What's for Dinner Tonight? (recipe index in OP)

Here's the recipe, in case anyone is interested:

ETA: I also added cayenne pepper to the boiling shrimp and again at the end when I added salt and black pepper. The New Orleans girl in me had to spice it up!

SHRIMP AND WILD RICE CASSEROLE
Paula Deen

1 (8-ounce) package wild rice
1 pound medium shrimp, peeled and deveined
2 tablespoons butter
1/2 green bell pepper, seeded and chopped
1/2 onion, chopped
1 (10 3/4-ounce can) condensed cream of mushroom soup
2 cups grated sharp Cheddar
Salt and pepper

Cook the rice according to package directions minus 1/4 cup water. Drain and cool.

Bring 2 cups water and 1/2 tablespoon salt to a boil in a medium saucepan and cook the shrimp for 1 minute. Drain immediately and set aside.

Heat the butter in saucepan and saute the pepper and onion until soft, about 5 minutes.

Preheat oven to 325 degrees F.

In a large bowl, combine the rice, soup, 1 1/2 cups of cheese, shrimp and vegetables. Add salt and pepper, to taste. Mix well. Spray a 9-inch square aluminum cake pan or an 11 by 7-inch glass casserole dish with vegetable spray. Place the mixture in the pan and top with remaining 1/2 cup cheese. Bake for 30 minutes, until bubbly.
 
And don't you love how easy it was to throw together? If you like the dish, you will be making it a zillion times! :)

We had chicken pot pie from Cooking Light magazine. Three of us liked it; my 7 year old doesn't want to eat it since it has mixed up vegetables. So, after 3 bites my husband let him have a cookie?!?!?!?!
 
I grew up off of egg rolls. :lmao: Of course my mom is Filipina and whenever there was something going on she would bust out the egg rolls, except for we called them Lumpia. :thumbsup2

I always make them now and I keep a bunch frozen in the freezer to have on hand.

You say this and don't post the recipe?? I made some sorely lacking eggrolls last week, and I would love a good recipe. :)

Fresh pizza dough at the grocery store?

I guess we are all really into homemade pizza here because all the grocery stores around here carry fresh dough. Some are better than others.

We had chicken pot pie from Cooking Light magazine. Three of us liked it; my 7 year old doesn't want to eat it since it has mixed up vegetables. So, after 3 bites my husband let him have a cookie?!?!?!?!

So he was in charge of bedtime duties tonight? :laughing:

Wendie -- You did a great job on your mom's obit. I am sure she is proud.

Dinner tonight was less than spectacular. I made macaroni and cheese (too cheesy, claimed the kids), spinach, and rolls that I had to serve with a weird, and slightly rancid, butter because I ran out of regular. This was after I spent nearly $400 on my car (and will spend more in the coming days because it needs new tires) and I have a really bad morning coming up tomorrow. I feel bad complaining, since so many other people are dealing with worse issues, but I am completely grumpy and stressed tonight. I need more wine to go with my whine. ;)

Glynis, I made it with a whole chicken that I cut into serving pieces. I bet though, that it would be awesome with boneless meat--for one thing, it would be easier to eat! Picking around the bones in the broth was a little futsy. I would just cook it for less time, though, since the meat is off the bone.

So, I did not make anything I said I was going to! I had to stay later than usual at work, and DH had a doctors appointment at 4 PM. Since his doctor is near my office he just waited for me to get out and then we went out to dinner. It was YUMMY! We split an appetizer of raclette with apples and baguette (basically, melted cheese with apple chunks in it, with baguette slices to spread it on), and then I had a whole redfish that had been slashed along the backbone down towards the belly every inch or so, then coated with a light cornmeal coating, and sauteed, over a roasted tomato risotto. It was so fresh, tender and light. My southern friends, can you believe I've never had redfish before?! It is drool-worthy! I love whole fish, because the flesh just stays so moist and tender. DH had a bone-in monkfish roast with some olives and other stuff (his was good but mine was better :laughing: ) We had a coconut creme brulee for dessert but only managed one bite each.

SO...tomorrow for dinner I am making the carmelized tofu, blasted bok choy, and fried rice. I might even have time to make the egg rolls! :)
 
Hi everyone! I'm in Atlanta at an incredible conference - heard Jimmy Carter speak tonight. Admist the crazyness at work, it's nice to be in this environment.

We ate at a steakhouse here and I had an incredible filet positioned on a portbello cap with blue cheese crumbles on top. SO YUMMY. Served with salad and mashed potatos with (brown) gravy.

Course we ate 5 hours ago and now I'm starving and those pictures are making me hungry!!
 
Tonight it's leftover baked spaghetti and bread.

I don't know what is for dinner yet. I've been busy trying to get my paperwork done. Is it possible for it to multiply on it's own :rotfl:

Just had leftovers last night nothing exciting. We had some wild weather Tuesday night we had so much wind blowing the snow around I could see anything outside. The drive in yesterday morning was slippery I felt like jello when I got in to work. I hate drives like that.

Kathy How are you doing? I'm getting concerned.

Wendie I remember lots of times of reaching for the phone after my dad passed. Give it time, you will have good days and bad. I hope you have more good days than bad.

Thank you all for taking the time to read Mom's Obit. and for keeping the thoughts and prayers going.

