I have not been posting but check this thread out everyday except last week as I was in Europe for work. So now I am being nosy- what happened to the thread?

Webmaster Alex removed (temporarily) the long threads (10,000 + posts). So we started another but our recipes are gone.:sad2:

Dinner tonight was good, but I have to say my favorite part was the baby bok choy. It's a really easy recipe: trim and wash the bok choy. Chop into 1/4 inch pieces. Heat a tbsp of oil in a skillet or pan. When hot, but not smoking, add bok choy and a sprinkle of salt. Cook for two minutes. Meanwhile in a small dish, combine 2 tbsp water, 1 tbsp soy sauce and a tbsp of butter. Add the sauce and saute until bok choy is crisp tender. Serve immediately.

That bok choy sounds yummy & easy! Have to try it.:goodvibes

I've been eyeing Le Crueset at Tuesday Morning every time they get any pieces. Then the gentle suggestions sent me looking at it on Amazon. The minor disaster I had here this morning, may keep me from looking at the Le Crueset any more. I had to empty out all of my pot drawers.

I had filled the coffee pot with beans & water last night, to make a full pot of coffee & set the timer. Expected to get up to some delicious fresh ground & brewed coffee only to find coffee dripping everywhere! I had forgotten to empty the about half pot left in carafe! It dripped down into my three pot drawers inside the wall of the cabinets, seeped through and ran into the grout of the tile. I had to empty everything out & am still waiting for it all to dry to put my kitchen back together.

So maybe this was a sign from above telling me " You have enough heavy pots! Do you really need more?! ";)

Here's my super easy, really lazy mac and cheese recipe. My kids love it.

1/2 lb macaroni, whatever shape you like, but smaller, like elbows, works best
2 tbsp butter
1 c grated sharp cheddar cheese (or whatever cheese you like. I've used monterey jack, gruyere, or even pre-packaged grated mixes in a pinch)
2 tbsp Velvetta or 1-2 slices American cheese
1/2 c milk

Cook the pasta in boiling, salted water, according to box directions. Drain, and return to pot with butter, cheese, and Velveeta (or American cheese). Turn stovetop to low. When cheese starts to melt, add the milk and heat through. If the macaroni mixture is too thick, add more milk. The Velveeta or American cheese acts as a binder and makes the mac and cheese smooth. If you want to make this a little more grown-up, you can add some dijon mustard to the cheese mix and you can top it with parmesan bread crumbs and bake it until the crumbs are browning.

Thanks for this recipe. Alexis will eat mac & cheese every single day if I let her, which I don't because I don't want her eating that powdered stuff everyday & surely won't bake mac & cheese that often!

I've seen Le Creuset at TJ Maxx from time to time also.

Good morning All!

Tonight we are celebrating Buddy's birthday so I am cooking a boneless prime rib, pork chops for Marisa, mashed potatoes, a veggie or two, salad, garlic bread and cake. I think I will buy one, my afternoon is fully booked. My DH Aunt is alone during the day. Her DD and DGD leave early in the morning for work and return home after dark. She does not drive, almost never leaves the house and has it closed like Fort Knox. She heard someone try to get in through the hatchway yesterday so I am bringing my Bronco over to leave in the driveway. I know I will be there a while. We told her to call the police so that they can patrol the street. I also have to get to my aunts to fix her pills and bring her some dinners and soup.

Happy Birthday to Buddy!!!

I hope everything is okay with his Aunt. Good idea to have a car parked out front!

I found you, I found you!!! I couldn't get on the computer at all yesterday, and I was so worried that I wouldn't be able to find my family!!! Looks like we are all here together again, and have some new members. Welcome to everyone! Like Lindsay said, we are not a clique. We love to have new people join in.

DH and I went to Cheesecake factory last night and it was incredible. We went with friends of ours, and it was a great night. We had hot spinach and artichoke dip and an order of buffalo blasts as our appetizers. DH ordered a Cobb salad, Carol had a bacon and avocado club sandwich, Scott had grilled salmon with mashed potatoes and asparagus, and I had the romano crusted chicken. Everyone agreed that the meals were delicious! Thanks for the portion size warning! I have enough leftovers to feed me for 2 more days!

For dessert we ordered 4 different slices of cheesecake and had a tasting party. Alan had brownie sundae, Carol ordered White chocolate raspberry, Scott had Chocolate tuxedo and I ordered Lemon raspberry cream cheesecake! Again, all yummy, and I have tons of mine leftover! I can't wait to dig in today!

Dinner tonight will be Mac and cheese for the kids and leftovers for me. Alan is in California for work and won't be back until late tonight. I don't cook while he's gone, since the kids give me grief, so leftovers will be perfect for me.

Lindsay - I was wondering. Is there a way we could ask the moderators to make our recipes a sticky? We could just separate them into categories, and have the mods post them in a sticky. I would just hate to lose all of them. I have 74 of the recipes copied and pasted, so if anyone needs one, let me know and I'll see if I have it.
 
I am also an everyday lurker...I am so sorry I have not posted..lol I made the stuffed pepper stoup-we haven't eaten yet..lol . I feel like I know you all and would like to share-I make awesome chicken marsala, meatloaf, pot roast, chicken from hell-among other things if you are interested...let me know...sue

Lindsay - how are others accepting the quick engagement? Like her family and friends. I wonder is maybe she's getting pressure and is suddenly scared that shes rushing into something. And that by taking it out on others (Kevin) without directly taking it out on Scott.
Just a thought.

Tonight DH is making spring rolls and fried rice.
 
ok-eating the stuffed pepper stoup-its yummy-but I just added some smoked paprika so tomorrow it will be "goulash"...lol and for those of you who wish to partake in the chicken from hell....





you need a smoker



or a charcoal grill



with wood chips(soaked)




my Dad loved to "smoke" have friends over-etc. and I used to tell him



"DAD-you can't just ask people over to smoke"

ok -the recipe



(sorry-I cook for big groups)


5 lbs boneless chicken breasts(cut into small indecerneble pieces)


2lbs bacon(cut into halves) like 6 inch strips


1/2 a container of creole seasoning(like tony cachere's)



about 10 jalapeno's fresh cut in strips(depending on how much "heat" you can take)




take a piece of chicken-wrap in bacon with a piece of jalapeno-secure with toothpick


smoke or indirect grill for 1-2 hours or 3 if smoking-


if people don't like "hot" have them pull the pepper out-it will just slide out-


these are addictive-be forwarned..lol
 
I fixed the beer-braised lamb shoulder chops last night. They were yummy. We also had Becky's balsamic glazed brussel sprouts and just a baked potato. The lamb gravy was just crying out for polenta or cheese grits, so tonight we'll have the leftover lamb tonight, cheese grits.

This was a very basic recipe, given over the phone from a guy friend of ours.

Brian’s Beer Braised Lamb Shoulder Chops

Season chops with Cajun seasoning, Mona’s Seasoning ( Mediterranean mix ). Brown chops in evoo. Add sliced onion, celery, garlic, bay leaf, and carrots (slivered & diced fine). Add ½ large can diced tomatoes and one bottle amber or bock beer. Cover and braise until tender. Thicken sauce with powdered roux mix & serve.


Woohoo! That Chicken from Hell sounds great!!! :banana: (lets just pretend he's a dancing jalepeno! ) I do have a smoker box & like to smoke! :laughing: Can't wait to try that it! I will save that recipe now, so it will not be lost!
