What's for dinner? Was it "budget"?

Does anyone have a breadmaker pizza dough recipe they can share??? All this talk of pizza and now I want to make one!! Thanks!

Here's the one I use:

Easy Bread Machine Pizza Dough

Ingredients
1 1/2 cups warm water
2 tablespoons olive oil
4 cups flour (all purpose or bread)
1 1/2 teaspoons salt
1/3 cup Parmesan cheese
1 tablespoon Italian seasoning
2 1/2 teaspoons active dry yeast

Directions

1. Add all ingredients to bread pan in the order given.
2. Select dough cycle.
3. Add water if too dry. A little at a time.
4. After dough cycle is complete, roll dough or stretch to fit pizza pan.
5. We sprinkle our dough pan with cornmeal or spray with pam. . . but its
just a couple option.
6. No need to let dough rest again just start loading up with sauce and
toppings.
7. Bake pizza at 450 for 15-20 minutes.
8. Enjoy!

We made two 9X13 pans with this.

I LOVE chicken Tetrazine!! I didnt know others ate it too! A lot of peeps around here look at me with 2 heads when I mention it... Its something my grandmother always made when we went to visit! Its our families comfort food!! LOVE IT!!:cloud9:

Me and DH love the stuff! The kids are just okay with it, but will eat it. This time next week I'll be on my way to CBR. Can't wait!
 
Just finished the prep work.. Tonight is Lazy Lasagna w/ meatballs and salad.

One box Rotini $1.00
2 jars sauce $2.00
1 15oz ricotta cheese $1.00
1 package mozzarella only used 1/2 $.75
1 # ground beef $2.00
2 eggs $.25
spices $.25
Romaine and Salad mixings $1.50

Total for dinner is actually 2 dinners, 2 lunches, and extra meatballs/mozzarella/sauce for meatball subs later this week...

$9.25

I like tetrazine too! I usually make turkey tetrazine with the leftover bird at holiday time. I need to get on the ball and make it with chicken! :laughing: Now I'm craving it, so I'm sure I'll be making it soon. Maybe we'll have it on the next rainy day.

We're having leftover ham, broccoli, and cheese quiche. It was really good. Also finishing up the steamed squash made with sauteed onions and bacon. And we're having some nice sweet red grapes along with it. I have two large slices of pineapple upside down cake to finish up tonight. So glad there's no cooking tonight! I love leftovers!! :) :upsidedow
 
Bought a jenny o turkey tenderloin the other day. It's in the oven as we speak. Smells yummy. It was on sale from $6 to $5 and it had a coupon attached to it for a $1.00. Otherwise I probably wouldn't have bought it. So that and steamed veges.
 
Tonight we are having Roasted Chicken. Whole roasters were on sale when I bought this one (it has been in the freezer for a couple of weeks) and I paid less than $4 for a 6 lb bird. :thumbsup2 Rubbed it with some butter and seasoned with S & P, garlic, herbs and lemon juice.
I think we will have Rice-a-Roni with it, I have a couple of boxes of chicken-broccoli flavored. And in keeping with the broccoli theme, I will serve up the broccoli and cauliflower florets that I bought but never used a couple of days ago.

Chicken Burgers, leftover pasta salad from Mothers Day and probably some BBQ Baked Beans.... ((was hoping to find that yummie recipe from this thread to doctor them up)) Nothing fabulous, but its basebal season and we have been eating fast and easy meals!!

Anyone else in this boat: Does anyone else have somthing going every night because of sports or other things?? We didnt eat one "good" meal last week - I cooked, but it wasnt anything well rounded. DS9 is in Minor Leage baseball on team that plays or practices 5 or 6 out of 7 days a week. I also coach Middle School softball and I have practice til 5pm if I dont have a game, then it could be anywhere after 7 that I get home. DH owns his own business and is home after 6/7 most nights. Last week our dinners consisted of Cereal, breakfast for dinner, Spaghetti & canned sauce, McDonalds and Chinese Take out (which last 2 nights :thumbsup2 ) Whatare some quick and easy meals out there that other Sports Moms have come up with? Last night we did the French Dipthing - an idea I got from this Fabulous thread!! :cool1:
 
Grendalyn - Another sports mom here. What I do a lot is cook two meals at once when I get the chance.

Tomorrow I'm making a large roast chicken. Then I'll save the rest of the meat and make chicken soup (with premade chicken stock) in the crockpot for another night. Lastly, I'll use the rest of the meat for a quick potpie.

If I make a lasagna, etc, I make two and freeze one.

Tacos are easy. I use ground turkey. You can cook double the amount and freeze half. Then serve at a later date with tortillas and some fresh veggies. Or throw the meat into some other dish like American Chop Suey, soup, chili, etc.

For me...I think if I plan ahead just a little we eat a lot more healthier for a lot less money than if we grab takeout.

I love to cook, but I hate cooking dinner during "sports" season. Good luck!
 
Last night was baked ziti...

$3.00 italian sausage
$2.00- ziti noodles
$1.50 sauce..

Total $6.50 for dinner for 6.. Not too shabby!

