I do twice-baked potatoes. They're yummy, and you can prepare them the day before and just bake the second time when the ham is in the oven.
I microwave the potatoes and let them cool a bit. Then slice the top off and scoop the potato into a bowl. Mash it with French onion dip (sorry, I don't have measurements... just enough to make it look like creamy mashed potatoes). Add shredded cheddar (maybe 1 cup for 6-8 potatoes?). I also add a bit of chopped bacon to DH's, and stuff the mixture back into the skins. Put a little more cheese on top of each, cover baking pan with foil, and bake at 350 for about 30 minutes.
