Kathy - I understand about not wanting to crowd Wendie, I'm just so concerned about her. I'm thinking of sending her a card so that she has the option of responding or not. Let me know what you think.

I think a card would be nice. I sent one and I know a few others from this thread have PM'd me that they were sending cards as well. I sent an e-mail earlier today, hoping that maybe Kris might respond. I'll let you know if I get a response.

I think you'll like it...it was pretty easy...I guess you can call it another variation of Mexican Lasagna. I had never bought that green stuff before but it tasted exactly the same and it iliminated that whole step of making the green sauce.

I guess you could also use corn chips but I tried to lighten it up and used reduced fat cheese.

Tomorrow's dinner is your Saucy Steak. Can't wait!

Do you think the corn chips would work? I think my family would actually rather that.

Don't expect to much from the Saucy Steak, as I said when I originally posted it it was Kyle's request. Don't get me wrong it's a great quick, easy go-to meal but nothing I get really excited about. My guys love it.:love: When I think of steak, I want a thick, med-rare filet.:lmao:

Becky- I hope that DH is not too too sick. I am getting a little worried about how germs travel.....this thread seems contagious ;)

Laura- My DD did the same thing when Erica was sick. I sent her over with a care package, she called and she left it outside the door. They were in an apartment with interior hallways, the poor sick thing needed to crawl out to get her soup. Give Cailli a hug from me.

Gretchen- There is something that heats the block on my truck. I don't really understand it but the fuel is thick and so it is hard to start if this little warmer thing is not plugged in. You Southern Gals don't need to worry about these cold Hearted Beasts up here! Now Buddy was calling my poor truck names this morning but not he was not feeling the love:laughing:

Now your Mom had it right as well. The last thing that you need is to have to look after her if she gets sick. You have had enough!

Aimee- I don't know what else to say but that I am thinking of you and I'm glad you are fortified with some "comfort" food. :hug:

Angel- A wedding???????? Care to share any little tidbits? It's been a while since we got to enjoy some good wedding planning as Lauren is now married. I also have a set-it-and-forget-it and I love it. The only problem is that it is too big to stay on teh counter so if I tuck it on the shelf I tend to leave it there.

Spalady- If my DH had the choice to have your sandwiches or DD's quesadillas he would have been knocking on your door. I make him a very happy man when we have any kind of sandwich here ;)

Sandy- I have been looking at that recipe and drooling but I am not grilling her for a while. I am so jealous of you Southern Ladies right now

Sheryl- Are you going back and forth both days? I think that you will get a handle on what traffic is like on Saturday. My DH is not a patient man and his BP was sky high at that time. Picture him trapped in a rental car from Friday night with my Daniel and Marisa and his brother. It is a blizzard and they are heading out on a road trip and he hats to drive anywhere. The kids, both young adults, are packed with pillows, food, music games...and they are in rare form. You see they amuse my BIL :rotfl:. I was at work and when people asked me if I wished I was there I could honestly say I would rather chew glass then be the car with that crew.

They got into Orlando late, they had run into traffic problems so they were delayed. By then when Daniel is checking to see whose BP is the highest Buddy was consistently winning. Up early and off to Daytona the nest morning, again with my crew. By now he is desperate because he knows that he has to go home with them and they are wired for sound :rotfl::rotfl:

Dan had shaved his head for the occasion and by the time the race is over he is resembling a lobster and a tad grouchy. My BIL is remembering why he doesn't join road trips with Buddy and Marisa is now on her cell phone begging any airline to take them home. Anything to remove the shade of purple that Buddy has for permanent coloring. They score a flight from Atlanta and my frugal (cheap) DH does not even ask what a last minute one way trip fro 4 costs and he even springs for the hotel. Or how much more it costs to ditch the rental care in Atlanta. He just says book it!!!!!!!

My BIL is afraid to fly but he was more willing to fly than stay in the car with the caged animal that I married.

Now you remember that my darlings have packed all kinds of goodies to keep them amused for a round trip?????? They are given boxes at the checkin and when I pick them up they look like bag people as they cart their stash off the plane. Daniel is blistered from the neck up, Buddy is as stiff as a board, Gary is still cackling :rotfl2::rotfl2::rotfl2: at Buddy, and Marisa looks sleepy. It seems that she is not. "I slept all the way there and all the way home, why would I be sleepy????? :confused3:confused3"

I have never gotten to go to the 500 and I think this may have something to do with it. :dance3::dance3::dance3:

One more thing and I promise to stop babbling. Dinner tonight was quesadillas made with Glynis Lime chicken nacho mix. It was unbelievably good! This is the only dinner my DD "cooks" and I love it when she makes them.

Janice, We LOVE OKW. We have only stayed there and SSR out of the DVC...I love how the rooms are so much bigger. I did try for AKL for our next trip but it was not avail. I think I was spoiled staying at OKW first and then SSR. Don't get me wrong, I love SSR but having a real dining table, more closet space, a laundry room and a full size balcony is wonderful!

Kathy, I am really looking forward to the steak...I love me some sauce!

I love freezing the pesto, and then adding a cube of it to my tomato sauce. :thumbsup2

He also informed me, when I told him that Caili has the flu, that he never got his flu shot! :scared1: :headache:

MareQ -- What types of recipes do you like? DSis and I make tons of fish and scallop recipes (not all of which are healthy) and we even have a bunch of shrimp recipes, despite my son's shellfish allergy. Let us know what you want, and we'll repost...a lot of them were on our other thread :sad1:

Caili was doing a bit better this evening. With the Motrin, her fever was down to 99, so she was feeling more like herself. She also ate crackers, toast and a popsicle. Unfortunately, there isn't anything to give her except a steady dose of Motrin or Tylenol for the fever and plenty of fluids.

