This is one of my favorites and you can use whatever veggies you like.
1 pound (or however much you want to use) of either very thin egg noodles or thin spaghetti or regular spaghetti or linguini
Veggies- I use the pre-grated carrots, sugar snap peas, green onions, matchstick sliced red bell pepper (you get the idea, anything you like)
Equal mix of rice vinegar, soy sauce (I love Tamari because it has a bolder flavor), and sesame oil. I often go light on the oil and heavier on the soy sauce.
Kids love this and it is very healthy. Can be served at ANY temperature. Serve cold over a bed of lettuce, warm alone or with salmon, add chicken pieces if you want.
