Tomorrow is Swiss CHicken Casserole

We had zesty red clam chowder (recipe from my WW book). It was very zesty and very good! Homemade soup is always yummy.

Here you go
Swiss Chicken Casserole
6 skinless, boneless chicken breasts
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1/4 cup milk
2 cups herb-seasoned stuffing mix
1/4 cup butter

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Arrange chicken in a greased 12 x 8 x 2 baking dish. Top with Swiss cheese slices.
Combine soup and milk and stir well. Spoon mixture over chicken and sprinkle with stuffing mix. Drizzle butter or margarine over crumbs.

Cover and bake at 350 degrees F (175 degrees C) for 50 minutes. Enjoy!

I also make this with leftover,precooked chicken and thanksgiving turkey

wow i know i am really late posting this but i will join in anyway, lol....though i don't really have that exciting of a meal to post. it was a crazy night...first it was snowing so the roads were awful, had to take ds to karate and pick him up an hour and half later, when the roads were still crappy but now it was dark too. so needless to say got home later then planned. dh was working late sooooooo supper was fried egg sandwiches with chips and apples.

Had cuban food tonight at a dazzling restaurant in Hoboken, NJ called "La Isla." Best black beans north of the Mason-Dixon. Took the PATH train to Manhattan (Christopher St.) and drifted by the transsexual bar on Christopher on my way home to the West Village. What a trip!

We had hotdogs "all the way" NC style....chili, cheese, slaw, mustard and relish....ketchup for DH. Would have had onions too but we were out!
