Kathy, great minds think alike with the chicken tonight...angel hair sounds good but we had pasta last night. Next time I'll try that.

Dinner tonight will be broccoli cheddar soup with biscuits or breadsticks. We are in the middle of another snowstorm, so soup sounds good to me!

I have a Grand Marnier slushy as my wallpaper on my computer. Also you need to rethink your initials for Tom and Andrew :rotfl2:

I have no idea what I'm fixing for dinner tonight. I've been working most nights and last night at 10:30 I realized I didn't have anything defrosted and the fridge is bare. It needs to be simple and quick, and fairly bland. All three of the kids have come down with a bug and 2 of the 3 are now throwing up.

What a lovely morning we had. DH is taking the 2 vomiting children to the Dr. Our first therapist of the day called this morning at 6 to say she would be 2 hours late, so my baby is going to my mother's for the morning. So we spent the morning cleaning up after the 2 sick kids and packing a bag for H. After cutting some corners from my morning routine (no leg shaving, half of my makeup, only half drying my hair), I managed to make it to work only 15 minutes late which I think was pretty darn good considering. I look lovely, but I'm here.

I'm thinking chicken soup for the kids and alcohol for the adults. Any better suggestions? ;)


I hope everyone starts to feel better soon. The flu bug seems to be very active this season.
 

Here are some photos from dinner last night. I had to cook the shrimp I bought for the super bowl party and forgot to make, so I went with my fallback simple grilled shrimp recipe. Here they are, marinating in garlic, olive oil, parsely, and breadcrumbs:

I also made swordfish. I cut one steak into four very thin slices and then stuffed it with breadcrumbs, parsley, olive oil, and salt and pepper. Then I made a sauce from white wine, tomatoes, thyme, onion, garlic, red pepper flakes, olives, capers, currants, and parsley, and baked the fish in that. Here it is just out of the oven:

This was a Mario Batali recipe and it was very good!

Tonight I have lots of leftovers to use up—some of the super bowl party’s chicken skewers and the Thai beef salad, plus a little bit of the roast pork from Friday and a few shrimp from last night. So, my plan is to make two kinds of fried rice—one with beef, pork, and shrimp for DH, and one with chicken and shrimp for me. I also am going to make some baby bok choy and some teriyaki tofu.

Kady is not "meeting expectations" in gym either.

I'm glad Caili's not alone! I understand Caili's mark. She is just terrible at most traditional sports (even Kathy's Kyle couldn't improve her throwing!), which is a combination of lack of skill and lack of interest. She is so athletic in other ways though that I find the mark really amusing.

Sounds like a good plan to me. I hope your kids feel better soon and don't share with the rest of you.

Lauren -- I hope your boys get better soon. If Tom is anything like Greg when he is sick, you will need a drink too.

It is really pouring rain here today, so right now, I am thinking soup for dinner...maybe cheddar potato. If I get ambitious and go to the store, the menu might change.

Yeah for Fat Tuesday!! Tonight is pancakes, of course!

We actually have a pancake supper at church tonight and the staff serve, I usually claim the bacon so I can snack between "customers." I will eat a pancake or two as well.

Beads are flying around the office this morning - but no worries, nothing is getting flashed ;)

WFD? I'm making chicken fajitas using Chili's marinade.

Chili's Fajita Marinade
1/4 c. fresh lime juice
1/3 c. water
2 T. vegetable oil
1 large clove garlic, pressed
3 t. vinegar
2 t. soy sauce
1/2 t. liquid smoke
1 t. salt
1/2 t. chili powder
1/2 t. cayenne pepper (optional)
1/4 t. black pepper
1/8 t. onion powder

Well, we are back from the doctor. Andrew has a bad cold and the start of an ear infection.

Janice, What's wrong with my T & A? I love my T & A! ;) :lmao: Yeah, I guess its pretty bad that I referred to my guys like that...its me being lazy I guess.

Well, you have all made me want mexican, so I just went to the store and bought the rest of the ingredients I need to make the Chilaquiles from the Food and Wine festival. That was one of our favorites. I think I'll make it Thursday. The only thing is I am not making the green sauce; I bought green salsa for that.

OK, off to medicate Andrew and marinate my pot roast for tomorrow. I got my Le Creuset pot and want to use it! :woohoo:

I changed my mind on dinner. Beck gave me the leftover fondue from the other night, so I am making baked potatoes, broccoli and bacon and I'll pour the fondue over it. I'm making an arugula salad too.

Let me see if all ears has it...

They do not have it but here it is:

Chilaquiles:

1 # boneless chicken breast
1/2 cup thinly sliced onion
1 garlic clove crushed
salt to taste
2 1/2 cup water
10 ounces corn chips (I am going to use corn tortilla)
1 1/2 # shredded monterey jack

Green Sauce (I am using green salsa)
2 #s tomatillos, outer skin removed
3 jalapenos seeded
1 cup water
3 tbs evoo
1/3 cup finely chopped onion
3 garlic cloves minced
1/3 cup cilantro
salt to taste

Garnish:
sour cream
sliced green onion

In a sauce pan, place chicken, onion, garlic, salt and water. Bring to aboil and simmer for 20 minutes.

strain and cool chicken, shred it and set aside.

Divide corn chips inton 8 individual ramekins and spoon 1 tbs of green sauce into each ramekin. Divide chicken into each and top with cheese. ***I am going to make it like a mexican lasagna***

Bake in the oven for 20 minutes or until cheese is brown and bubbly. Serve with sour cream, green sauce and green onions.

HOW TO MAKE GREEN SAUCE:

Combine tomatillos, peppers, and water in a pan and bring to a boil. simmer for 10 min. set aside to cool.

blend until smooth.

heat oil in saute pan, add onions, garlic and tomatillo puree. saute for 10 minutes. add cilantro to taste.

Pork Schnitzel
6 boneless top pork loin chops (1/2 inch thick, 1 1/2 pounds), trimmed
1/2 teaspoon salt
1/3 cup all-purpose flour
1/4 cup dried bread crumbs
1 egg
1/4 cup milk
3 tablespoons oil

Place chops between 2 sheets of waxed paper. With meat mallet or rolling pin, pound to 1/8-inch thick. Sprinkle both sides with salt.
Measure flour and bread crumbs onto separate sheets of waxed paper. Whisk together egg and milk in bowl. Lightly coat cutlets in flour, shaking off excess; dip in egg mixture, then into bread crumbs, pressing crumbs to coat.

Heat oil in large nonstick skillet over medium-high heat.add cutlets. Cook until golden brown, about 3 minutes per side.

I serve them with a baby portabella mushroom gravy. (I am going to cheat and use a mushroom gravy package and add a package of sliced fresh baby bellas)
