Shovan that looks good. I will have to start taking pics of meals too. Reminds me of the "Rate my lunch" thread. :)

The bread and dip turned out good but we had so much food there it all didn't get eaten. Hope Mom works Sunday night, I can send the leftovers with her. It was a great night with good food, dancing, singing and Jello Shots!:woohoo:
 
I don't want to speak prematurely but I think she's going to recover from this. She slept most of the day and she just walked outside to go potty and she seemed to be walking "just a little drunk" if YKWIM. She ate a little bit and she got semi-excited when she saw the mailman. I'm so afraid of another seizure I calmed her down right away. I know she has a long way to go but Mom will be helping her all the way.:goodvibes

As y'all can tell we were able to eat outside but eventually we were run in by mosquitos. It was nice & cool though and a pretty good evening consider I was home & cooking. So with cold meds this morning, a new haircut, a mini massage, and a great new cocktail to finish the day, I'm feeling MUCH better.

We ended up at Blue Mesa - do any of y'all have them near you? I have no idea if it's a chain outside of our area or not. After that we hit Starbucks. It was a nice night out with the girls.

Kathy- Hope your Sammie is on an upswing. I have 2 furbabies and I would be devastated if something happened to them.

Shovan- The scene is right after Shelby comes back from her honeymoon she is at the Seafood Festival, she walks up to Annelle & Truvy's stand and they offer her some "house wine of the South".

WFD tonight- Not cooking, the boys are going to Mamaw's and hubby and I are joining friends out for Tapa's then afterwards we are going to a comedy club.
 

My DD can quote lines from all of her favorite movies. One day my Mom was so furious she could hardly speak except to let me know that she was more then displeased with Marisa. She told me that Risa said "She is evil and must be put to sleep." and could not believe she would say something like that about her Aunt. (the one I talk about all of the time lately). Anyway she was practically foaming she was so angry. I asked Marisa why she would say something like that. You guessed it, Steel Magnolias: "She is evil and must be destroyed". My Aunt was used to saying whatever ran through her mind and had annoyed Marisa when she ran her errands.

I felt badly that my Mom was upset but I could see those ladies in the beauty shop talking about the other one ( I never remember names or actual lines) and almost fell off the chair laughing. Marisa had been complaining to Donny, who had refused to go over until my Aunt promised not to tell him what she was wearing under her housecoat ( Mom, if a 22 YO woman was descriptive it would be fine, an 80 YO woman telling me she is flying free is just gross") My Mom was "listening in" and only heard part of the conversation and then scrambled it up from there.
 
Sheryl--thanks for thinking of matthew. He's better this morning, after his claritin/benadryl cocktail. The dr. said that it might be a cold, but I'm more convinced it's allergies. Yesterday we didn't play outside and then the rain washed much of the pollen away; and he's much better today. However, the dr. did say that if the symptoms continue, or severely impact daily life, that we'll need to send him to an allergist for testing. I just can't bear the thought of submitting a 2 year old to that. We'll stick with the drugs for now

Kathy--How's Sammie today? We had a cocker growing up that had a seizure disorder. WAs the scariest thing the first time it happened. He ended up having to be medicated

Last night's dinner was okay. The sushi was amazing, but hte hibachi, not so much. Good thing we went for the show and not the food. Did have a great cocktail though--a sashimi tini (absolut, midori, sake)

Not sure about dinner tonight--might make shrimp and grits. Will update as I figure it out!
 
Good morning!

Sammie seems to be improving by the hour.:yay: :dance3: :cool1: Johnny is taking her to the vet in a bit for an evaluation, while I run to the grocery store.

I'm going to be missing Kyle's game today as they are playing out of town and there's no way I'm leaving my sweet girl alone all day. Kyle understands and is OK with it, Johnny will be there.

WFD - Velvet Shrimp over pasta, spinach salad and garlic bread.

Steph - Kyle has suffered terribly with allergies since he was about Matthews age. It always starts the same time every year and is controlled my prescription allergy meds. His pediatrician never even mentioned an allergist, thankfully.

Today I am cleaning my basement. I got up early and got my muffler fixed. So far my day is on track.

I think maybe take out tonight but we will see what I accomplish today.

HAVE FUN!!! I have the Disney jones going pretty bad right now. We are starting to think about when we are going down for food and wine. It seems so far away!

The sausages in the front are chicken apple, and they went wonderfully with the fondue. We liked them even more than the bread!

Tonight I think I am making some salmon. It will depend on how it looks when I get to the store.
 
Janice- I'm sorry that I missed that Mathew was not feeling well. Allergies are terrible this time of year and really do behave like a bad cold or bronchitis at times. Hopefully his can be treated with meds.

Kathy- YAY!!!!!!!!!!!!! No way would Kyle feel bad that you stayed home with the little one. My niece offered to cancel her trip (yes, Debbie who lives and breathes softball and was accompanying Kim's team as a coach) when Riley was falling over. Riley is over 90 pounds and she was afraid that my sister could not get up and down the stairs alone. I am always surprised when people are surprised that we all treat our pets like family :confused3

I haven't heard fro Gail this morning. She bought a prime rub roast, and is planning French onion soup to start, squash fans, garlic mashed potatoes, some other veggie, and I have no idea what for dessert. She bought sushi ( I don't know how that is going to be) Her DH has an amazing wine collection so I think she is going to be fine.
 
