I already have the crockpot going with my cheesy chicken pasta. I am going to add some broccoli florets to it later, and we'll have a salad and garlic bread to go with it.

Stupid question - how does one make sticky rice?

We buy Thai glutinous rice at a local Oriental market. To cook it, you have to soak it in cold water for about an hour, then steam it in a bamboo basket covered with a damp towel. It is really sweet and sticky. Once it's cooked you can use your hands to make rice balls. The rice just gloms together and is wonderful! We dip it in an Asian hot sauce, and it's one of my favorite things! Sometimes we'll add some coconut to it as it's steaming, but I really prefer it plain. When I was pregnant with Katie, it was the only thing that I could keep down, so for 5 months, that was all I ate!
 
Thanks for all the prayers ~ the vote went well and I still have a job.

DH is golfing so I told him to pick us up something for dinner on the way home. I came home intending to grocery shop and instead slept for a few hours on the couch. Nothing better than a Sunday afternoon nap.

I guess I missed something you posted earlier, but I'm glad that things worked out for you. You are always in my prayers! Take care!
 
Alan cooked dinner for me tonight. I've had a headache for the last 5 days. I get them every month (TOM related, ick!), and I just didn't feel up to cooking. He made some teriyaki chicken stir fry with cabbage, pineapple, and orange peppers. He made another batch of sticky rice to go with it, so I was a happy camper!

Now, I'm veging in front of the computer, trying to convince myself to go to bed. 5:00 comes awfully early!
 

WFD...Ron is working his usual double shift today so I do not have to cook. I am planning on just reheating some leftovers for myself. Luke is such a fussy little guy, he will probably have some meatballs. This afternoon I am meeing one of my SIL to do some party planning errands...I am hoping to twist her arm and go out for a quick bite and maybe a drink!!!!!

Cheesy Chicken Pasta

3 boneless, skinless chicken breasts
2 cans cream of chicken w/ herbs (if you can't find them w/ herbs, just use the plain)
2 cans broccoli cheese soup
1 lb. any short-cut pasta (I use penne or mini-penne)
1/2-1 cup white wine, if desired

Place chicken breasts in the bottom of crockpot. Season with salt and pepper. Combine soups and spread evenly on top of chicken (when combining the soups, I grate some garlic into it. It adds a nice flavor, but feel free to omit). Pour wine on top of soup mixture.

Cook for 6-8 hours. Remove chicken and cube/shred. Add back to crock pot and stir well.

Cook and add pasta (I combine directly into the crockpot. Makes life easier).

HI everyone! Is it Monday already???????? I do not adjust well to time changes, I think. I remember laughing at my MIL years ago when she said it would take her a week to adjust and here I am, once again, eating my words.

Gretchen- I am so sorry for your loss. I understand why you are not as sad as you expected to be. My Aunt is 95 and she is just waiting to join the rest of her family so when she is called I will miss her but I will also be happy for her, if that makes sense.

Stephanie, did I miss something recently? It looks like you have a larger household to me.

Aimee- I'm glad to hear that things went well. I hope that the circumstances continue to improve. I bet your nap felt good, I spent Sunday afternoon on the couch as well. Buddy started the fireplace and that clinched it for me, I hated to head down the mountain after feeling so cozy under a blanket.

Glynis- you have a handy guy when you are not feeling well. My DH would tell me to lie down and then he would call Marisa to pick up dinner :). remember when he used to try to cook when I was working and in school after. I would pull into the driveway and the grill would be smoking because he had burgers going full speed ahead :rotfl:. And chips....because I like chips. Somehow that was balanced, meat, starch and chips are potatoes right????Like a veggie, right?????

Last night Marisa and Erica make some sort of Hot Pocket with ham and cheese and a salad. They said it was 4 points and it was very good. Buddy had leftover pork chops and some salads from Saturday. I am out all day long today and dinner at my Aunts so I am not sure what to do for supper tonight.

Ann, I will look in my Holiday recipes for a dessert but I know in my family we have a Hawaiian cake that Buddy's cousin makes that is wonderful.

It is a white cake with some sort of creamy filling made with pineapple, cream cheese and whipping cream. I think. If you want the recipe I'll call her. I never make it, she knows that my family loves it so she makes it for me :thumbsup2

This would be right up my alley, I am not much of a chocolate lover, but DH sure is!
Don't go out of your way for the recipe, but if she shares it...I would love it at some point! It sounds nice and light.

Nancy--yes, my dsis and neice have moved in with us temporaraly. She is going through a messy divorce, and we're letting her stay with us until she gets back on her feet financially.

Lindsay--Thanks for posting the Kahlua cake again! That recipe is to die for!!!

WFD tonight I think is going to be chicken and rice casserole. It's nice to be cooking for more than just DH and myself (since the kids don't like my cooking):rolleyes:

Dirt Pudding
1 large package of oreos, finely crushed (can use vanilla sandwich cookies too)
2 tubs cool whip, defrosted
2 sticks of butter, room temp
2 blocks cream cheese, room temp
2 cups milk
2 small packs of instant vanilla pudding
***I have made this with low fat ingredients and it comes out just as good! :)

Mix all ingredients together well (EXCEPT) cookie crumbs. In a pan, layer half of the cookies, then all of the pudding mix, then remainder of the cookies.

That is it! Refridgerate for at least an hour. Decorate the top to your liking...worms, flowers, little umbrellas, etc. I have also seen this served in a cleaned (of course) flower pot lined with foil and flowers.
 
I just made this and wanted to share!

2 cups flour
1 cup sugar
1 tsp. baking soda
1/2 tsp salt

1 stick margarine melted (I use butter)
2 eggs
3 mashed ripe bananas
3/4 cup walnuts

Mix dry ingredients together. Mash bananas, add eggs and melted butter. Combine wet and dry ingredients use wooden spoon and mix by hand. Add nuts. Bake at 350 for 45 minutes. Recipe makes either two medium loaf pans or one large.

This freezes great.

My EX-husband made this once for Thanksgiving and brought it in a flower pot with a sick looking fake flower. My six older brothers picked on him severely for it.You brought back the memory and I am cracking up at my computer.:lmao: I should have known then to run!

My DH leaves all the cooking to me! Thanks for the recipe and laugh.
