What to make for Christmas Morning Breakfast

French Toast Casserole (very good)

1 loaf texas toast
1 pkg cream cheese (250)
10 eggs
2 cups milk
1/2 cup syrup
1/2 teaspoon vanilla
cinnamon

Spray/grease 9x13 glass pan
cut bread into pieces/squares...I usually go across 3 x with a knife both ways (if that makes any sense)
place 1/2 of the bread into dish
cut/cube the cream cheese...spread this on top of the bread
place the other 1/2 of bread on top...I usually place it making sure to cover any holes etc
Pour mixture of (eggs, milk, vanilla syrup) on top of the bread
Push down with a spatula making sure no bread is left dry (it will raise again)
Top with cinnamon
Cover and leave in the fridge over night

Bake @ 375 for 45 minutes UNCOVERED

This is soooo easy and very yummy! Enjoy!

We always do Monkey Bread... ours is different from the one already posted... same idea, just made a little differently. My MIL usually makes it on Christmas morning since we go over there (although my hubbys is much better)!

But this year we won't be having Christmas morning with her till mid January or so since my hubby will be in Iraq........... So I think I will make the French Toast Casserol! Sounds pretty easy and yummy! And my kids love french toast!

For the question on Texas toast.... we buy Mrs. Baird's here. It is basically regular sandwich loaf bread, but the slices are very thick- maybe around an inch. HTH
 
My mom makes a egg casserole with hash browns, breakfast sausage and cheese. We usually top it after it is baked with Salsa. She make it the day before and bakes it when we are almost done opening presents. We also have to have the frozen strawberries on the side.

I believe it's called Texas Toast here...it's just thick bread, double the thickness of normal bread.

Due to this thread, I went searching for some new recipes to make Christmas morning. Thanks to allrecipes.com, we'll be having a Breakfast Casserole (eggs, bacon, cheese, potatoes) and a Blueberry Sour Cream Coffee Cake :)
 
We've had the same breakfast for years. I make homemade cinammon rolls the night before and I let them rise when we are opening presents and then we also have scrambled eggs, bacon, fresh fruits, etc.
 
This is my favorite dish to make for breakfast entertaining. It is Swiss bacon hashbrown. Its very yummy and I make it the day before and just bake it at the last minute.

2 bags of frozen shredded potatoes (hashbrowns)
1 lg. sweet onion, chopped
1 lb. bacon cooked and cut into bite size pieces
2 cups of shredded swiss cheese
butter and veggie oil
salt and pepper or season salt

In a large skillet saute onions in a little butter until lightly browned, then set aside. In the same skillet cook the potatoes in a little butter and oil until they are browned, you will have to do this in batches or use a couple of pans. Add salt and pepper or season salt to taste. After they are cooked place the potatoes in a large rectangle casserole dish. Gently combine them with the onions and spread into an even layer. Next arrange bacon pieces on top the potatoes, cover and refrigerate. When you are ready to finish and serve, preheat oven a 350 then cook for 15 minutes, top with cheese and cook for 5-10 minutes longer to melt cheese.


Do you do eggs with this also, or is this the meal?
 
The kids are always too excited to eat in the morning so I always make Pilsbury cinnamon rolls, quick and easy, so they can just grab it, in addition to the candy in their stockings, of course :) .

I think this year we'll go a bit more of a meal.....one of the casseroles. My kids have never had them so I think I'll do that.


Another idea is pancakes or waffles with fruit or jams topped with whip cream.

The pancakes and especially the waffles can be made ahead, like this weekend LOL, and frozen. Then warmed in the micro, oven, toaster, etc on Christmas morning.

Since my waffles never turn out right on the first day (too soft, almost cake-ish) now I make them and freeze them. Pop them in the toaster and they are perfect.
 
MrsBorn -- LOL! I just realized we both have 5 kids....thus the Pillsbury quick breakfast. Too funny.


Another idea....Santa can leave the single serving cearl bowls in the stocking and everyone can eat at their own pace. Of course that is more for the kids than for an extended family Christmas breakfast.
 
When I have to cook breakfast for many people, I make a quiche recipe I doctored together. I'm not really an egg person, and not even a big fan of swiss, but this recipe just make me drool when I think about it. Usually serve it with fruit, croissants (chocolate, if I can find them at Whole Foods...oooooh so good) with strawberry butter, etc. These can be made ahead of time and frozen. Can't remember how long you bake a frozen quiche, but you can find that info online. Or if you prefer to bake it "fresh", you can make the onion/bacon mix ahead of time, and throw the ingredients together the morning of.

