Today it's leftover cheesy chicken pasta, salad, and bread.

Cheesy Chicken Pasta

3 boneless, skinless chicken breasts
2 cans cream of chicken w/ herbs (if you can't find them w/ herbs, just use the plain)
2 cans broccoli cheese soup
1 lb. any short-cut pasta (I use penne or mini-penne)
1/2-1 cup white wine, if desired

Place chicken breasts in the bottom of crockpot. Season with salt and pepper. Combine soups and spread evenly on top of chicken (when combining the soups, I grate some garlic into it. It adds a nice flavor, but feel free to omit). Pour wine on top of soup mixture.

Cook for 6-8 hours. Remove chicken and cube/shred. Add back to crock pot and stir well.

Cook and add pasta (I combine directly into the crockpot. Makes life easier).

Ann this is something like the one she makes. She uses whipped cream instead of cool whip and does not add coconut, although there are variations with coconut as well. She makes this cake into a layer cake using two square pans, I think she makes two mixes.

Ingredients:
1 white cake mix
2 small instant vanilla pudding mix
2 cans well drained, crushed pineapple
1 large Cool Whip
Coconut
Cherries, chopped



Directions:
Prepare and bake cake mix according to directions using a 10 x 15 inch greased jelly roll pan. Cool completely.

Prepare vanilla pudding mix and spread on top of cake. Add well drained pineapple spread on top of pudding and follow with Cool Whip. Sprinkle with coconut and (or) cherries if desired. Refrigerate until firm.

Dinner tonight will be Shepherd's Pie. It's quick, easy and comforting. Mary is still home with a fever, so I wanted something that she would like, and would taste good to her!

Here are my 2 favorite Easter desserts. By the way, I made the Pina Colada Cake last night, and DH raved about it again! He loves it!!!

Pina Colada Cake

1. One box white or yellow cake mix or coconut whichever your like.
2. One small can of Sweetened Condensed Milk
3. One can of Cream of Coconut Drink Mix (usually found where the alcoholic drink mixers are but no alcohol in it.)
4. One can crushed Pineapples (Can be any size depending on your pineapple likes, also can be optional.)
5. One Large Container Cool Whip
6. Shredded Coconut (Optional.)

Cook the cake according to the directions. While it's still hot, combine the Cream of Coconut and Condensed Milk in a bowl. Poke holes all through the cake and pour the mixture into the holes. Use all of the mixture and just smother the cake with it.

Put the cake into the fridge and let it cool very very well. When cool or cold drain the crushed pineapples and spread them over the cake. Put a little or a lot depending on your likes.

Then smother the cake in the Cool Whip. Top with shredded Coconut!!!! Serve Cold!


Strawberry Daiquiri Cake


Cake:
1 package of Supermoist White Cake Mix
3/4-cup water
1 package (0.14 oz) of strawberry Kool-aid mix (powder)
1 tablespoon grated lime peel
3/4-teaspoon rum extract (optional)
1 10 oz carton of frozen sliced strawberries thawed and undrained.
3 eggs

Lime Frosting:
1 tub vanilla frosting (I like the pour able kind best)
2 teaspoons grated lime peel

1. Heat oven to 350. Grease bottom of 13x9 inch pan or line cupcake pan with liners. (Will make 24 cupcakes)
2. In large bowl beat all cake ingredients with electric mixer on low for 30 seconds, then beat on medium speed for an additional 2 minutes scraping the bowl occasionally.
3. For cake cook 30-35 minutes. For cupcakes cook 18-25 minutes. Both are done when toothpick comes out clean. Let cool for 15 minutes before icing
4. Mix remaining 2 tablespoons of lime peel into icing and stir. It helps to heat the icing for about 20 seconds in the microwave first, and makes it easier to poor or spoon onto the cake.
5. Top with fresh, sliced strawberries.

Note: I put strawberries on the pieces I serve so the left over ones don't go bad. I also keep leftovers of this cake in the fridge, it keeps a lot better.

No beans today. I had a dentist appt scheduled for this AM so I figured the po-boys would go together quickly later. Had to cancel the appt, still not feeling well.

