Wendie -- I hope Ross feels better. I just read Empire Falls (really an excellent book!) so that's how I know about the mud season.

Lauren -- I hope you are feeling a little better this evening.

I wish you were my neighbor. Around here I am the only one toting out cocktails. Oh well, it's a tough job but someone has to do it.......

Any time you want to come up, you are more than welcome. I didn't end up making the margaritas...everyone had too much going on, including me because Caili had ballet...but we will another night.

My grill -- to my complete surprise -- did turn on and stayed on. So I made grilled salmon with maple glaze, grilled asparagus, and potato salad. I made Caili a baked potato.

The citrus chicken was amazing! I doubled the recipe and I am glad that I did because we have leftovers. Kady said it was the best dinner she ever had, and from a kid who has never, not ever touched stuffing that is high praise. "You know who" was not commenting too much, but I figure "Nan's Nemesis" is going to be choking it down a lot :rotfl2::rotfl2::rotfl2:, becasue if Nan's Angel likes it I cook it. ;) I think this one is Glynis's, and it is a keeper.

Lauren- you are running too much. It is really catching up with you. Take it easy, the errands and the dust and the rest will be there tomorrow.

Laura- that salmon looks delicious!

I am making the citrus chicken this weekend! Sounds great.

I changed plans; I'm having major throat issues and am just really uncomfortable. I didn't feel up to beating the crap out of the chicken so I just warmed up a jar of vodka sauce and boiled some noodles. It was smooth, and really easy, but meatless so DH will probably make a snotty remark when he comes in ;)
 
Laura--Empire Falls is based on the town I live in......yep a defunct Mill Town, the mill is less then a mile from my neighborhood...this is also where the movie was filmed---Paul Newman right in our little home town...........

Lauren and Aimee--Hope you both feel better soon!

Nancy--My prayers are with you tomorrow....will be anxious to hear from Marisa tomorrow.

Parent/Teacher for Ross went great..straight A's....just needs to lower his voice a bit when being chatty....my child chatty?!!?;)

Ross isn't going to school today as he feels awful with is cold and is achy(sp?). I don't know if he will make his tournament tomorrow or not.

Supper tonight is no clue at the moment, I will check back in this afternoon to see if we have an update on Nancy and maybe by then I will have a clue as to what we will be eating tonight.

Dinner last night ended up being leftover Mexican from DH's lunch. Alexis just wanted to be held all day. We spent the afternoon on the sofa & watched Enchanted, cute movie. Her Daddy is off today, so I'm off today!

Don't know what's for dinner. I have asparugus & artichokes, so I'll have to pick one. Probably steak or salmon on the grill.

I am going to make chicken parmasan and spaghetti tonight, with garlic bread.

How do y'all pound your chicken down? I have tried a few ways and become just really frustrated - plus that chicken is slippery!

I meant to ask yesterday -- was there much damage on your side of DFW? We had lots of wind, tree limbs down, a huge batting hit-back net blown over and moved 10 feet from where it started out, but not significant damage and we didn't lose power. So many people in Plano and Fort Worth are still out of power this morning. :sad2:

Glynis--I have smiled all day thinking of you and your mom buying crocs, :) Mind if I share a mom story of my own?......
Last summer my mother ended up in the nursing home for rehab, her feet were swollen, and she couldn't get into any shoes but her slippers, the P/T were worried that she would fall while learning to walk again, so I went and bought her a pair of crocs in her favorite color bright Purple!! Well, she was so tickled, and loved them and the therapists were so thankful as it was a perfect shoe to have her in. Fast forward to this past Dec. after we had left florida, and we were in N.C., my dad sent me a picture he had taken with his phone of her out walking with her walker, and though it is a bit blurry you can make out those bright crocs anywhere.....this is the last photo we have of her.
This is why you and your mom croc shopping made me happy all day, so thanks---I hope you two had a wonderful time!!

We did have a wonderful time! I'm so glad it brought back a good memory for you!

My mom is a true Croc lover! She wears them everywhere! Even to church. Her doctors love them, as they are perfect for diabetics! We bought her a new pair of black ones, plus some Mammoths to wear around the house and at the dialysis center!
 
Hey All, Quick check in. I am doing well for the fundraiser. My cousin is having a fundraiser for the her organization that is in my ticker...Her son was born with HLHS. The fundraiser is done by reviewing local businesses. I am on a roll! Wish us luck and if you are interested in reviewing anything, let me know.

I hope Ross and Aimee are feeling better...and that Nancy is doing well. I am feeling better too.

I believe this is in the old thread...these are found on the creative boards and I even think its the first recipe that Lindsay ever shared so it should be in the first thread. Does this make sense? I am in a rush can you tell? ;)

Last night I just made panini. No picture because you have seen them about 100 times.

I have not figured out dinner tonight, but I am planning on test driving a new cocktail. This morning I combined some mango nectar, lime juice, and vodka, and put it in the freezer. I am hoping it will freeze solid and that I will be able to scrape it into crystals and pile it in martini glasses--kid of like a sorbet, or a granita. I don't know if it is going to work but I'll keep you posted!

Sorry I've been hit or miss the last few days! So much to do, so little time! Anyway, I had to tell y'all about the new recipe for tilapia that I did last night. It was so good. Here's the recipe:

Easy Day Baked Tilapia

1 C. sour cream
2 Tbsp onion soup mix
1 1/2 C. bread crumbs
1/4 C. butter, melted
2 1/2 pounds tilapia fillets
Parmesan cheese

Mix the sour cream and onion soup mix in a shallow bowl. Pour the crumbs into another shallow bowl. Cover the fish on both sides with the sour cream mixture, then roll in the bread crumbs. Place in a greased 9 X 13 baking pan. Drizzle with melted butter. Put in the oven for 12-15 minutes at 425 degrees. Sprinkle with parmesan cheese and return to oven for another 3 minutes or until cheese is melted and fish flakes easily.

This is my notice that my family and I will be out of town until Wednesday night. It's spring break here, and we're taking my mom home, and then going to tour some of the national parks in our state. Our kids have never done that, and we have some gorgeous places here! I'll try to remember to take some pictures for y'all!
