Here is a picture of last night's dinner--Zuni Cafe Roast Chicken. This is one of my favorite ways to serve roast chicken. I think I posted the recipe in the old thread.

Carissa was so loved!

Since there was nothing much we could do for the family, Alan came back to us, and we continued with our vacation. It was hard to break the news to the kids, but in a way, I think that dealing with our pet's death the week before really prepared them.

So, there's my story. I'm glad to be home, and looking forward to some normal cooking in the next few days!

Sounds like a cool art teacher! I was pleasantly surprised with Liam's mask. The art teacher came up to us and introduced herself. She showed us Liam's art and explained what they were studying. It was Northwest Native American folk art. Liam was completely uninterested, however. As soon as he saw his mask hanging, he was ready to leave. Somewhere deep down...maybe deep, deep down...he was happy we went.



This really sounds like a UTI to me, Sheryl. Sometimes they do clear up on their own. If you can get her to drink any cranberry juice (I know...I know...) that can help.

Laura, When he's older, he'll remember all the times you guys showed up for every little event! He may not show it now, but that's cause y'all are such good parents he just takes it for granted.:thumbsup2

I have been pushing the cranberry juice & anything else I can get that child to drink. I think that's part of the problem, she just doesn't drink enough. When Chris took her into the ER, the 1st time, she was dehydrated & had not been vomiting or having diarrhea.

It was very nice but long......there were two guest speakers and about 10 kids who were being honored for various sports as the athletes of the months for Feb, March & April.

Of course Kyle had me in tears during his acceptance speech. He thanked his coaches, teammates, his Dad & God, then he stopped and paused. He kinda teared up and looked directly at me and said "I thank my Mom the most. If you look up the word dedicated in the dictionary you would see my Mom. She has dedicated the past 17 years of her life exclusively to me and I love you so much Mom".....I LOST IT......:sad1:

Kathy, That's the most mature words I have ever heard from a 17 year old! I don't know what you & Johnny did to raise such an impressive young man, but you sure did it right!! :worship:

Sheryl- I don't know if this matters but last year Kady had a lot of pain and would not urinate. She said that she hurt. She really could not say where the pain was coming from so I took her to her pediatrician. He ran all of the tests and they all came back negative but he told me to buy an antifungal cream and use it on her twice a day. He also said to "soak" her in the tub because it would help her. Anyway the pain went away soon after we used the cream. She also had an accident, she never even felt that she needed to go, I think that she had been in so much pain earlier that she could not distinguish what the pressure was. Keeping her in my prayers.

Nancy, One of Alexis's teachers stopped me this morning. She asked me how extensively they checked her for UTI & kidney problems. She said that when she had the accident yesterday, she felt that Alexis didn't even realize it was happening. She said she had this totally surprised look on her face.
Was that anti-fungal cream was over the counter?

She seems to be doing better. She hasn't complained of pain or run fever for 2 days now. But she is sleeping more & seems tired and is cranky. This morning she had eaten all most all of her waffle & drank her juice, I went brush my teeth and came back and she had head on the counter & had fallen back asleep! Chris said she got in bed on her own last night & asked her to come read to her, by the time Chris got to her room she was already asleep. Not like her at all. Chris never heard from the dr. yesterday, she is going to call again today.

I was tired last night & forgot to take pictures. I stuffed the artichokes with a mix of breadcrumbs, parsley, mint, lemon juice & zest, olive oil, egg, feta cheese. I also added chopped chickpeas to add some fiber & make it a little healthier. It was really yummy & went great with the grilled lambchops.
 
Becky, that chicken looks amazing! I hope you do not mind that I post the recipe. QUESTION: I do not know if I like currants...can they be subbed with raisins or cranberries?

You know, my kids thought they hated currants, until I made some oatmeal with currants for them. Now they request currants instead of raisins in everything. I put them in oatmeal cookies, in soda bread, etc.

I would think that you could substitute raisins or cranberries for them, though. Ought to be good!

I'm so sorry to hear about all of Alexis's troubles! I'm praying that the doctor's can put their finger on what's wrong, really soon! Give her a hug from all her WFD aunties and know that we are all praying for her!

We are still on spring break here, so I've got all the kids home with me. I'm hoping to convince them to help me tidy up the house, but I'm sure that will go over like a lead balloon!

Dinner tonight will be Balsamic glazed chicken, broccoli and brown rice. If I'm feeling up to it, I'll make something for dessert. I didn't do much cooking last week, so I'm itching to get into the kitchen and do some damage!

First, though, I have to make 2 dioramas with the twins. They have to research an animal and make a diorama of the habitat. Leslie chose a zebra and Mary chose a penguin. Shouldn't be too difficult to make an igloo out of sugar cubes, right? Wish me luck!!!

WFD tonight; I am thinking shrimp of some kind..my mom is coming over when i get out of work to go for a nice long walk with me and i assume have dinner too..its BEAUTIFUL out there today in MA...so we must make use of the good weather while we have it! :)

Oh definitely! I think golden raisins would be especially delicious. I reread the recipe as I originally posted and wanted to make the following comments about last night's chicken: 1. I did not add any of the extra olive oil. I tossed the bread with about 1 tbsp. of it, and sauteed the garlic etc in about another 1 tbsp. It was certainly moist enough--I did add some extra defatted pan drippings. 2. I can't get my oven to let me roast at 450 for all that time. It starts smoking like you would not believe! I think I got about 20 minutes at that temp., and then I cooked it the rest of the way at 400. It still only took one hour.

Tonight John has a client dinner at Mortons (again! This client is so weird. he only likes to eat at Mortons, and he gets the same thing to eat every time!). I am making one of two possible pasta recipes--either asparagus penne carbonara, or penne with peas, shrimp, and basil.
 
Lindsay (or anyone else who has made the spaghetti and meatball stoup) - what kind of cheese do you use in your meatballs? I'm thinking parm. What do you recommend?

I used an antifungal cream from CVS. You can look in either the first aid section or by the foot care. Whenever I think she is getting a UTI i start putting it on her.
 
Glynis- my daughter's class just studied penguing; they learned so much. They took a field trip to New England Aquarium to see them- the penquin exibit was closed for renovations! When I make meatballs, I like to get thick slices of provolone, then cut it in cubes. That way you get pockets of cheese. Now I want meatball subs and steak subs- so many choices.

I think I'm going to get wanton wrappers to make nutella ravioli and fry them up soon, but make the dough for traditional ravioli. My husband's surgeon wants him to gain 20-30 pounds, that should help.

Tonight we are having roast chicken legs, rice pilaf, and broccoli. I'll have to start getting more creative to keep up with all of you. We have the same things to often. Thanks for the challenge.

Thanks to everyone for your kind words about Kyle. I think he matured earlier than most due to him helping me with my parents, he had no choice, there were so many times he had to help with them when all of his friends were having fun. I am a very, very lucky Mom to have such a wonderful son.:cloud9:

One of my kids asked me last night to come to her school tonight to see her present something she's been working on. So I'm going to that. Once her big brother heard me talking to her about it, he asked if I would come to HIS too, which is the hour after hers at another school. I'm not sure I can go to both; DH plays basketball and the dogs are locked up until I get home.

But I'm at least going to hers since she asked and I said yes.

If I feel up to it, I'm going to finally make the chicken parmasean with spaghetti.
 
Just a little thought, we are at 250 pages! Doesn't that mean cut off time? :confused:
