Hi Y'all! (I am often a reader, seldom a poster)

I hope someone here can help me with something.

I made a recipe tonight that called for a small amount of Chipotle Pepper Puree, so I got a can of the peppers in the adobe sauce. I diced them to a puree and mixed in some of the adobe sauce and added it to the dish I was making. (It turned out wonderful by the way!)

My question is what do I do with all of the leftover adobe peppers in the sauce? :confused3 I put them in a small Tupperware bowl and have it in the refrigerator at the moment. But I don’t want them to go to waste. I mean I only used maybe a tablespoon out of the whole can! Any idea on how long they will last in there? Should I freeze them? I hate to be wasteful!

Here is the recipe I made in case anyone would be interested. I am serving it tonight with pork chops and some sort of green veggie that I haven’t decided yet, but it will probably be mustard greens (I know that sounds yucky to most people, but we are from the south... what can I say?).

Mesa Grills Southwestern Potato Salad
Recipe by Bobby Flay

1 1/2 cups prepared mayonnaise
1/4 cup Dijon mustard
2 tablespoons fresh lime juice
2 tablespoons chipotle pepper puree
1 large ripe tomato, seeded and diced
1/4 cup chopped cilantro leaves
3 scallions, chopped, white and green parts
1 medium red onion, thinly sliced
1/2 teaspoon cayenne
4 cloves garlic, finely chopped
Salt and freshly ground black pepper
16 new potatoes, about 3 to 4 pounds, cooked, drained and sliced 1/2-inch thick


Combine all the ingredients, except the potatoes, in a medium bowl and season with salt and pepper, to taste.

Place warm potatoes in a large bowl and pour the mixture over potatoes and mix well.

Season again with salt and pepper, to taste.

(I halved the recipe, it's just me and DH at home these days, there will be plenty of leftovers.)

Tink, Thanks for this recipe! It sounds delicious! After I open a can of chipotles, I seperate them & freeze them, just one or two peppers and some of the sauce. I've had them in the freezer for at least 3 months & they are fine.

Sheryl, no I do not make my dough from scratch. I buy it at my grocery store for $1.29/piece. Sometimes, if I have time, I stop at the Bertuccis on the way to my train and buy a piece of dough from them. Theirs is only 99 cents and it’s already stretched out and relaxed for you, so it is very easy to shape. I don’t often have time to stop there though, so usually my pizza dough is just from the store. (Maybe that’s why my pizzas are always such funny shapes!) I do like to buy it a while before I am going to use it so that it ages a bit. I think that makes it taste better. I wish I could make it from scratch but that is one area I need to work on--anything involving dough or crust from scratch is usually a bust for me.

Fresh pizza dough at the grocery store? or frozen? If it's fresh, I'm still going to be jealous! We really need some better grocery stores down here! If you treated yourself to a KitchenAid Mixer, I can't imagine the great things that would come out of your kitchen!! Believe me, I wouldn't have attempted bread, pizza dough or pasta without it!

This is the link of my mom's obituary that was in the newspaper yesterday, if anyone would like to read it. She didn't want any obit. but we just couldn't let that happen. I wrote it and kept it sweet and simple. My dad called me yesterday after he saw it and told me it was perfect and that she would have loved it. That was nice to hear.............my mother is Nancie Stewart, you have to pick modify search and then pick yesterdays date on the calender

I actually did cook for the first time in weeks yesterday and today for supper...that did feel good to have a bit of normalness (is that a word..is now!) to my day. I figured I could cry and cook just as easily as only crying, lol.

Tonight is Crab Stuffed Chicken Breasts we got from Don's Specialty Meats in Lafayette. We have had them before, they are pretty good, and it's an easy "throw together" meal. I'll probably serve Le Sueur peas with it (gotta have something green!).

We LOVE the stuff from there! Last time we went to Houston, we past it & DH pratically came to a screeching halt on the highway! Have you had that stuffed bread thing they do? I don't know what it's called, but it stuffed with the different smoked meats. Delicious!
 
The recipe for the stew as it basically appeared in the Disney cookbook:

Curried Coconut Chicken Stew

1 chicken, cut into 8 pieces, rubbed with 1 tbsp. curry powder and salt and pepper to taste (I did this the night before)
3 tbsp. canola oil
1 cup onion, diced chunky
1 cup red bell pepper, diced chunky
1 cup potato, peeled and diced chunky (I used sweet potato)
½ seeded jalepeno, diced (I used a whole one)
1 cup coconut milk (I just used the whole can)
4 cups chicken stock
6 tbsp. butter
¾ cup flour (I used 6 tbsp.)
1 cup canned diced tomatoes, drained (I used the whole 14 ounce can)
1 ½ tbsp. curry powder
1 tsp. cayenne pepper
½ cup minced cilantro

Heat the oil in a large pan and sear the chicken until well browned on both sides (it will not be cooked all the way through). Place the chicken aside and drain the oil from the pot.

Melt the butter in the same pan, then stir in the flour. Cook until a roux is formed (I cooked mine for about 7 minutes). Add the curry powder and cayenne, and stir. Add the tomatoes and the chicken stock and simmer until thickened. Stir in the coconut milk and dissolve. Add in all of the vegetables and the chicken, and cook until the vegetables are softened and the chicken is cooked through, about 20 minutes. Stir in the cilantro and serve.

Note: I added a tablespoon of sambal oelek paste to make it even spicier. Also, next time I would sauté the onions in the butter before adding the flour instead of adding them with the other vegetables. I would have liked them to be very tender, and the way the stew is made here they are still a little crunchy. DH liked them that way, but I like my onions melting soft.

Tonight for dinner I am making carmelized tofu, fried rice, and blasted baby bok choy with soy. I was going to make egg rolls too, but I know I am going to get home too late to pull them together.

Do you use a whole chicken or could you use boneless skinless thighs and breasts?
 
I forgot, dinner.. I was going to attempt to make homemade pasta with Alexis this afternoon. School gets out early today. But I just spoke to her Mom & A had a bad night of nightmares last night, so will probably not be in the best mood. I'm out the door to pick her up, so we'll see. If I don't fix pasta, I'm fixing Becky's curried soup!

Last night's tilapia recipe was a BUST! It was horrible!!! I'm not even going to post the recipe because I wouldn't inflict that on anyone!

Right now I have some boneless skinless chicken breast thawing but I don't have a clue what I'm going to do with it yet. :confused:

Ooooo... no, we haven't but it sounds like we should! That will be on our list for the next time!! We have gotten crawfish and shrimp from there too. (And stuffed pork chops but they weren't our favorite, I don't remember why... maybe I didn't cook them right.) Their prices are very reasonable too, 2 stuffed chicken breasts for around $5 is a good deal! We would stop there on Sundays as we made our way home from LSU football games. Sad that is over! We drove by there this past weekend (on our way home from celebrating our DD's 21st birthday) and the parking lot was so full we couldn't get in!

Thank you all for taking the time to read Mom's Obit. and for keeping the thoughts and prayers going.

Warning--depressing chatter to follow....sorry
My dad called me last night at 10:30 sobbing.....(I think he had a drink earlier so he was even more emotional) but he had headed down the hall to check on my mother like he did every night before his shower(they have had seperate bedrooms for 33yrs) and he was halfway there before he remembered that she was gone.............it broke my heart......needless to say I cried myself to sleep.
The crematory called today to let me know that she was cremated yesterday afternoon and will be mailed out to me today, I should have her in 4 days they said.........................We all feel a bit better knowing she has been cremated and not just lying there, that was really starting to get to all of us....now I just wait for the package.....*god help me get through that please*.....
I don't know if I am coming or going today......went to see my grandmother and had to take her to the Dr's...she sounded awful and come to find out she has pneumonia..(again..,poor thing). I do hope the antibiotics kick in quick. If you have a spare prayer she sure could use it.

Lindsey--I hope you are having a better day today.....I do mean it 100% if you need to talk, I am here for you.....I know I have heartache right now, but I will always have time and a shoulder and ear for my friends, no matter what!! Love you!! I send you big hugs!!

Nancy--your words always make me feel stronger, they are so warm and powerful...thank you................oh and don't be to impressed with my cooking..it was burgers, cukes and tatertots....and I ended up broiling the tater tots by mistake at the start...so they were done rather fast.....but it was food for the boys......my stomach hasn't really felt like eating as to be expected....(I am not worried about starving though, lol)
How are the aunts doing Nancy? I meant to ask you that yesterday...sorry!

Lauren--my heart and prayers are with you as the date of your dear dad's passing is here. If you need to talk I am here always.

Dinner tonight is not even a thought.....Ross has late karate (he has to make up 6 classes and make up is Wed night from 6:45-8pm)...I will make him a sandwich and Kris will eat cereal I am sure......

If you like fresh pizza dough, try Trader Joe's. They have an herbed version and a whole wheat version. Both are quick & delicious (and at $.99, cheaper than I could make it homemade! :thumbsup2 ).

Here's the recipe you wanted:

Lemon Chicken with Pasta

1 1/2 C. uncooked medium pasta shells
1/4 C. dry bread crumbs
1 tsp. garlic powder
1/2 tsp. salt
1/2 tsp. pepper
1 pound cubed chicken breasts
6 tsp. canola oil
1 medium onion, chopped
2 Tbsp. flour
1 C. chicken broth
1/4 C. lemon juice
1/4 C. shredded Parmesan cheese

Cook pasta according to package directions. Meanwhile, in a large resealable plastic bag, combine the crumbs, garlic powder, salt and pepper. Add chicken, a few pieces at a time, and shake to coat. In a large skillet, saute chicken in 4 tsp. oil until juices run clear. Remove and keep warm. In the same skillet, cook onion in remaining oil over medium heat until tender. Sprinkle with flour; stir until blended. Gradually stir in broth and lemon juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain pasta; toss with lemon sauce. Serve with chicken; sprinkle with Parmesan cheese.

I like to add the chicken to the sauce before adding the pasta.

I've made that before and you're right, it is fantastic. My DH loves this dish, not that he been served many shrimp dishes he didn't like, but it has two of his favorites, rice and shrimp. When you throw in the cheese, how can you go wrong?!? :laughing: You need to post it for everyone else.
 
Sorry-I am poking my nose in here too;)

Always looking for new dinner ideas and the Paula Deen recipe has me intrigued so I looked at it on her site. Do you, that have made it, use the large Shrimp? I find it a pain to remove the tails whilst eating Pasta? Could you make this with small Shrimp or even Scallops?

Just wondering...
 
Oh duh--I see now the recipe says 'peeled and deveined' Shrimp...I never read it thru!
