What kinds of things do you prebook?

Now that our 120 day mark is coming up on the Magic and we are concierge, I need to sort out what things get booked at that point. I feel like I've researched so much that now I've forgotten it all. I know there are Cabanas, Palo, spa stuff, and excursion stuff. Am I missing anything? Are tastings and stuff like that booked while on board? Thanks!

The sports simulator on the boat, palo, remy, excursions, spa treatment and kids club
