Question: my husband picked up the ingredients for the cake for me. He got unsweetened strawberries. Are they ok or do I need to go get sweetened?
 
INOW our insurance company is really ticking me off. They received the police report on Kyle's accident and remember the guy that hit Kyle was an off-duty cop. Looks like he had some influence on how the report was written, Kyle is now at fault and he was hit in the rear.:confused3

Katy, I know you must be frustrated but you should definitely file a complaint. Your premiums will go up and it will stay on Kyle's records for years--when he gets his own policy is will be SOOO expensive.

Nancy -- I have been meaning to ask how your night with Timmy went. At the store today, I bought a loaf of garlic bread to go with my spaghetti and meatballs. Normally, I would make my own, but in the interest of time, I thought it would be easier to just throw something in the oven to heat. It wasn't until I was making it that I read the ingredients, and it was loaded with all the terrible things (partially hydrogenated soybean oil, anyone??). I made it anyway, and served it. Liam's comment? "Mom, this garlic bread is GREAT!" :sad2:

You could make a simple syrup--half water, half sugar, heated until the suagr melts and then cooled, and then macerate the strawberries in that.

Here is a photo of last night's dinner. John wanted to try something not soup so I made eggs floretine. I tried a new way of making hollandaise (microwave) because I did not feel like dragging out the blender. It was a mistake--the sauce broke and was too thin. Oh well, it tasted good:

It's back to the foolproof blender method from now on.

Good Morning all,

Had the last of those leftover vegetables:yay: last night with pork chops. Tonight is going to be steak on the grill and MAYBE ohana potatoes, nothing to fancy. I have some taco meat that I was thinking about making into a taco pie/casserole for tomorrow night. I know I have seen a recipe somewhere, gotta go find it.

Morning everyone! I tried the Italian Roast Beef in the crockpot. It took me 2 nights to get it done, but it was great!

No, my crockpot is not that slow. I started it Tuesday just before lunchtime knowing I had barely enough time for it to cook adequately. About 10 minutes into the process, we lost power. OK, into the fridge it went, because I had no idea how long the power would be out. One hour later, power was back on. I decided to restart the roast with a backup supper plan in case the roast would take too long. Things were perking along just fine until the power blinked 3x around 3:30....yup, that meant we were going to be without electricity for a while....it lasted two hours! :headache: So much for my plan!

Between Tuesday evening & and a reheating last night, the roast was finally cooked! It's a keeper.

I attempted the Liam sisters' eggplant sticks recipe as a side to go with our roast beef sandwiches. They came out beautifully, but I had one problem - the eggplant was bitter. UGH! I do not have luck with eggplant. Any secrets on getting rid of that bitterness? I really want to try these again when I can get home-grown eggplant this summer.

Cut the eggplant into sticks and then toss them with kosher salt. Leave to drain in a colander for about one hour, then rinse, dry, and proceed as usual. The salt sweats out some of the bitterness. Also, the older your eggplant is, the more bitter it will be.
 
Quick check in as I am at school today.....this is my quick break while the kiddos are at recess, then I have to go sit while my crew eats lunch as we are working on manners..........

I felt crummy last night so I made the boys burgers, tater tots and cukes and I had a piece of toast. Tonight Kris and I have some errands to run while Ross is at karate so I will make some french toast when we get home. It is pouring here so that sounds good for tonights supper.

Kathy--I hope that your computer issues are taken care so we don't have you missing for long!!!
I have to agree with the others and say that you need to at least make a complaint in to the police dept, as well as contacting your insurance.
It is very hard to get an accident be someone's fault 100%, but this is not a 50/50 situation. I also feel that you need to contact a lawyer as this was an accident with an off duty officer, and you need to be protected from his ability to impede the report. I know that you have had a rough month, but this will follow you and Kyle for a very long time. If you at least get something on record it might be time well spent someday.
I had one accident that was found 100% on the other person as he admitted it, and it was witnessed by many. It was a very cut and dry situation, Kris on the other hand had an accident that should have been 100%, and was found 90% and when we looked into fighting it the state insurance dept, and our lawyer said that they hardly ever see 90%, to take it and run.

Lauren--I am so sorry that you all are so under the weather...please take it easy and keep us posted on how you all are feeling!

Nancy--I am so happy you had such a nice visit with Timmy!!! I am so proud of your soldiers!! The best thing my brother ever did was join the Army right out of high school.....he retired an E-9 after 23 years and is an amazing person because of everything they taught him. He was a bit of a lost soul and looking at him today you would never know it!

Today is Maundy Thursday so we have a service tonight at 7pm, which I am leading in. DH will just get something on his way home (probably Taco Bell...). I guess I'll grab something, too, or eat a TV dinner when I get in. *shrug*

Under "normal circumstances" I would. But since Katrina EVERYTHING down here has changed. It would probably take 2 years for an investigation into the details of the report, if we were lucky to get an investigation at all. They're too busy down here dealing with the out of control murders and gang violence.:sad2:

I have to agree with you, things don't work down here like they used to! We're like a third world country since the Big K!

Glad you finally got that roast cooked!!! I've had trouble with bitter eggplant too! I'll have to use Becky's method next time I fix eggplant. I find it really noticeable when I grill them.

Tonight's dinner needs to be something Mexican, or something that calls for avocados! I bought a bag of avocados at Sam's, of course they all ripen at the same time!

I went with a 3rd option..Stuffed peppers...Now my mother hates rice so we always had our with elbow pasta..I still make them this way
 
Here's a pic of last night's dinner, Salmon with guinness sauce, haricot verts w/ spiced pecans and potato leek soup with the addition of Dubliner cheese & bacon on top.

I marinated the Salmon in evoo, a little cajun seasoning, garlic, a little lemon juice & sherry. Then I pan-seared it in butter/evoo until the skin was crispy. I topped it with the guinness sauce & then finished the salmon under the broiler. This is going to be a keeper for cooking salmon, one of the best I've tried.

Jenny, It's Potato & Leek Soup posted on page 168. I have to warn you, there's nothing light about that soup! The recipe called for all heavy cream. I used 3 qts. half & half & one quart heavy cream. It took a long time for the potatoes to cook in the cream without boiling it over. But it was worth the wait! Super thick, creamy & delicious!!!

Lauren had posted the Guinness Sauce with the recipe for Irish Brown Bread as the bread dipping sauce! It was really good with the bread, but I think worked even better on the salmon! It was easy, equal amounts of guiness & packed brown sugar. Just cook it low & slow until it really reduces & the bitterness of the guinness just dissapears.
 
Zipuzee on the Nola thread, just tipped me off about an article in our local paper.

Louisiana State Tourism Dept is talking with Disney about hosting a kiosk at the Food & Wine Fest this year!!! I hope they work it all out, I'd love to see how Disney would highlight our state's food! :goodvibes
