Shovan- Thanks for the ravioli recipes. I'm going to borrow my MIL pasta roller and work on them next week. It's my daughter's school vacation and I thought it would be a fun project.

I have seen you can use wonton wrappers, but I've always wanted to make them from scratch. And I have a baking and pastry degree, so it would feel like cheating. I would like to try them for a weeknight meal though.

Lauren- the balsamic veggies smell so good, I'm just waiting for the chicken to finish so I can dig in

Hey all just want to post tonights recipe as it was yummy and easy too!!

Sage-Rubbed Pork Chops with Warm Apple Slaw

*For the chops*
1tsp of dried sage
1 large clove of garlic minced
salt
ground pepper
4 bone in chops 3/4 inch thick
olive oil

*for the slaw*
2 tsp olive oil
1 large onion cut in half then sliced thin
1 large apple ( I used a granny smith) cored and coarsely shredded
1/2 tsp dried sage
1 bag of slaw mix
2 tbs cider vinegar
salt
3/4 of a cup of chicken broth

rub the chops with the spice mixture and brown in the olive oil for about 2 min per side, and remove from pan.
Add the other 2tsp of olive oil to the chop pan and add the apple, onion and sage. Cook stirring a few times until golden brown and soft, about 5 min. Add the slaw mix, salt and vinegar and cook until the slaw mix begins to soften, just about another 5 min. Add the broth and return the chops to the pan, putting them under the veggies and apples. Cover and cook until pork is done about 5-7 min more.

This is sooo good and good for you (it has to be right it was in diet and nutrition magazine!) It tastes like an adult version of the Brady Bunches "Pork Chops and Applesauce":)
 
Hi, everyone! I'm back! It has been quite a few days. Settle in and I'll tell you about it. Feel free to skip if you want to.

First of all:

Sheryl - I'm praying for your princess. How scary not to know what's going on!

Newbies - Welcome to our family! It's great to see new faces popping up!

Ok, here's the ride I promised you:

Friday night, I took Alan to a restaurant for his 40th birthday. His family were all going to be there. On the way, we stopped at the hospital to visit his niece, Carissa. She'd been put back in the hospital and her prognosis wasn't looking too good. We visited with her, and we could tell that it was very bad. She has Down's Syndrome, and is a real ray of sunshine. She would smile at everyone, and never complained about being in pain. When we saw her, she was crying, and really looked like she was in pain. The doctor's found some kind of fungus in her lungs, along with about 22 years worth of food that she has been aspirating all her life.

After our visit, we went to the restaurant and had a great time. There were a bunch of guys there in drag, with their buddy who was getting married. My SIL asked if they would come over and sing to Alan. It was hysterical! I've never seen my husband turn so red!!!! I've got a picture. I'll try to remember to post it soon!

The next morning, we loaded up the van to take my mother home. It was an uneventful drive, and we got her home safe and sound. We relaxed the rest of the day, and visited with my brother and his family. So much fun! My dad returned from his trip to Turkey and Greece that night, so it was fun to see him and catch up a little before we all collapsed into bed.

Sunday morning, we woke up to the phone ringing. It was Alan's brother, telling us that his sister was asking everyone to get to the hospital right away. Carissa's internal organs had all shut down, and they didn't expect her to last very much longer. We were 4 hours away, and knew that if we had to pack up all the kids we'd never make it in time. Alan dressed quickly, and took off. He called when he got to the hospital and said it was so sad! Carissa was being kept alive on machines, and they were trying to hold out until her brother could get there from London. After about 3 hours, they decided that it wasn't fair to Carissa, to keep her alive like that. They all surrounded her bedside (there were 22 people with her), and sang all her favorite hymns. The doctors unhooked her from the machines, and about 2 minutes later, she slipped away, very peacefully. Alan said that it was a beautiful thing to see, even thought it was very sad. His sister is really having a hard time (understandably), but feels at peace with everything.

Her funeral will be on Tuesday morning (it's Spring Break here, and her folks wanted to give her friends time to get back so they can attend). It will be sad, but beautiful! Carissa was so loved!

Since there was nothing much we could do for the family, Alan came back to us, and we continued with our vacation. It was hard to break the news to the kids, but in a way, I think that dealing with our pet's death the week before really prepared them.

So, there's my story. I'm glad to be home, and looking forward to some normal cooking in the next few days!
 

Laura, Wow, you have alot going on today! Let us know how Liam's artwork is...I remember seeing Andrew's work for the first time...I had the same reaction. Now his stuff is starting to resemble things. Their art teacher is crazy about the Beatles so not too long ago they were listening to the Beatles and drawing yellow submarines. Sounds like fun, right?

Sounds like a cool art teacher! I was pleasantly surprised with Liam's mask. The art teacher came up to us and introduced herself. She showed us Liam's art and explained what they were studying. It was Northwest Native American folk art. Liam was completely uninterested, however. As soon as he saw his mask hanging, he was ready to leave. Somewhere deep down...maybe deep, deep down...he was happy we went.

I really think something is going on in the urinary tract that's not showing up in the tests.

This really sounds like a UTI to me, Sheryl. Sometimes they do clear up on their own. If you can get her to drink any cranberry juice (I know...I know...) that can help.

I really like what the school does, they have an all-night co-ed chaperoned party in the gym complete with breakfast buffet, games and great prizes, for free. The only requirement is they arrive immediately after the prom and they have to stay until 8AM.:thumbsup2

A lot of schools around here do that as well. I think it is great. I hope you had a wonderful time tonight.

Arrghh...there was more I wanted to respond to, but I forgot. Plus, it's time for Idol. I will catch up to everyone else tomorrow.

My dinner was an Italian sub. And if you think today was bad...wait two weeks! :faint:

dinner tonight was actually very yummy and VERY weight watchers friendly!
i cooked a frozen package of artichokes in a saute' pan until tender and then mixed it with 2 packages of Laughing Cow garlic/herb cheese and a little bit of mozzerella. I had to zap it in the microwave a bit to melt all the cheese..it was really good...sort of reminded me of that super high call spinach/artichoke dip..but this one, split in half was about 85-90 cals each! and only 1 pt ( because of the high fiber of the chokes)
We also grilled chicken breasts i had marinated in 1 tsp olive oil, lemon juice and our parsely and thyme. And I also used up the two little red potatoes i had and baked them....altogether it was about 7 pts a serving!

ok..must go watch the American Idol results show...:)

Please know that my heart and prayers are with all of you during this time. She sounds like she was a beautiful girl with a wonderous spirit. How lucky you all were to have been blessed to have had her in your life!

He is too! I know it was really hard, but it meant a lot to him to be there at the end.

I picked up popcorn chicken and a java chiller from Sonic on my way home from church. Their popcorn chicken is really good - real chicken and no slimy chewy parts.

Good Morning All,

Haven't been here in a while and wanted to check in. If I tried to fill you in I would use uo 100 pages on my own!. Last night was marinated steak don't rememebr the exact recipe now but can post it later, it had Ginger, garlic onion, soy, honey. Summer squash and zucchini on the grill brushed with Italian dressing and a grilled onion hollow out the middle add beef bullion and butter, wrap in foil place on grill 350 for 45min-1 hour.
Tonight is Burgers and Broccoli Salad. Broccoli, Bacon, Onion, Grapes, Mayo, Sugar, vinager.
Can you tell spring has FINALLY hit NH!

DH took today off to do more yardwork. Luke and I are going to my niece's softball game. It is suppose to be in the 70's today.

WFD- DH requested burgers. He would eat them everyday this time of year if I let him. Portabella Swiss burgers with fries, and tomatoe and onion salad.
