What would be "off hour dining"?

We leave for Disney World in exactly one week but haven't made any dining reservations yet. (Yikes!) I read on the boards somewhere that if we made our reservations for "off hours", they might be able to fit us in.

Also, eating at off hours will help with the crowd level as well.

Can anyone help me define what exactly is considered "off hours" -- according to Disney standards for breakfast, lunch and dinner?

Most of our restaurants are Signature Dining restaurants (Yachtsman Steakhouse, Victoria and Albert's, California Grill, Citrico.... But some are themed restaurants like Chef's Mickey for breakfast, Coral Reef Restaurant and Boma.

You will have to try for a late breakfast (10-11:30am)

Late lunch (2:30-4)

Late dinner (8:30-?)


You could switch it around a bit by eating a little something for breakfast at the food court/room. Then have an early lunch between (10-11:30) and then do an early dinner or a few snacks to make it to a late dinner.

I had no problem making my Signature Restaurant reservations... made them about 1.5weeks ago. Anything with characters except Crystal Palace for me was impossible to try and get. I call 2-3 times a day trying to get the reservations. No luck for me so far.

AS far as "off-hours" I have no clue since everyone seems to eat differently while on vacation unless they have young kids that need to stick to a schedule.