Bacon Swiss Quiche

2 reg. 9" frozen pie shells (do not thaw!)
4 eggs
1 cup milk
1/2 cup cream
1/2 cup finely shredded Swiss
1/4 cup finely shredded Parmesan
7 pieces of cooked bacon (reserve bacon fat)
1/2 med. white onion
ground pepper
fresh nutmeg

Directions
Preheat oven to 375 degrees.
In a non-stick pan, heat a tbsp. of the bacon fat on medium heat. Add onions, and cook until soft and brown on edges (slightly carmelized). Allow onions to cool.
Cut or break bacon into smaller pieces. Mix with cooled onions.
In a bowl, whisk together the eggs, milk and cream. Add a pinch of fresh grated nutmeg, and pepper to taste.
Halve the cheese mix, and put one half into each pie shell. Do the same with the bacon/onion mix. Pour half of the egg mix into one pie, then pour the rest into the other pie.
Place a foil band around the crust of each of the shells to prevent burning. Place both pies on a cookie sheet and place into the oven.
Cook for 25 minutes, then rotate the pies for even cooking. Remove the foil from the crust if so desired. Cook for an additional 10-15 minutes, or until quiche is browned and firm on top.
Remove from oven to wire racks. Important: Cool for 10-15 minutes before serving.

And then, there's always breakfast tacos. Just cook up some crumbled sausage the night before, and the morning of scramble some eggs, mixing in the sausage. Then serve it warm with cheese, salsa, sour cream, and warmed flour and corn tortillas. If you really want to make it filling, fry up some cubed potatoes to go with it.
 
When my kids were little, I wanted them to remember the reason for Christmas. So we started a tradition of muffins before we opened the gifts. One muffin had a candle in it and we sang Happy Birthday. As they got older, we started fixing eggs or a casserole, but we still have the muffins. It's tradition.
 
We always do Christmas breakfast as our big Christmas meal. Svme of the things we have vary, but one thing we always have is the Breakfast Lasagna from Crystal Palace.

It's good for heating up in the microwave and snacking on through the day, too.
 
This is the recipe that I use for French toast casserole.
I use cinnamon bread that is thicker than regular bread though so I add an additional 1/2 cup milk and 2 eggs.

1 stick butter
1 cup brown sugar
1 t. cinnamon
6 eggs
1 ½ cups milk
2 t. vanilla (my addition)
1 loaf white bread

Melt butter and pour into 9x13 pan. Add your brown sugar and cinnamon and mix well to make a paste to cover bottom of dish. Layer 2 layers of bread over sugar mixture. Beat eggs and milk and vanilla together and pour over bread. Cover and let stand in fridge overnight. Preheat oven to
300-325 and cook uncovered for about 45 minutes, Cut into squares and flip over onto plate. Sprinkle with powdered sugar if desired. (Doesn’t need the sugar though)
 
It's tradition to eat the Sara Lee Buttered Coffee Cake with our coffee Christmas morning. We usually eat lunch right at 12 or 12:30, so we don't eat a big breakfast. We usually start drinking champagne around 11 a.m.

We always do this creme brulee french toast which is much like a french toast casserole. Just make it the day before and pop it in the oven that morning. It is sooooo yummy! Everyone loves this Cristmas morning tradition!

Recipe (from Allrecipes.com)

Creme Brulee French Toast

INGREDIENTS
1/2 cup unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
6 (1 inch thick) slices white bread (french, challah etc.)
5 eggs
1 1/2 cups half-and-half cream
1 teaspoon vanilla extract
1 teaspoon brandy-based orange liqueur (Grand Marnier®, optional)
1/4 teaspoon salt


DIRECTIONS
Melt butter in a small saucepan over medium heat. Mix in brown sugar and corn syrup, stirring until sugar is dissolved. Pour into a 9x13 inch baking dish.
Remove crusts from bread, and arrange in the baking dish in a single layer. In a small bowl, whisk together eggs, half and half, vanilla extract, orange brandy, and salt. Pour over the bread. Cover, and chill at least 8 hours, or overnight.
Preheat oven to 350 degrees F (175 degrees C). Remove the dish from the refrigerator, and bring to room temperature.
Bake uncovered 35 to 40 minutes in the preheated oven, until puffed and lightly browned

Ahhhh, you beat me to it!!! I was going to suggest the Creme Brulee french toast. It is awesome!! That's our Christmas morning brekkie. Yum.:thumbsup2
