I have to have a turkey burger!
I took one out of the freezer for dinner on Friday and forgot about it, so I need to eat that tonight. I made a really good veggie dish last night.
Tomato Veggie Bake
2 Chayote squash, peeled and cubed
2 med. sized zucchini, peeled and cubed
8 oz. Cremini mushrooms, cut in half
garlic (I used some roasted I already had in the fridge, use how much you like)
2 cans diced tomatoes
Salt
Pepper
Italian seasoning
Mix together in a large baking dish, bake at 375 for about 45 minutes until the zucchini is soft. The Chayote will remain firm.
