What to make for Christmas Morning Breakfast

We always have baked eggs and sausage balls. I can remember my grandma making them, and now I do. I also make Monkey Bread.

Baked Eggs

Use a muffin pan and spray well with cooking spray. Use a fresh loaf of white bread and cut the crust off. Place one slice of bread in each muffin tin. Brush with melted butter. Crack a small egg and fill each bread (tin) with the egg. You may have extra egg white which won't fit. Don't overfill. Season to taste with salt and pepper. Bake at 350 for about 10-15 minutes, depending on how your like your eggs.


Sausage Balls

1 pound bulk sausage
1/2 pound shredded cheddar cheese
3 cup Bisquick

Mix together until well blended. Roll into 1" balls and place on foil lined cookie sheet. Bake at 350 for 25-30 minutes.


We also make pigs in the blanket, but we use homemade biscuit dough for the blankets. Yummy!!

Do you cook the sausage before mixing with other ingredients?

Overnight Breakfast Rolls
Ingredients
12 Rhodes™ Dinner Rolls
3 tablespoons butter, melted
1 cup brown sugar
1/2 pint whipping cream
Instructions
Combine butter and brown sugar and spread over the bottom of a sprayed 9 x 13-inch baking pan. Place frozen rolls over the brown sugar mixture evenly in 3 rows of 4. Pour the whipping cream over the top of everything. Cover with sprayed plastic wrap and let sit out overnight to rise (kitchen must be cool).* Remove wrap and bake at 350 degrees F 25-30 minutes. Remove from oven and let cool in pan for 15 minutes, then invert onto serving platter.

I made these for work and now everyone is making them for thier holiday brunch, they loved them.

Sausage Breakfast Strata
Ingredients
• 12 slices Italian bread (1 large loaf) cut into 2 inch cubes.
• 2 cups cheddar cheese, grated
• 9 large eggs, beaten
• 1/2 teaspoon onion powder
• 1 teaspoon worcestershire sauce
• 1/2 teaspoon mustard powder
• 1 Green or red bell pepper diced
• 1 medium onion diced
• salt & pepper
• 2 1/3 cups half and half
• 2 lbs your favorite sausages, slipped out of their casings (Brats, hot Italian etc).
Directions
1. Grease a 9x13-inch baking dish.
2. Scramble fry the sausage meat until cooked, drain off all the fat.
3. Line bottom of dish with ½ of the bread cubes
4. Sprinkle in the cheese.
5. Pour the fried sausage meat, onions and peppers over the cheese layer.
6. Cover meat with remaining slices of bread.
7. Beat the eggs together with salt, pepper, onion powder, Worcestershire sauce, & mustard powder.
8. Pour over the bread in the baking dish.
9. Cover& refrigerate overnight or at least a few hours

When you are ready to bake it preheat oven to 350°F Have the strata dish close to room temperature (so you don't crack the baking dish with it being too cold). Bake for approx 1 hour or until set. Recipe makes 10 servings


French Toast Strata
Ingredients
• 1 lb French bread, cut into 1 inch cubes
• 1 (8 ounce) package cream cheese, cut into 1/2 inch cubes
• 9 eggs
• 2 1/2 cups half-and-half cream
• 6 tablespoons butter, melted
• 1/4 cup maple syrup
• 2 Tbs Cinnamon
• ½ tsp nutmeg
• 1 tsp Vanilla extract
• Optional: fresh fruit and nuts ( apples, peaches, berries, pecans)
Directions
1. Grease a 9x13x2 rectangular baking dish.
2. Place half the bread cubes in the dish.
3. Sprinkle with cream cheese cubes and then remaining bread cubes.
4. Combine eggs, cream, melted butter and syrup.
5. Mix well and pour over bread and cheese cubes.
6. Using a spatula, press layers down to moisten.
7. Cover with plastic wrap and refrigerate for 2 hours, or overnight.
8. Remove plastic wrap and bake uncovered for 35- 40 minutes at 350ºF, or until set and golden brown.
9. Let stand about 10 minutes before cutting.
10. Top with your favorite syrup.

Serves 8-10 people.
 

A few years ago I got a Mickey Mouse waffle maker as a gift. So on special occassions like Christmas morning that is what we have :)

the girls at work make Paula Deens Gorilla bread(it's like Monkey bread but with cream cheese)

Gorilla BreadPrep Time: 10 min Inactive Prep Time: hr min Cook Time: 30 min Level:
Easy Serves:
12 to 14 servings 1/2 cup granulated sugar
3 teaspoons cinnamon
1/2 cup (1 stick) butter
1 cup packed brown sugar
1 (8-ounce) package cream cheese
2 (12-ounce) cans refrigerated biscuits (10 count)
1 1/2 cups coarsely chopped walnuts


Preheat the oven to 350 degrees F.
Spray a bundt pan with nonstick cooking spray. Mix the granulated sugar and cinnamon. In a saucepan, melt the butter and brown sugar over low heat, stirring well; set aside. Cut the cream cheese into 20 equal cubes. Press the biscuits out with your fingers and sprinkle each with 1/2 teaspoon of cinnamon sugar. Place a cube of cream cheese in the center of each biscuit, wrapping and sealing the dough around the cream cheese. Sprinkle 1/2 cup of the nuts into the bottom of the bundt pan. Place half of the prepared biscuits in the pan. Sprinkle with cinnamon sugar, pour half of the melted butter mixture over the biscuits, and sprinkle on 1/2 cup of nuts. Layer the remaining biscuits on top, sprinkle with the remaining cinnamon sugar, pour the remaining butter mixture over the biscuits, and sprinkle with the remaining 1/2 cup of nuts. Bake for 30 minutes. Remove from the oven and cool for 5 minutes. Place a plate on top and invert.

