I'll be at church from 7am-1pm on Sunday but we do want to have an "Easter" lunch and not just sandwiches when we get in. What is easy and quick to fix? I was trying to think of something good in the crockpot, maybe, but am not coming up with much.

What can be done quickly when we get home or done ahead of time and just warmed up? Anyone else in this position?

Thanks! :goodvibes

You could cook on Sat. and warm it up on Sunday. My sister cooked a small ham in her crockpot once and said it was great. You could just add quick side dishes on Sunday.

I was going to say a ham too. Easy to do ahead or put in oven before you leave on low and it'll be ready when you get home (never done it crock pot). Make a salad on Sat. and add dressing Sun. Make another favorite veggie the night before and warm up--get some rolls and you have it done. :sunny:

Ham n Cola in the crock pot, on low for the time you will be in church, using one of the new crockpot bag/liner thingies. PM me if you want the recipe. It is FANTASTIC and I always get raves, plus the leftovers are superb...

Then I make a great green bean dish that has onion, bacon (& the grease) sugar and white vinegar for the sauce. Mmm, mmm, good. Make the night before, add warm rolls, cranberry sauce, green salad? and you're done.

Eliza.. my mom used to make green beans just like you! Boy that is GOOD!!

Not to sound like Rachel Ray but in 30 minutes, you can make grilled lamb chops with a tomato pesto sauce on them. A little pasta on the side, also with the pesto sauce & fresh green beans sauteed in olive oil & garlic. Lots & lots of garlic, but also, lots & lots of flavor!

When I need a quick meal, I make pasta with pesto sauce & I'll throw some salmon fillets in my toaster oven & broil them for about 8 minutes...DONE.

You could make a ham. Get one from Costco-they have the spiral hams. Just put that with some pineapple chunks, and cherries and bake ahead. When you get home, just switch the oven on and warm up the ham.
Get a basket of rolls, premade salads, mashed potatoes which you can make ahead, and a pie which you can also make ahead.

You could also make a lasagna, garlic bread, salad, and tiramisu.