I'm not going to bore y'all with Sammie updates after this. The vet was amazed at how good she is doing, they told Johnny that they didn't really expect her to recover as she had multiple seizures/strokes. They said she must be getting some good Mommy lovin.;)
 
Help please!! Becky or Laura posted instructions on how to cook the perfect filet a while back; I know you seared it in a pan then put it in the oven. I want to do that today but can't find the specifics. If anyone has that, or if Becky or Laura's out there, could you please re-post?

Last night I took some boxed brownies and chopped up a snickers bar and some reeses cups and put them in the batter. OMG they wee sooooo yummy

Was at bb practice this am and then A has a birthday party. Dinner will be cheeseburgers and Glynis Ranch Potato Salad...

I then have to run and pick up raffle tickets tonight at 7pm...:confused3 What a stupid time! Its for Little League...they are $50 each and we have to sell 2. The prizes are a Mustang or a Harley...still $50 is crazy! Do all little leagues do this?

I haven't had time to read back...hope all is well!

I'm glad Matthew is feeling better today. Usually, they don't do allergy testing on children that young. Liam only got tested this past year, even though we knew long before that he had seasonal allergies. There isn't much the allergist can do anyway...especially if multiple things are involved...Liam's action plan is basically meds and try to keep the windows closed during allergy season. The allergist did say to make sure he takes the Claritin every day during allergy season (April-October here) even if he doesn't have symptoms because it works better. You could check with Matthew's pediatrician on that.

Help please!! Becky or Laura posted instructions on how to cook the perfect filet a while back; I know you seared it in a pan then put it in the oven. I want to do that today but can't find the specifics. If anyone has that, or if Becky or Laura's out there, could you please re-post?

Dinner tonight is roast chicken, mashed potatoes, mashed turnips and roasted asparagus. I'm making chocolate soft serve ice cream for dessert.

DH is going to Dallas today and tomorrow to visit some friends that are in town. I have to work tomorrow, obviously, so I'm (happily) staying put. I'll throw something together for myself. I wish I had bread for a tuna sandwich...

Stephanie, My DD was put through the test at 2. It was awful. Then I changed pediatrician & the new doc told me that the testing was a useless on a child that age! I was really p.o'd on that! Now Alexis is a different story she really needs to be referred to an allergist or ENT and her ped. won't! The poor kid is always stopped up, coughing & itching. This time of year it just gets worse. I'd be glad that Matthew has a pro-active doc. but I would try to hold off as long as possible on the allergy test.

Aimee & Becky, here the recipes for the halibut & the cocktail :
Roasted Halibut with Grapefruit Fennel Salsa Recipe courtesy Giada De Laurentiis


1 cup ruby red grapefruit segments (about 2 grapefruits)
1/4 cup grapefruit juice
1 teaspoon grapefruit zest
1 fennel bulb, trimmed
1/4 cup extra-virgin olive oil
2 tablespoons pitted nicoise olives, halved
2 tablespoons chopped fresh parsley leaves
1 teaspoon salt
1/8 teaspoon red pepper flakes
4 (6-ounce) pieces halibut
1/4 teaspoon ground black pepper

Preheat the oven to 375 degrees F.
In small bowl combine the grapefruit segments, juice, and zest. Halve the fennel bulb lengthwise, thinly slice and add to the bowl. Add the olive oil, olives, parsley, 1/2 teaspoon salt, and red pepper flakes. Stir to combine.

Meanwhile, place the fish on a parchment-lined roasting dish. Sprinkle with remaining 1/2 teaspoon of salt and pepper and bake for 10 to 12 minutes depending on thickness.

Gently transfer the fish to a serving plate. Top with the grapefruit and fennel salsa and serve immediately.

The changes I made: I pan-seared the halibut in olive oil instead of roasting. The salsa tasted great until I added the zest, then it was a little bitter. So I added a splash of limoncello liquor to sweeten it. Next time I won’t use the zest. I didn’t have nicoise olives, I used calamatas. Followed the recipe otherwise & this dish looked and tasted like a really swanky rest. meal!

Grapefruit Limoncello Margarita (DH has suggested calling this a Vespa!:laughing: )

1 shot Limoncello liquor
1 shot Anejo or Reposado Tequila
3 shots fresh squeezed grapefruit juice
splash of Rose Sweetened Lime Juice

Add ingredients to shaker half full of crushed ice. Strain into chilled salt rimmed glass. Enough for 2 small drinks.

Becky the original recipe was equal amounts of each liquor & lemon juice for a Limoncello Margarita. With the original recipe it was too strong & then too sour with more lemon juice, so I added the sweetened lime juice. It was perfect with the grapefruit juice!

Hi, I got Laura's message so here is what I do:

Preheat oven to 400 degrees.
Bring your meat to room temperature.
Heat a heavy pan (I use cast iron) over high heat until smoking.
Add a little oil (not olive, it will burn) to the pan.
Add steak, sear 3 minutes. Flip, sear 2 minutes, then place in oven.
Cook until steak is done to your liking. (I don't know how you like your meat so can't really give times....for rare, it is usually about 6 minutes or so)
Remove pan from oven, place steak on cutting board, let rest 10 minutes before slicing.