Tonight we are having enchiladas..
$1.50 flour tortillas
$1.00 enchilada sauce
.50 green chilis
$2.00 hamburget meat
$2.00 shredded cheese
.50 refried beans

Total $7.50 for dinner for 6- :banana:
 
Pretty good and cheap:

Medaterrainian Fish Bake:

1 pound bag of Tilapia at walmart $3.89
5 small red potatoes 1.50
1 can whole tomatotes 1.19
1 jar artichoke hearts 1.59
Feeds 5-6 depending upon size of fish pieces for $8.17

In a glass baking dish 8x11 cut up red pototaoes into small bite size pieces, along with artichoke hearts and can of tomaotes. Add spices of 1 tsp rosemary, 1 tsp italian seasoning, garlic salt to taste. Mix all together. Layer the 6 pieces of fish on top. Sprinkle with 1/2 cup of Panko bread crumbs and a little more garlic salt, pepper, italian seasoning. Bake 1 hour at 375. It is really good.
 
Well, I had thought I'd do lentils and rice, but I forgot it was my son Dan's turn to cook, and he made chickpea gravy over toast, steamed broccoli and salad. He said he'd just been craving gravy so that's why he made it. Very good too.

So it will have to be lentils and rice tomorrow. I make it with a lot of carmelized onions on top and spices and it's quite tasty.

I'd love to see your recipe (even a rough one) for the lentils and rice. I'm trying to have lentils/beans at least once a week now as a means of cutting back on our grocery costs.

I made a yummy lentil taco salad in the crockpot today. Have lots of leftovers which I'll use to make burritos tomorrow night. Not sure exactly how much it cost us, but certainly under $8, and we'll get two meals out of it (which doesn't happen very often with my big eating DH!)

THIS IS MY LIFE!! 3 BOYZ - 1 HIGH SCHOOL BASEBALL, 1 TRAVEL BASEBALL AND ONE WORKS!! + my stove and microwave were fried in a power surge!! I don't think we have had a home-cooked meal since practice started in April! LOL If we (or some of us) eat at home, it is by 4:00 so they are eating AGAIN at 8:30! Help!!!!
 
Okay, here's the recipe I use:

3 onions
1 and 1/4 cups dried lentils (or you can use canned - see notes at the end)
3 Tablespoons olive oil
1 and 1/2 tsp. coriander
1/2 tsp. cumin
1/4 tsp. marjoram
1/4 tsp thyme
1/4 tsp (or less) cayenne
salt and pepper
1 cup brown rice

Chop one of the onions. Slice the other two and set aside.
Bring a saucepan of salted water to a boil and add the lentils and simmer for 10 minutes. Heat 1 tablespoon of oil in a skillet over medium heat, add the first (chopped) onion and saute about 5 minutes until lightly browned.

Drain the lentils and return to the saucepan. Add the cooked onion and all the spices. Add the rice and 3 cups of water and bring to a boil (I sometimes use tomato juice or V8 juice instead of water) and simmer uncovered for about 30 minutes until rice and lentils are almost tender, then cover and turn heat to very low and simmer 10 more minutes.

Sprinkle a little flour and s little salt and pepper over the sliced onions and mix together to coat. Heat the remaining oil in the skillet over medium-high heat and add the onions. Cook, stirring frequently, for about 15 minutes until they are brown and carmelized. Serve the lentil and rice mixture topped with the onions. (Add another cooked vegetable and a salad.)

Definetely in the same boat. I actually purchased chicken nuggets and frozen fries yesterday.. this does not usually happen. I actually make my nuggets but no time for the next couple of weeks. I did sneak a good meal in tonight with leftovers, but I am not sure when the next good meal will be...:scared1:

DH cooked tonight because I was on "aikido" duty (had to take DS8!). He made Hamburger Helper and a salad. Thankfully, I am able to eat again. I didn't eat a lot, but enough. DS8 HATES Hamburger Helper, so he moaned and groaned through his obligatory 8 bites. :rolleyes: So, 1.99 for the Hamburger, 1.00 for the Helper, and lettuce, a pepper, tomato and some cucumber (2.00 maybe??)

4.99 for 4, plus a lot of leftovers!
 
Happy Thursday! :)

Tonight we're having sloppy joes, corn on the cob, and I'm looking for a recipe for apple slaw (that the kids will like). I might make an angel food cake, I have some cherry topping that would be fabulous over it. BTW, the angel food cake mix was on sale for $1. At the register there were ready made angel food cakes for $4 and change! :upsidedow I was glad the mix was on sale! :)

Anyway, definitely a budget meal. The sloppy joe sauce was on sale for $1, the hamburger was bought in bulk for about $2.00 (?) a lb., the apples were about $1.50 a lb., the rest of the stuff I have on hand. So the cost of dinner is maybe around $6-7$? Not bad!

woohoo!!! Everyone has gone home:cool1: :lmao: It means my family can go back to eating at home and our tummies will be thanking us I believe.

Tonight will be upside down night:

french toast: bread free
scrambled eggs: about a $1 worth between this and the french toast
sausage: $1 on sale
assorted fruit: probably about a $1's worth


phew!! love the looks of $3 opposed to the $150 spent on Saturday for the birthday party dinner!!