Warning--depressing chatter to follow....sorry
My dad called me last night at 10:30 sobbing.....(I think he had a drink earlier so he was even more emotional) but he had headed down the hall to check on my mother like he did every night before his shower(they have had seperate bedrooms for 33yrs) and he was halfway there before he remembered that she was gone.............it broke my heart......needless to say I cried myself to sleep.
The crematory called today to let me know that she was cremated yesterday afternoon and will be mailed out to me today, I should have her in 4 days they said.........................We all feel a bit better knowing she has been cremated and not just lying there, that was really starting to get to all of us....now I just wait for the package.....*god help me get through that please*.....
I don't know if I am coming or going today......went to see my grandmother and had to take her to the Dr's...she sounded awful and come to find out she has pneumonia..(again..,poor thing). I do hope the antibiotics kick in quick. If you have a spare prayer she sure could use it.

Here's the recipe you wanted:

Lemon Chicken with Pasta

1 1/2 C. uncooked medium pasta shells
1/4 C. dry bread crumbs
1 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper
1 pound cubed chicken breasts
6 tsp. canola oil
1 medium onion, chopped
2 Tbsp. flour
1 C. chicken broth
1/4 C. lemon juice
1/4 C. shredded Parmesan cheese

Cook pasta according to package directions. Meanwhile, in a large resealable plastic bag, combine the crumbs, garlic powder, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, saute chicken in 4 tsp. oil until juices run clear. Remove and keep warm. In the same skillet, cook onion in remaining oil over medium heat until tender. Sprinkle with flour; stir until blended. Gradually stir in broth and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain pasta; toss with lemon sauce. Serve with chicken; sprinkle with Parmesan cheese.

I like to add the chicken to the sauce before adding the pasta.

Well I don't know if this is a good recipe but I'll post it anyways...

these are not the traditional chinese egg rolls with all veggies that you can get at a chinese restuarant... mine have MEAT in it! :lmao:

I don't have an actual recipe I just "eye ball" it and everyone has their own way of making it but this is how I make it.

1lb of ground beef
1lb of ground pork
soy sauce
salt and pepper
1 green bell pepper diced finely
a few carrots diced finely
1 onion diced finely
a couple cloves of garlic
a bag of bean sprouts or you can use half a medium sized cabbage sliced like claw slaw
egg roll wrappers (can get from asian store)

My mom used to add small cubed potatoes in it which was very good as well
My cousin substitued the potatoes for Sweet potatoes.

I leave out the potatoes...

Brown beef and pork.....drain fat
add garlic, onions, bell pepper, carrots, salt and pepper cook until carrots are slightly tender but won't hurt if they are still crunchy
Add bean sprouts and soy sauce to taste (may need more salt and pepper)

Cook until bean sprouts are slightly tender... I like mine to have a little bit of crunch to them.

Then separate the egg roll wrappers and add about a 2 tbsp of filling and roll...
(instead of using water to seal the roll I use the little bit of sauce that has accumulated in the pot from the filling to seal the wrapper)

You can either deep fry these or fry with a little bit of oil til the wrapper is golden brown. Make sure you place in hot oil with the seal part down.

Or you can bake them in the oven... spray lightly with cooking oil first...

I hope that all makes sense... :)
 
DS & I had dinner last night at my parents. My DM sent homemade pea soup home for my DH. Pea soup is not my thing, but he loves it.

WFD- tonight will be pea soup and grilled cheese.

I am just stopping by for a moment and will catch up later. Dinner last night was spaghetti, meatballs and sausage with salad and Italian bread. It was good so we are going to have it again this evening.

Sorry-I am poking my nose in here too;)

Always looking for new dinner ideas and the Paula Deen recipe has me intrigued so I looked at it on her site. Do you, that have made it, use the large Shrimp? I find it a pain to remove the tails whilst eating Pasta? Could you make this with small Shrimp or even Scallops?

Just wondering...

Thanks! I'm definitely going to try this. My kids claim to hate anything with curry in it, but I notice they'll eat it if they don't know it's there. Weird, huh?

By the way, can you tell me again how you make your cheese bread? I need something kid friendly for tonight!
 
DH and I are babysitting 4 of my SIL's 7 children for the next 3 days, so my meals have to be HUGE and very kid friendly for a while. Tonight I'm making a big pot of spaghetti and meatballs and I'll do some cheese bread on the side. Top it off with a green salad that they'll try to get out of eating, and that will do it. These kids never eat anything that remotely resembles a vegetable, so I anticipate a fight on my hands. When they are at my house, they have to play (or eat) by my rules. I may be having kids sleeping at the table if they won't eat their salad.

Bad news is that we don't have school tomorrow, so the kids will be in my house all day! Good news is that I get to go bowling tomorrow, so DH will be the babysitter until I get home at 1:00. Bad news is that he's oblivious to kids mess and noise so my house will be destroyed by the time I get home. Good news is that these kids are scared spitless of me, and will work to repair my home!

Better go "kid proof" my breakables. Talk to you later!

Well my girl was in a good mood yesterday & we made fettucine noodles & ravioli!!! The kitchen was a disaster but they turned out great & we had fun! She's been saying that she wants to be an Iron Chef when she grows up! :cutie:

Glad you are having a good time. You certainly needed the break. I love Atlanta. The restaurants are wonderful and the shopping is great. Too bad I can't really afford either, but it's fun to splurge now and then. I used to visit my brother when he lived there and now that he's gone, it's a much more expensive trip.