If anyone would share their hasbrown/egg casseroles, I'd apprecite it! Looking for something with eggs and not too much bread that I can prep the night before. Or the recipe where I think it is pillsbury crescent rolls on the bottom of the pan and eggs on top in a big square baking dish? Dh refuses to eat quiche, but he liked this when we had it somewhere!

DH wants to make Belgian Waffles for Christmas breakfast this year. I wanted some type of egg casserole to go with it. I found the following recipe and will be making it the night before and pop it in the oven the next morning. It has most of our family favs, eggs, sausage, hasbrowns and lots of cheese. :)

Sausage Breakfast Casserole

1 lb Jimmy Dean sausage
1/2 cup chopped onion
1/2 cup green pepper
4 cups frozen hash browns
9-12 eggs, depending on size
1 1/2 cups cheddar cheese, shredded

Brown the sausage and drain.
In a greased 9x13 inch cake pan, sprinkle the hashbrowns, then sausage, onion, green peppers, and 1/2 cheese.
Mix the eggs until scrambled and pour over the hashbrown mixture in cake pan.
Fork the ingredients together.
Bake at 350* for 30 minutes, checking to see if done in the center.
Sprinkle the remaining cheese over the top and put back in the oven until melted.
This can be done the night before and put in the refrigerator overnight.
You may need to cook a little longer, though.
You can be creative, substitute ham for the sauasage.
or pepper jack cheese for the cheddar.

We always do this creme brulee french toast which is much like a french toast casserole. Just make it the day before and pop it in the oven that morning. It is sooooo yummy! Everyone loves this Cristmas morning tradition!

Recipe (from Allrecipes.com)

Creme Brulee French Toast

INGREDIENTS
1/2 cup unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
6 (1 inch thick) slices white bread (french, challah etc.)
5 eggs
1 1/2 cups half-and-half cream
1 teaspoon vanilla extract
1 teaspoon brandy-based orange liqueur (Grand Marnier®, optional)
1/4 teaspoon salt


DIRECTIONS
Melt butter in a small saucepan over medium heat. Mix in brown sugar and corn syrup, stirring until sugar is dissolved. Pour into a 9x13 inch baking dish.
Remove crusts from bread, and arrange in the baking dish in a single layer. In a small bowl, whisk together eggs, half and half, vanilla extract, orange brandy, and salt. Pour over the bread. Cover, and chill at least 8 hours, or overnight.
Preheat oven to 350 degrees F (175 degrees C). Remove the dish from the refrigerator, and bring to room temperature.
Bake uncovered 35 to 40 minutes in the preheated oven, until puffed and lightly browned

Do I need to buy sliced bread at the store or a loaf of bread from the bakery section?
 
We have sausage bread, monkey rolls and clementines every year

I modified the sausage bread recipe from my SIL's very good recipe for health reasons.

SAUSAGE BREAD RECIPE (modified):
Place 2 frozen bread loafs on a greased cookie sheet the night before and cover with a towel, allow to rise overnight.
In the morning brown 1 pound ground turkey. Add at least a tsp of sage and 1/2 tsp ground red pepper to give it the sausage smell and taste. Add 1 chopped onion and 3/4 cup diced portabello mushrooms and saute until tender. (I just push the meat over and saute in the remaining grease).
In seperate bowl beat 2 eggs, stir in 2 cups mozzarella cheese, 1 cup parmesan cheese and 12 shakes of garlic salt.

Open the loafs and spread open. Stripe half the cheese mixture and half the meat mixture down the center of each loaf. Fold dough over the filling and pinch ends. Turn seam side down and cut at least three vent holes in top. Bake according to loaf directions.
(for a last minute meal use the pillsbury french loaf dough from the refrigerator section - 'pop the can' kind).

This is really yummy and we have it Thanksgiving morning and Christmas morning every year. I know the OP has already decided on a menu but for those of you that resurrected the post and are still searching through cookbooks I thought this might be worth a shot for someone.
 
Christmas morning granola

6 cups old fashion oats
1/2 c. nuts
1/2 c. coconut (WIDE SHRED NATURAL)
1/2 c. dried fruit ( dates )
1/2 c. wheat germ
1 c. brown sugar
1 c. melted butter
1 cup peanut butter (I think this is what makes it!)

Mix all ingredients in crock pot on high for one hour. Stir regularly (thought you weren't supposed to open lids on crock pots???). Let cool, then store. Serve with yogurt (I don't think so...) or milk.

This thread is so great! We always do pillsbury cinnamon or orange rolls but my gr used to do the baked eggs and called them Robin's Nests (cause I'm Robin) when we visited her and I think I'll make those too. Mmmmmmmm. Special breakfasts rock! Thanks all.
 
Hi All- I'm newly diabetic so my usual cinnamon rolls are out this year- anyone else have a casserole that does not involce bread or potatos?

8 eggs

1/2 cup half and half

1 cup finely chopped fully cooked ham

1 cup shredded cheddar cheese

1/4 cup chopped onion

1/4 cup chopped green pepper

In a bowl, whisk the eggs and cream until light.
Stir in the cheese, ham, green pepper, and onion.

Pour into a greased 9 inch square baking dish. Bake at 400 degrees for 25 minutes or until golden brown.
 
Always Pillsbury cinnamon rolls! I use the "grands cinnabon" ones.

I'm also making a breakfast casserole with hashbrowns, eggs, cheese and ham from Paula Deen.
