli.

I know the feeling!! I am glad to see others are in the same boat as we are. We eat like kings for a few days, then by the end of the week, its feast or famin... :confused3 Abpout the Bag'o'salads... I have to stop buying them too! We are at the point where one bag barely feeds our fam of 5 and 2 bags is just so expensive - but they are so easy, I get sucked in! As a PP mentioned, I need to just make it my self and save some $$!!

I remember doing this same thing just about a month and a half ago... :guilty: before we left for Disney!! I am now having Dis-drawls, so thank Goodness for The DisBoards!!! Have fun and can I come with you? :confused3

I LOVE chicken Tetrazine!! I didnt know others ate it too! A lot of peeps around here look at me with 2 heads when I mention it... Its something my grandmother always made when we went to visit! Its our families comfort food!! LOVE IT!!:cloud9:

Pizza (dough made in the bread machine, and all toppings I have on hand)
Dough: $1 (enough for two)
Pepperoni: $1
pineapple: $0.50
bacon: $0.50
Salad: $1
drinks: $0.50
Total: 4.50 (4 servings so $1.13 a serving)
 
I have to say, I think making pizza dough in the bread machine is such a boost to my budget! It's so quick and easy and I usually make a double batch and freeze one so it's even easier the next time. I really like pizza for a quick meal, we always have something around that can be turned into a pizza topping, and everyone likes it. It's definitely saved me from going out to dinner many times. I think if I never used my bread machine for anything else, it would be well worth it just to make that pizza dough.

I really need to plan our dinners....usually it's just hit or miss.....how do you guys do this? make a list at the beginning of the week?
