I have no idea what to cook tonight, I'm so tired of the same old same old. What's for dinner in your house?
 
I think I'll make some blackbean soup!
 
I'm think possibly pork chops baked with brown sugar and soy sauce. But now what to go with it?
 

I've been sick so I need an easy dinner, hamburgers on the Foreman Grill, probably some baked beans and french fries.
 
Dinner? I'm still thinking about breakfast which has now turned into thinking about brunch!
 
probably left over cornedbeef and cabbage we made yesterday. I know....a couple weeks early...but we will gladly have it again on the 17th!!! I love that stuff
 
Sauerkraut and Pork roast with mashed potatoes and rye bread.
 
This is what I made for my wife on Valentine's day. She loved it.

It is really simple to make. Just use chicken if you don't like seafood. I'm no chef that's for sure but I have to say it was pretty good.

Chicken and Shrimp Fra Diavolo

Ingredients:
1/4 teaspoon Red pepper flakes
1 teaspoon Dried thyme
1/2 pound Shrimp (I bought med. shrimp already cooked)
1 package of chicken (breasts or tenderloins...I grilled the chicken first and then cubed it
1/2 cup Fresh chopped parsley
1 teaspoon Dried basil
4 tablespoon Olive oil
1 Bay leaf
1/2 Stick butter
1 teaspoon Oregano
2 Cloves garlic crushed
1 28 ounce Can crushed tomatoes (I used 2 cans diced tomato's)
1 cup Red or white wine
1 Onion chopped
Salt and pepper to taste
1 Hot pepper halved and seeded




Instructions:
Melt butter in oil and sautee onion and garlic until golden (I added peppers and mushrooms to mine also) Add tomatoes and mix well. add all other ingredients and mix well. Simmer for 30 min. Remove bay leaf and hot pepper halves. Add shrimp /and or chicken and simmer 15 minutes. Turn off heat and let sit for 10 min. Cook pasta (your choice) according to directions. Drain and cover with sauce. Don't forget the grated cheese.
 
DH & DSs will have frozen pizza and corn, and I will have a Weight Watcher Smart Ones frozen dinner.
 
Fresh haddock with ritz cracker topping, rice pilaf and a salad.

I'm glad you asked. We're going to have chicken cooked in the crock pot, but I had forgotten to start it. I need to do that now. I don't know what I'm going to put in there with it. I'll scrounge around the kitchen and find something, I guess.
 
We're having Tandoori Chicken with Mango Salsa and Wild Rice. I've been wanting to try some Indian dishes for quite some time & am finally going to do it tonight.
 
Just came back from the fish market with some haddock. We'll have it with sweet potatoes and sugar snap peas. Is it 6:00 yet?? I'm hungry!!
 
It’s CDD (religion class) afternoon for my child, so we’re eating a quick meal tonight. Chili dogs, baked beans, and macaroni salad.

I made a big batch of chili last week and froze a couple of small containers for later chili dog meals. We like Bush’s baked beans with onions—the trick to making these taste great is letting them simmer until a good part of the liquid is evaporated. And I get the macaroni salad from a local deli that makes it themselves.
 
Well DH is out of the picture......for dinner that is.

So DS and I will probably just have tuna fish....or maybe mac and cheese.

Tonight, NC Beast and I are dining on leftover southwest style london broil which is being reincarnated into fajita along with some shrimp and fat free refried beans. I'm on a tex-mex kick this week. Hubby will probably bring homemade turkey-vegetable soup to work tonight. I made the soup from scratch.

This is one of my favorites and you can use whatever veggies you like.

1 pound (or however much you want to use) of either very thin egg noodles or thin spaghetti or regular spaghetti or linguini

Veggies- I use the pre-grated carrots, sugar snap peas, green onions, matchstick sliced red bell pepper (you get the idea, anything you like)

Equal mix of rice vinegar, soy sauce (I love Tamari because it has a bolder flavor), and sesame oil. I often go light on the oil and heavier on the soy sauce.

Kids love this and it is very healthy. Can be served at ANY temperature. Serve cold over a bed of lettuce, warm alone or with salmon, add chicken pieces if you want.