My dad did deliver my stash of supplies, but it was too late to start roasting the chicken. I ended up making corn chowder for me and fish sticks and fries (:sad2: ) for Liam.

ETA: Lauren, I LOVE the Desert Pepper Company salsas. They make a salsa con queso that is my favorite.

Hey all--wow, ya'll were a chatty bunch today--what was it, like 6 PAGES since I last read! Jeez! Anyway, we had pizza again tonight. Remember, DH is out of town and I am not just cooking for myself. Would make way too many leftovers! Tomorrow will more than likely be mac and cheese with nuggets. Yippee.;)

Becky--I am amazed that even though you're under the weather you still have come up with a yummy dinner for tomorrow night.

Laura--Glad to hear that Caili is feeling a bit better. I didn't have the flu and was out for the count for a good 5 days. Doing much better today; even had to head back to work

Lauren--just noticed your ticker and mine are 2 days apart??? What day are you heading down south? I'll be there from June 19th-23rd (just girls, no husbands or kids!!!!!)

I couldn't find my recipe for the crab stuffed mushrooms. I'll look for it and post it tomorrow night. Here are some of the rest:

Lemon Grouper (or other white fish)

1 tbl flour
½ tsp Lawry’s seasoning salt
1 - 1 ½ lbs grouper fillets (Cut into 4 to 6 portions)
1 tbl EVOO
1 ½ tbl butter
6 - 8 oz sliced mushrooms
¼ cup white wine
1 tbl capers
1 ½ tsp roasted garlic
2 tbl lemon juice

Preheat large saute pan on medium-high. Mix flour and seasoning salt in large ziplock bag. Add fish to bag and shake to coat. Add EVOO to pan, then add fish, cooking 3-4 minutes on each side or until nearly opaque.

Move fish to edges of pan. Add butter and mushrooms to middle of pan, cook 1-2 minutes, stirring often, until mushroom begin to soften. Stir in remaining ingredients nad squeeze half of lemon juice into pan. Cook 3-4 minutes more, or until mushrooms are soft.

Spoon sauce over fish, reduce heat to low and simmer 5-7 minutes or until sauce thickens.


Basil-Alfredo Shrimp (or scallops)
2 tbl EVOO
½ tbl basil pesto
½ tsp roasted garlic
1 lb shrimp, peeled and deveined (or scallops)
1 cup Alfredo sauce (I use light, from the refrigerator case in the grocery)
8 oz fettuccini or linguine, or similar pasta.

Prepare pasta according to directions and keep warm.

Preheat large saute pan on medium-high heat. Place EVOO, pesto, and garlic in pan. Stir in shrimp and cook 3-5 minutes, or until they just start to turn pink, being careful not to overcook. Stir in Alfredo sauce and reduce heat to low. Simmer 2 minutes or until sauce is heated. Serve sauce over pasta.


Maple Glazed Salmon
6 tbl maple syrup
4 tbl soy sauce
1 ½ tbl grated fresh ginger
3 tsp cornstarch, dissolved in 2 tbl water
4 salmon fillets

Preheat oven to 450.

Whisk together the syrup through cornstarch solution until smooth. Place fish skin side down in a shallow baking pan. Pour syrup mixture over the salmon. Bake 15-18 minutes until fish flakes easily. Baste with glaze halfway through cooking.


Creole Shrimp Bake
1 cup chopped green pepper
1 large onion, chopped
1 tbl butter
1lb grated sharp Cheddar Cheese (I use 2% milk cheese)
2 lbs raw shrimp, cooked and cleaned
1 (6 oz) can sliced mushrooms, drained
1 tbl Worcestershire sauce
3 cans (10 ¾ oz) tomato soup (I normally use 2 ½ cans)
3 cups cooked rice
Salt and pepper to taste

In a large pan, saute green pepper and onion in butter until transparent. Combine with half of grated cheese and remaining ingredients. Season with salt and pepper. Place in a 3 quart casserole and sprinkle with remaining cheese. Baked uncovered at 350 degrees for 45 minutes.


Sausage stuffed mushrooms
Mushroom caps (about 24 medium or 12 large), washed and dried
1 lb Jimmy Dean sausage (medium or hot, to taste)
8 oz cream cheese
2 oz shredded Monterey Jack cheese
2 tbl shredded parmesan cheese

Preheat oven to 350 degrees. Brown sausage in skillet and drain. Combined drained, cooked sausage in a mixing bowl with cream cheese and monterey jack cheese, mixing well.

Stuff into caps and sprinkle with parmesan cheese. Bake for 20 minutes.

I had a husband to turn to during the worst of the clean ups and say "the kid or the room?". You are the only one on duty running back and forth with medicine and attention and jello, etc.

I guess I had better go to sleep and hope the jello fairy visits my fridge. Caili is expecting purple jello tomorrow.
 
Well, I went to make my cuban pie and it turns out the girl at the store didn't give me my tomatoes, so we had chinese food. Guess it's back to the store for me again tomorrow.

This is the first time I've thought that maybe I just can't handle staying here... I have no idea how we'd sell our house in this market but we may just to take a loss and move on. I feel very defeated.

(btw - even when the opportunity arose, no shots were taken at me directly. Thankfully.)
 
Tonight is my husband's monthly Geek meeting so I think I'm going to order pizza. BUT........

Scott wasn't feeling well yesterday and right now he's in bed with a fever. Poor baby. I will probably still get a pizza for dinner.

ETA: I am going to start a new index in the first post since we have so many recipes in this new thread :) I am still working on the blog though. Hopefully I can get it up and running soon (and hopefully they will bring back our old thread soon!)
