I'm with the others - Deviled Eggs always go really fast at potlucks. I have to arrange 3 a year for the residents of our town and golly do they go fast. So does shrimp, just plain peel and eat or already peeled cooked shrimp with cocktail sauce.
I also like to bring jello, because nobody does jello anymore but everyone loves jello. Either the traditional strawberry jello with strawberries, cream cheese and pretzel crust (on jello's website), or a layered jello salad with anywhere from 3-6 kinds of jello. The layered salads are good for if you have a nice chunk of passive time the day before. Grab your container - either a 9x13 or a nice deep salad bowl and just start. Mix one kind of jello and let it set up a bit in the fridge (partial set, so its thick-ish but still spoonable). Add complimentary fruit and spoon into serving dish and let set up. While the first one is setting up mix the second flavor and let it start to partially set. Repeat until container is done. People can either spoon it out if its in the bowl, or cut squares of it if its in the 9x13. I try to arrange the colors so they'll show nicely - so thats usually alternating dark and light or progressively darker or lighter. Last pot luck I brought one of these to, it was the first thing gone on the tables. I didn't even get any.
Flavor combinations - lime jello with canned pears, pineapple jello with crushed canned pineapple in it, orange jello with mandrian oranges (alternately put the oranges in the pineapple and the pineapple in the orange), any kind of berry in strawberry jello. Apples go nicely in either the lemon, white grape, cherry or cranberry jello. Mandrian oranges go nicely in the peach jello.