Has anyone decided on their Easter menu yet?
 
:confused: I need some ideas. I want to make a pasta dish with Italian sausage, peppers and onions, but I think it needs some sort of sauce to pull it all together. I don't want to do a heavy tomato sauce though. Any ideas?

I'm hosting Easter dinner this year. It will be the first holiday meal I've had at my house in several years. My mom or aunt usually do the big family dinners, but my mom has to work and my house will be much easier for her to get to after work. So far all I know is I'm cooking a ham. I haven't decided on what else yet. I think I'll wait to see what everyone else wants to bring before I decide what to make.
 
I found a recipe for ham with key lime glaze that I think I'm going to try. I'll probably do the Ohana potatoes to go along with that. I always make Jello beans for my kids, and a strawberry spinach salad. We'll also have rolls with homemade jam. I'm thinking of doing brussels sprouts since my kids have decided they like them, or if not, I'll have to come up with some other veggie. Dessert will be Strawberry Daquiri cupcakes. Not to mention all the candy the Easter Bunny will be bringing in their baskets!

I'd love to hear some of the other menus!

so tonight is school night for me, so it will be leftover bertuccis pizza during class.hahah.
BUT tommorow i am hoping to make a yummy greekish chicken dish...with homemade feta/yogurt sauce and tabouli..all that fun stuff..i know someone made some lovely looking platter of greek goodness a little while ago..so i am off to investigate this thread and steal ideas ;)

Easter...hmm. I think we are staying home this year. Andrew will be by his Dad's then come home around 6ish. Tom and I may go to brunch then have a late dinner with A. I was thinking:

Ham
Turkey
sausage stuffing
Ohana potatoes
curried sweet potatoes
green beans
corn...maybe Aimee's corn dish

Sounds like alot for the 3 of us but I won't have to cook all week! :thumbsup2

I have done this before...you could make a tomato broth out of a little chicken broth and tomato sauce (or some of the pasta cooking water) or add some olive oil to coat the pasta and the juices from the sausage peppers and onions...lots of garlic and cheese!

I thought this sauce recipe sounded good. I love any pasta with sausage, peppers and onions.

Not sure what's for dinner. I have to grocery shop on my way home so it may be something from the deli at the grocery store or fast food. I hate cooking after unloading all those groceries, you know?

She seems to be doing better. Her fever is gone, and she's bouncing off the walls, wanting to know why she can't go play at a friend's house. Hopefully, she'll be back at school tomorrow.

She and Leslie will turn 6 on the 21st, and I really need to do some birthday shopping. Hard to do when they are both home sick!
 
We had salad and french fries for dinner. DD has been home sick today and I just could not get off my butt to make dinner, but I did have to cut a lot of veggies.;)

No idea about Easter! It is DS' 9th Birthday and my parents are going to be here. I should really be thinking about the menu!
 
Afternoon all--

If you could all spare some prayers.....my Godmother passed away last night after a very brave fight with leukemia(sp).7 weeks from my own mother passing....My poor Godfather and my own father......bestfriends and widowed within weeks of each other.....my heart is broken.....We are all at peace that she no longer suffers, yet the loss is overwhelming. I always called them "aunt" and "uncle" though there was no blood relation.....that never has mattered to any of us. My poor "cousins" I spoke with them today, and at least I could offer them a shoulder that understands what it is like to face the day knowing you no longer have a mother....One of their daughters is trying to get a flight home as she lives in Australia...please pray that she has a safe flight.
Feels like being sucker punched in the gut..........

When Ross turned 10 last year he informed me that he was no longer a child but a "pre"teen....I almost fainted, lol!! I am so lucky that when we are alone he still likes to cuddle on the couch. Hope you have a great time tonight with your BABY!!!

Aimee--I am glad that things went well yesterday, I hope that you can finally have some less stressfullness (is that a word?!!?) at work.

Kathy--I hope you feel better soon!! Do you think you should go to the DR's? Get some rest my friend!!

Ross picked the supper menu........steak tips in sbr chiplote sauce, tater tots and glazed carrots.........now I know why I don't let him pick more often...we just had this last week except with cous cous....
