Its really great to have a place like this to come learn new things and share ideas without being judged.

I am not able to keep up with this chatty bunch but I'll give it a try.

I'm the same way - I'm not really a chatty person myself.
But I'm gonna try - and if nothing else we'll talk about food ;)

If you are dough challenged you could always try using wonton wrappers instead. :thumbsup2 I haven't used them for that, yet, but I have made some really tasting shrimp cream cheese rangoon before.
Becky and I have used wonton wrappers for ravioli before, and we've concluded that the texture is wrong. However, if you fry the ravioli (I've also made pierogies) in butter after boiling, they taste better.

I was going to ask how to do this - can you deep fry them if you make ravioli with wonton wrappers? Or are you stuck with a pan fry or bake? (you know us southerners like stuff fried :thumbsup2 )

Hi, everyone! I'm back! It has been quite a few days. Settle in and I'll tell you about it.

Of course Kyle had me in tears during his acceptance speech. He thanked his coaches, teammates, his Dad & God, then he stopped and paused. He kinda teared up and looked directly at me and said "I thank my Mom the most. If you look up the word dedicated in the dictionary you would see my Mom. She has dedicated the past 17 years of her life exclusively to me and I love you so much Mom".....I LOST IT......:sad1:

I don't have kids yet - but this was still such a sweet story. One dreams of being a great mom and I hope one day I too can be proud of the mother that I was and the child that I raised. You are very special! :angel:

First, though, I have to make 2 dioramas with the twins. They have to research an animal and make a diorama of the habitat. Leslie chose a zebra and Mary chose a penguin. Shouldn't be too difficult to make an igloo out of sugar cubes, right? Wish me luck!!!

Definately good luck with that...I'm not sure I could ever pull it off...

Lindsay (or anyone else who has made the spaghetti and meatball stoup) - what kind of cheese do you use in your meatballs? I'm thinking parm. What do you recommend?

Rachel Ray makes a Mozzarella Stuffed Meatball that I've tried. It turned out really good - just wrap your meatball mixture (that has parm cheese in it too) around a cube of mozzarella and simmer the meatballs in your spaghetti sauce until they are done. Even DH liked it (that says something!!)

Neat idea- I see you have two twinkie recipes in the OP. :thumbsup2 I am doing some research and looking for elk recipes. I found some on the web but are there any tips or tricks this non-hunting city gal should know? any experience?

My grandma used to make the best venison casserole but I never paid attention.

I checked in at the right time!!! I am soo excited to hear that Greg is home on leave!!!!:yay: :yay: The kids will be sooo excited to have Dad home!! What a wonderful surprise for them and Laura....and all the rest of her wonderful family!!;)

Sheryl--Poor Alexis...something is wrong and we need to figure this out! I can't even begin to imagine how frustrated you all are. Please know that my prayers are in full swing for our little Iron Chef!:hug:

Kat--Oh goodness....my eyes filled with tears and my heart with joy! What a wonderful young man you have raised. He is just as proud of you, as you are of him. A mother and her son....what can I say.....there is just something special with that bond:hug:
Please let him know that I am so very proud of him, and that I could not have a better role model for Ross...he just loves to hear what else is new with Kyle.....(and sammie;))

OK---Ross just let me know that he left a paper at school.....so right now that mom/son bond is an annoyed one with me, ;) I am off to haul is forgetfull tail back up there for it...........Hmph---I better get told I am dedicated from him by senior year as well, :rolleyes1

TigerKat- I too sat here crying when I read your post about your son. My daughter had Senior night this year for Basketball and did the same thing to me. She was Captian and the only senior on the team they called her out to the middle of the court where she presented me with flowers and then I heard over the loudspeaker a message that she had recorded for me. Right in the middle of the basketball court just before the start of thier last game. NO PLACE TO HIDE!

Quick question re: Laura and Becky's Moms Eggplant Sticks...

Do you eat them as is or do you dunk? I think I will serve it with ranch. My guys and I are dunkers...TIA!

Although I haven't made the raviolli yet I have deep fried when I used them to make Shrimp Rangoon. Just have to make sure that the edges are sealed really well.

Tonight we are having roast chicken legs, rice pilaf, and broccoli. I'll have to start getting more creative to keep up with all of you. We have the same things to often. Thanks for the challenge.

Don't worry about your "creativity". Just keep popping in and we'll be happy. If you could see my summertime meals you would not even think that :rotfl:.

Thanks to everyone for your kind words about Kyle. I think he matured earlier than most due to him helping me with my parents, he had no choice, there were so many times he had to help with them when all of his friends were having fun. I am a very, very lucky Mom to have such a wonderful son.:cloud9:

Kathy- Kyle is a wonderful young man. You and Johnnie played a major part, he learned compassion, empathy, kindness and commitment from the two of you.

One of my kids asked me last night to come to her school tonight to see her present something she's been working on. So I'm going to that. Once her big brother heard me talking to her about it, he asked if I would come to HIS too, which is the hour after hers at another school.

It's official, dinner is leftovers. I don't feel like cooking so we'll finish what I have in the fridge. Erica went back to the dentist and had her root canal done over a bit :confused3:confused3. She is not going to feel like eating much. No wonder she was not feeling well. Buddy is at the dentist as we speak. He has been there a long time.

What do you want to know about elk? My husband hunts them every year. I love it ground, like hamburger. Very yummy! We also use it a lot in stews and roasts. It cooks just like beef!

Really? just like beef? because I can cook beef. They say it is lower fat and cooks faster. Should a newbie like myself start with something easy like a slow cooker recipe? Do you find you need more salt & pepper or less compared to beef? Will ground elk be like 93% lean beef or even leaner?

Dinner was simple. boiled potatoes, asparagus and beef with gravy. I took a can of beef chunks in broth, added a can of beef broth and thickened it with cornstarch and water.

Tomorrow night is Drunko and I am taking a tuna spread and crackers.

Tuna Spread

1 can tuna, drained
1 8oz package softened cream cheese
1/2 chopped red onion
Salt and pepper to taste

Mix together the night before you serve it.

I'm sitting here listening to the tornado sirens - we're waiting on a HUGE storm to come through. I still have power so of course I'm DISing!!

Big news on my job front - our pastor is leaving. I have known for awhile but it wasn't public knowledge until this afternoon so I was waiting to post it. He has a great opportunity but it's yet ANOTHER saga to go through.

We ended up with BBQ takeout. It was tasty.
